EGGS!!! In Chicken Salad?!

Not to hijack your thread OP, but what kind of chicken are you using? I have used canned chicken, which is OK, but tends to get watery. I'm not a fan of boiled chicken (which is what my mom does and then shreds it). So I'm looking for some ideas? Can you boil it with some spices? I think that's what I don't like about the boiled chicken....it's so plain and icky. What about cooking some in the crock with some broth and then shredding it?

Any ideas???

I use rotissaire ( sp? ) chicken or roast my own.
If you do want to boil, I would throw in an onion, salt, pepper, garlic seasoning. No way would I just boil it in plain water, but that is the cajun girl in me ; )... got to season everything we eat lol.
 
Eggs in tuna salad, but not in chicken salad.

I don't typically put fruit or nuts in mine either, although I like it like that when I get it at a restaurant or a deli.
 
Eggs are easy to hardboil, so why not just boil one, separate out a little salad and add egg to it? You could do this ever other time you make it as a compromise.

I do most of the cooking at our house. I would hate having someone else control everything I eat. My dh doesn't care too much, but I specifically try to do things his way sometimes because I know if it were me, I'd be unhappy to never get it my way!
 
When I make chunky chicken salad I put halved grapes, walnuts, celery, Miracle Whip, salt and peper, and sometimes curry powder. Eggs belong in egg salad! I use the skinless boneless chicken breasts and boil them.
 

I usually use roasted chicken breasts, shred/chop them, and add mayo, grapes, nuts, celery, red onion, salt & pepper. I've never heard of an egg in chicken salad, nor in tuna salad for that matter. Only eggs in egg salad, made with mayo, Dijon mustard, capers, some celery and red onion, and paprika
 
I use chicken, eggs, mayo, celery, relish and salt and pepper in mine.

I use either boiled chicken or leftover rosted chicken to make it.
 
I cook my chicken in the crockpot with chicken broth, celery, garlic and salt & pepper. Then I shred it and add mayo, diced celery, lemon juice, and roasted almonds or pecans and chill overnight. I like apples or grapes in it, but DH doesn't.
 
Chik Fil A puts eggs in their chicken salad I love it! I have also had it with apples and grapes equally as good. I think it depends on how I am going to eat it, in a sandwich Chik Fil A style as the main course a little fruit.
 
I've never had eggs in tuna salad, but it seems to be a popular choice with this group.

I don't put eggs in mine, but my mother does.
 
I LOVE tons of curry powder in my chicken salad!!! What an awesome flavor! and pecans and dried cranberries.
 
We put eggs in our chicken salad, tuna salad and of course egg salad. Delish!
 
I never thought of putting eggs in tuna or chicken salad, but sorry OP, I think it sounds great. Now i can't wait to try it!

In my family I am known as the chicken salad lady, but I make my differently. I bake boneless chicken breast and then grind with pickles and onions and then add garlic salt and mayo. The texture is very smooth and not chunky.
 
I often use mandarin oranges, pecans, celery, mayonaise, salt and pepper. Everyone seems to like it!

That's more like a pate (not that there's anything wrong with that). There are probably a million recipes and almost all of them are probably delicious (including the ones with eggs).

Ditto! In Mississippi we use boiled eggs in everything, including a seafood/crawfish boil.......cannot stand Miracle Whip :sick:...it isn't Mayo....and Mayo makes the sandwich.

OT: I think that Donald Duck juice makes a nasty screwdriver, Minute Maid, please...:rotfl2::rotfl2: That is kinda creepy, thinking about a screwdriver at 9 in the a.m. :sad2:
 
I will sometimes put eggs in chicken salad. I tried it the first time because I had eggs to get rid of so I boiled them. I think both ways are good.

I prefer it cook my chicken in whole milk or cream. It just tastes better to me.
 
salt, pepper, celery, apple and mayo, thats it. That is the way my mom made it and hubby loves it and insists that I make it that way.

I'm also one who doesn't like fruit or nuts in it. And I also don't like any pickle/relish, either. Just chicken, mayo, onions and celery. Probably sounds boring to most, but I guess that's how my mama made it, so that's how I like it. ;)
 
I know this isn't budget related, but I didn't know where else to post it.

My husband insists on eggs in his chicken salad. What do you put in your chicken salad? I like a few spices, mayo, maybe some sweet pickles, or nuts, maybe apple. ANYTHING but eggs. I need to find something to put in chicken salad, which we eat alot because my dh loves it besides eggs! He insists that "all the guys at work have eggs in their chicken salad". I don't buy it.

Putting eggs in chicken salad is like giving Pudge a tuna fish sandwich. It's just not natural.

My mother put eggs in about everything. She even put it in her turkey gravy...she was from Texas, so I always thought it was maybe a "southern" thing. It was delicious. So, yes, I put eggs in my chicken salad.
