anyone know if Epcot will be increasing hours to a more normal schedule? We are going in January and last year it looks like they kept to the 11am opening.
 
Disney is not yet publishing park hours beyond December 7th so who knows? ... but they seem to be sticking with the 11:00 opening with the exception of a short time around the 10/1 anniversary date. I wish they would go back to the earlier opening time but we're not counting on it for our December trip.

As was shared above it's been 11AM since July 2020 with the exception of the few days in early October so I'm also planning as if it will be an 11AM opening also for our Jan/Feb trip.
 
They seem to be releasing park hours about 70 days prior to each date, so I would just keep watching to see what is released for your travel timeframe.

Past park hours can be found here. Last December, there were several days early in the month when Epcot opened at 12:00 and several late in the month when it opened at 10:00. There were also a couple Wednesdays in July (2021) and a couple Saturdays in August when it opened at 10:00. (It's possible some of those are typos. I certainly can't remember why they'd have opened early for the July Wednesdays.)

For upcoming dates, it is scheduled to open at 9:00 from October 1-10 and at 10:00 from October 11-November 6, before returning to 11:00 openings. As for next January, it'll depend on crowd levels, I imagine. If there is a boom in travel (notably from South America), we may see longer hours. Of course, the tradeoff will be more people and longer lines in the park.

so it looks like a decent chance that it will be 11am opening. I am really just trying to figure out if i want to waste a park reservation on a park that doesn't open until 11am, seems like a waste of the morning.

If you have park hoppers and are going to be up early anyway, you could certainly start elsewhere and then park-hop to Epcot in the afternoon. However, one possible negative of that would mean not having a shot at a boarding group for Remy (although that could depend on how they're running things come January with respect to boarding groups and park-hopping).
 
I bet those days of opening at 9 are long gone and never to return. (except for special occasions)
 
I may be in the minority, but I really feel like once they get done with the Future World renovations, that they will open back up at 9am again.
