Egg Salad Sandwiches

DS came home for lunch today and said that for tomorrow's lunch he wants egg salad. Now...I've never made this because I don't like it so I don't know where he saw it...but anyways, all I know is that it includes hard-boiled eggs and mayo. I looked up recipes on the internet, but they're all so different. Can I just combine the egg and mayo? Or do I need to add in mustard, vinegar, onions, etc. DS doesn't like onions or celery so I figure I can just make it simple?

So eggs and mayo...is that good enough or no?
 
You can put anything you want...but maybe keep it simple if it's his first time. We just put mayo and a DAB of mustard.
 
That's how I make it! You CAN add all sorts of stuff, but I like it plain and simple: hard-boiled eggs cut up, and mayo.
 
I also sprinkle a little salt and pepper and maybe some lettuce before I consider the sandwich complete.

My mom used to add celery, which I hated as a kid, but now I like the extra flavor and crunch it gives.

What a good mom you are for making this for your boy (even though you don't like it!) :thumbsup2 Though he does know it will smell a bit at school?

When I was a kid, the other kids used to complain when someone brought in an egg salad sandwich. :laughing: But the one that really cleared the lunchroom was the kid that brought in pickled pigs feet! :scared1:
 

That is a good start.

If you think he can stand it, add the celery anyway. It is good to have a bit of a different texture in there. Otherwise the eggs mayo with a bit of salt and pepper should do it. Sometimes if I don't have celery I put in some pickle relish. If you are going to pack it, I would put a piece of lettuce on each piece of bread with the egg salad in the middle. This way the bread won't get soggy.
 
DD8 loves it.. I make it simple..Eggs and Mayo...SHe loves it, I figure if I add anything else, she can see it..;)
 
Keep it simple: Hard boiled egg, chopped and use little mayo, keep adding mayo until it looks like a consistency he would want.

I love egg salad. For those who are a little adventurous try adding curry powder.

I like my egg salad plain, just eggs and mayo. One thing to note is since there is mayo in it, I would put an ice pack in with it to keep the mayo from spoiling. Jay
 
Egg, mayo, a Tiny tiny glob of mustard, half a celery stalk diced and salt and pepper!

mmmm...i'm thinking this could be a yummy lunch tomorrow!!
 
My kids love egg salad.

Plain and simple. Boil the eggs (easter eggs are good for this) use a fork to break it up and put mayo in, a dash of salt and pepper if you want. Don't put to much mayo though. just enough to mix. Because then all you taste is the mayo.

We don't like anything crunchy in ours but I know some do. No lettuce either.

The bread will only get really soggy if you put to much mayo anyway.

We never had an ice pack in our lunch when we were at school, we survived....lol.
But I do use ice packs for my kids.....even though they leave their lunch pails open after first snack and hanging out of their backpacks. Not sure the ice pack is doing good then.

Thanks everyone! We actually live close to the school so he walks home for lunch everyday so he doesn't have to worry about it stinking up the lunch room! I'll make it tomorrow morning then just keep it in the fridge until lunch.
 
ooo and if you want a dash of someting fun i always add paprika! just a little sprinkle! (LOVE IT!! :love: )
 
I do as most others have posted: mayo, a little mustard and some salt.

My sister wanted me to make egg salad for her at a party and she handed me her pickle jar. :confused3 I didn't know why. She said she adds some pickle juice to her egg salad. I had never heard of that before. I convinced her to add mustard instead! ;)
 
I love egg salad too, I just can't stand the smell:scared: I mush up the eggs and stir in mayo until it is creamy looking:banana: serve on white bread with onions and lots of salt and pepper:love:
 
Eggs and mayo! That's it... to me it's a creamy meal no other textures need be there.
 
I am making it for lunch.. so funny that I just saw this thread. I am waiting for the eggs to cool.

I do eggs, mayo, little mustard, S & P. I am eating low carb so no bread. I either eat it plain or on top of a salad.
 
Yum! I made deviled eggs yesterday, that's almost like egg salad... well, sort of. I like my egg salad with mayo, a little mustard, salt and pepper, and some pickle relish.
