I have never been to WDW during the value season so I'm not really sure what to expect with the crowds. I know it is suggested a lot on this board as well as in many of the guidebooks that the best time to visit particular parks is the day after the EMH at that park because it is the least busy. In the value season is there really much of a difference from day to day, or is there a BIG difference between the crowds on EMH days and the day after that? We will be there Sept 25-Oct 2.

There's still a difference. With 20,000 guest rooms eligible for EMH, you're bound to see the highest crowds at the resort with EMH.

The rule of thumb is to either be there at 8am to get in several rides early, or just avoid the EMH park altogether.

Would you suggest that any day other than the EMH day would be a good choice or do you think the day right after the EMH is the best?
