EGGS!!! In Chicken Salad?!

There's a place out towards Amish country that we go to a couple times a year that will add hard boiled eggs to their chicken salad, sometimes 50/50.
Another place we went to while in college would add grapes, celery, and walnuts.
Good thing it's past 11pm, otherwise I'd be hungry.
 
we do with and w/o eggs, also instead of mayo, we use Ranch dressing and lemon pepper for a kick! It is very yummy and creamy!:)
 

Eggs are vile and I will not eat anything that has eggs in it. I almost vomited (legit!!) at a picnic once because the potato salad had eggs in it. *GAG*!!!!!!

I despise eggs and won't even eat french toast becuase it has an eggy flavor. I do not cook eggs for my family, and it PAINS me to cook/bake with eggs... I put on gloves to handle them.

I think the only thing worse than eggs in chicken salad are the chinese food places that put scrambled eggs in their fried rice. Really? Eggs in beef fried rice? Is that really necessary? Don't you get enough protein from the beef?

I agree with you, OP. I like chicken salad with: Hellmans, finely chopped celery, walnuts and diced apples (peeled first)... and some fresh dill on top. MMMMM!!!

You do realize that Helman's is made mostly from eggs, right?
 
We have 2 versions of Chicken Salad:

1) eggs, celery, sweet pickles, salt , pepper & mayo

2) red grapes cut in half, dry roasted unsalted peanuts & mayo

YIKES:scared1:...never would have thought of peanuts in chicken salad...good thing DS can't eat it anyway because of his egg allergies.

And YES I DO put a hard boiled egg in mine...always have. Sweet relish, mayo, roasted chicken, mustard, egg, celery if I have it.

Umm...have you read the ingredients on the mayonnaise jar?
 
YIKES:scared1:...never would have thought of peanuts in chicken salad...good thing DS can't eat it anyway because of his egg allergies.

My MIL makes it this way.I was horrified the first time I saw it and only tried it because were just married and I was still trying to make a good impression :rotfl: It really is good. You have to get good crunchy red grapes. The peanuts soften with the mayo. We get a deli chicken for dinner then afterwards all the leftovers get cut up for the salad. We mix it together and eat it the next night served on lettuce leaves. Really great in the summer.

I can understand that you don;t do eggs but can do mayo. You cannot taste the egg in mayo. I would vomit if I got a piece of bread with mayo... but I can eat mayo mixed into things like ranch dressing, tuna/chicken salad ect. the taste has to be hidden and masked for me to eat it. Silly I know but we all have our quirks. Dh will not eat squash if the seeds are in it. Totally gags him.

RIGHT!!!! My friend can't even LOOK at mayo without getting the heebie jeebies, but she loves eggs! (however, no matter how much butter, sugar and cinnamon is on the french toast, I still won't eat it LOL!!!) and it's not just the taste, but the smell of the eggs too. Which is why I can only do Hellmans mayo, any other brand is eggy smelling to me.

My grandma always added eggs to her tuna salad to help "stretch" it further. They raised chickens, so she always had plenty of eggs, and with 6 kids she had to do what she could. To this day I can only eat tuna salad the way my grandma made it...with hard boiled eggs and Miracle Whip. I think it's a psychological thing on my part.:lmao:

It sounds delicious - but I think the point was to label it if you take it to a potluck! Like the other poster, I'd never thought to look for peanuts in a chicken salad dish.

My peanut allergic family member prefers not to eat tree nuts so he'd be wary of chicken salad, thankfully. Tree nuts, like almonds, aren't uncommon in chicken salad, I'd just never heard of peanuts in one.
 
I never used to put eggs in mine but my husband always eggs in his. So since he always makes it now (since I'm not doing it right!) I don't complain, LOL. I've actually gotten used to it now and like it.

Point taken. I'm funny about what I take and eat at pot lucks. I never take or eat a mayo dish bc I worry about them sitting at room temp for to long. I usually make a fruit tray.
 
Around my house we put chicken, miracle whip, celery, and dried cranberries. The celery gives it a crunch and the cranberries an added sweetness!
