In the parks ? You can use the Disney shop app and it will tell you which shop have the toddler ears in stock. I don't believe they do engrave ears online anymore.

I know at DLR you can still have names embroidered at the park, but not sure about WDW. You could always have the Ears shipped to your home and then find a local embroiderer for the name. Honestly, you might get better quality results that way.
