Eggs...how many different ways?

Ok so I am doing Atkins....just what else can I do with the eggs? They've been scrambled, devilled and made into omelets.
 
One of my FAVORITE ways to make eggs is to hard boil them. I'm assuming Atkins allows you to have butter? Well, you peel the eggs, and mash them with a fork and some salt, pepper, and butter. YUM!

Another is the soft boiled method. I don't like them that way, but my mom does. You don't boil them all the way. The whites cook through, but the yolk is somewhat runny, like fried eggs.

Which is another way to eat the eggs. Sunnyside up.

I don't know what kind of omlettes you've made, but just changing what goes into them might give you a little bit of variety. Try different things. If we have leftover chinese food, I'll put that into an omlette. We had tacos, and I made a taco omlette with some seasoned turkey, tomato, olives, onion, and a little salsa and taco sauce poured over once cooked.

Hmmmmm......do the eggs have to be eaten for breakfast? Could you make some egg salad with them and have it for lunch?

I'm tapped out, but I hope that helps somewhat! :)
 
I love to eat my eggs Sunnyside Up! Yum! :) I also love them hard boiled with a touch of salt! :)
 

My absolutely favorite way to make eggs, if fried with lots of butter. I don't like yolks so I just fry the egg whites, until the edges are crispy. YUMMY!!

Now though I fry them with I Can't Believe It's Not Butter spray and they are still yummy.
 
Another thought....

Are you allowed gravy? My DH's favorite way to eat eggs is with gravy, we make over easy eggs, but the yolk is cooked all the way and then DH puts it on bread and tops with gravy, sometimes he eats it without the bread.
 
I've been eating a ton of egg salad lately with olives in it. I think Katholyn was the one who posted this and I decided to try it. Yummy! I've also made the recipe posted in the low carb recipe post called scrambled eggs to go. EVERYONE in the house LOVES THEM!! DH & DS like them because they can just grab one on the way out the door. DD likes them with ketchup:rolleyes: . Theres also another recipe in there somewhere (which I can't seem to find again) which is like mini quiches without the crust...they are the best and I share them with no one.
 
How about crustless quiche --- which can be made 101 different ways! Just alternate different veggies, meat, and cheeses for variety.
