It's only parts of Fantasyland and Discoveryland that are open. And also inside the Castle. It's a nice quiet time to explore in there.
Fantasyland - Carousel, Peter Pan, Dumbos, Teacups
Discoveryland - Orbitrion, Space Mountain, Buzz
If any of these are scheduled to be closed for refurb, then they'll open an alternative. I've see Star Tours open when Buzz was closed on one of our trips.

Frontierland is off limits (they open the doors at 10) I think, other then that I think all the other lands are open to wonder around in, not sure about under the castle itself but I don't see why it would be closed.... (unless the shop is, possibly?)...
Space mountain is the only thrill ride that's open really, I'd much rather they did Thunder mountain to be honest, at least that way you'd get the most popular ride before the public came in.
You can certainly go upstairs in the castle and in the shops so I see no reason why the dragon wouldn't be open.
Remember also that EMH gets busier as you get closer to 10am and depending how busy it is when you are there you can find waits of 20 minutes+ towards the end of EMH.
excellent as I plan of chilling out at Salon Mickey's at 9am after visiting Cinderella's Castle, taking a flight with Peter Pan and going to infinity and beyond with Buzz!
Not all Main Street shops are open. We saw a couple of signs "this store opens at 10 AM." I know I saw it for Lily's, and boyfriend even swears Harrington's was closed one day I was lagging behind at the hotel character meets.
