EGGS!!! In Chicken Salad?!

I put eggs in it sometimes just like I do tuna salad. I put chicken, eggs, dill relish, celery,mayo, season salt, pepper, a little dry mustard, and a dash of paprika. Tuna salad is tuna (only in water), mayo or miracle whip, onions, eggs, and dill relish. I've never had the nerve to eat chicken salad with fruit or nuts in it because just the thought makes me ill. Some things I just can't eat together and meat and fruit are one of them (and vegetables with cheese EWWW).
 
The only mayo based salad I put hard boiled eggs in is potato salad. I would never think of putting it in chicken salad. We also don't do fruit and/or nuts in chicken salad. Just celery, onion, spices and mayo.

I usually grill extra chicken when I make it for dinner and then use it the next day to make chicken salad.

I'm going to try doing the slow cooker method with the chicken - I always poach my chicken, but I never have time for it to cool down, so I'm thinking, putting 2 chicken breasts in crockpot (what kind of liquid?? Chicken broth??) cook on low 4 hours, then when I get my lunch break shred it, and combine...I hope it will be cool enough to eat by dinner time!
 
Sometimes I do add eggs (I have a flock of hens); when I do I call it "Before and After Salad", lol!
 

I also love it with sunflower seeds and craisins or apples. If I'm making it fruity, I'll boil my chicken in applejuice. If I'm making it with plain yogurt, pecans and celery, etc... I just use rotisserie chicken.
 
NO not in chicken salad or tuna salad. I do like celery, walnuts, mayo, and salt and pepper. I like mine chunky so I cut big chunks of chicken. I usually saute boneless skinless chicken breasts and then cut it in chunks. Cool and mix with other ingredients. Taste really good on a croissant!
