One of my FAVORITE ways to make eggs is to hard boil them. I'm assuming Atkins allows you to have butter? Well, you peel the eggs, and mash them with a fork and some salt, pepper, and butter. YUM!
Another is the soft boiled method. I don't like them that way, but my mom does. You don't boil them all the way. The whites cook through, but the yolk is somewhat runny, like fried eggs.
Which is another way to eat the eggs. Sunnyside up.
I don't know what kind of omlettes you've made, but just changing what goes into them might give you a little bit of variety. Try different things. If we have leftover chinese food, I'll put that into an omlette. We had tacos, and I made a taco omlette with some seasoned turkey, tomato, olives, onion, and a little salsa and taco sauce poured over once cooked.
Hmmmmm......do the eggs have to be eaten for breakfast? Could you make some egg salad with them and have it for lunch?
