Im seriously thinking I may need to skip Animal Kingdom due to their uneven ground.
With my foot still recovering from surgery I really dont think I'll be able to walk on it.

Im definately skipping the animal trails.
Id like to get in ride Everest, the safari, see the Lion King show and by then I'll need to definately get out

Have you ever planned to go to a movie and after looking at the movies that were playing, decided none of them was 'worth' the cost of the ticket?
It could be that there were none that were especially interesting to you. Or, maybe, it was a subject that was interesting, but you were just not in the mood for that kind of movie that day. Maybe, you decided that going out to eat was a better 'use' of your entertainment money that day.

It's kind of the same thing as deciding which parks to go to and/or which attractions to see. One way to look at it is to think of your energy as a checking account with only a certain amount in it. Each attraction has a certain 'energy cost' attached to it.
For you, the 'cost' of walking on the animals trails may not be 'worth' the enjoyment you would get out of them on this trip. One way to decrease the cost might be to use a wheelchair or ECV so you are using less energy just getting from place to place. But, even then, you might still decide that you are only interested in 'spending' your energy account to go to Everest, the safari and the Lion King show.
It's your vacation, so your opinion of what's worth going on to you and your family is the important opinion.
If others in your group would like to see more of AK, they would have the option of stying longer than you. Or, if you have park hoppers, you caould spend a short time in AK and then go to another park where you want to 'spend more of your energy'.

Nemo show is another long 1 hr show its fairly new and great! You should try to see it also, if you feel you are up for it.

That said.... my daughter is 5 and in a power wheelchair. We *never* do more than 3 parks in a full week at dis. Some may think its a waste (in fact I know a lot of ppl do as I have been told a hundred times). However, having a disability even in a power chair is exhausting. Just not running over the million rude ppl that cut you off is exhausting. We always plan at least 2 "down" days. Typically with a very nice dinner and sometimes a quick trip to DTD and BBB (she LOVES the BBB).

So, skipping a park is no big deal to me at all. In fact I think part of the charm of Disney is relaxing and ENJOYING... not rushing around the entire time. If you feel you need a break, I say spend the day by the pool :). Take the bus to Animal Kingdom Lodge and sit in a rocker watching the animals. There are a million ways to still enjoy the day and not be over extending yourself in the park.

we usually skip AK, it is too hard pushing my DD wheelchair up the hills and paths. It's just not worth it for us.

I am planning an ice the foot break after the mornings i tour the parks

Please see my comments on your other post -- they still apply, even more so.

Rent an in park ECV, get a GAC, and then boogey on over to Everest and park your ECV. You can use the GAC if you want or walk onto the ride. I would take the ECV but sometimes that is a bother. It would allow you to ride the really good rides at the far end of the park, do some shopping, and see some shows. You would not have to give up the park and you could walk around as much as you like.

I had to skip the wild animal park need san antonio because I was too sick from gluttony. Next time in San Antonio I would have done an ECV.
