We love bfast for dinner!
AWESOME we try to do that once a month to cut down on the stuff we buy just out of habit!

bigsis i think i am going to copy you and try to eat out of the pantry and freezers at least one week out of the month. my freezer is packed. i usually do my shopping on friday nights. i think this week is going to be anohter pantry/freezer week where i buy only basics like i did this past week.

we were on plan with the split pea soup. it came really good and i have leftovers for lunches. tonight i will be making the ham and scalloped potato casserole. it is so easy. i just prepare a box of scalloped potatoes according to directions, throw in some diced ham, toss it in the microwve and that is it. i just have to nuke some broccoli and dinner is done.

Monday - Baked Ham with mashed potatoes & peas. (using a ham steak cut up in a casserole pan) This was a big hit...I threw some pinapple on the ham from a can & the kids ate it up.


Tuesday - Madras Tacos & black beans
kids thought this was too spicy..not sure if I can do this again


Wednesday - Rosemary Chicken and Baby Spinach salad
(deviated from this menu and made Zatarans Baked Fish - had some white fish in the freezer & salad) kids had raviolis.


Thursday - Leftover chicken > Chicken Fajitas
skipped this and had leftover squash & fish from yesterday


Friday - Homemade Pizza & Salad

Saturday - Hamburgers & Potatoe Salad

Sunday - Leftovers.
 
Have a couple of repeats on this next menu. Had a couple of dinners out for DH's birthday and enjoyed a late lunch/early dinner on a date day while watching the game.

Friday - Football game night. Will grab a quick dinner out or at the game.

Saturday - Wings, Chunks and onion rings

Sunday - Chili

Monday - Leftover chili and grilled cheese

Tuesday - French toast and sausage

Wednesday - Mostacholi

Thursday - Homemade pizza

Friday - Crockpot beef tips & mushrooms over noodles

Saturday - Chicken lettuce wraps, homemade egg rolls

Sunday - Halloween Parade and Potluck (one of our favorite days of the year :yay:) We're taking Honey Garlic Meatballs and 2 pumpkin rolls

Monday - Happy Halloween! Pizza at MIL's
before trick or treating

Tuesday - Grilled chicken noodle soup

Wednesday - Soft tacos
 

I bought some whole wheat (with yeast) pizza dough, variety of shredded cheeses, pizza sauce, and assorted toppings to make pizzas tonight.
 
Bacon and Onion Quiche

4 eggs
1/4 cup of milk
5-6 slices of cooked and crumbled bacon
1 cup shredded cheddar cheese
3 oz french fried onions
1 ready to make pie crust

Mix eggs and milk together until well blended. Sprinkle bacon, cheddar and onions evenly into crust. Pour egg mixture into crust. Bake @ 350* approximately 30 minutes or until eggs are set.

I just made this for brunch today- it was great! Thanks so much!!!
 
Tonight I changed from homemade pizzas to homemade baked mac and cheese with salad. It has been so cold and rainy that I felt like comfort food.
 
Might sound like a dumb question but does anyone have a good crockpot Mac and cheese? The only recipe I have makes it turn out like mush. Really bad.

The las several weeks my oldest has been in a play and our eat at home schedule got trashed! Gearing up this weekend to get back on track!:thumbsup2
 
With all of the high school theatre going on here, I haven't had time to post. We have eaten out more, too, just because there is SOO much time being spent at the high school or back and forth on the road to the hs. I'm going to try to be better, though. ;)

This week:
Saturday/Monday: white chicken chili, cheesy corn spoon bread (all in crockpots)
Sunday/Tuesday: pork fried rice (using 1/2 of already cooked pork roast), egg rolls, and sugar snap peas
Wednesday: Veggie soup (frozen from earlier in the month) and grilled cheese
Thursday: Hot dogs, Brunswick stew (frozen from earlier in the month), tater tots

Friday and Saturday will definitely be out. We are hosting Region One Act next weekend and as drama booster president and my DD being stage manager, we will be slightly tied up. :laughing:
 
Tonight we are having Paula Deen's breakfast casserole with fresh fruit smoothies.

Okay so I have been lazy with my posting. Two nights ago the boys had pulled pork sandwiches and the girls and I had tuna salad on buns with cucumber slices and corn. Last night the girls went to our life group with a friend as I wasen't feeling well. DH ans DS has pork steaks, I had artifical crab with melted butter. I served both with green beans. The rest of our plans are:
Tonight: Chili Mac with mixed veggies and homemade biscuits
Tomorrow: Taco night
Sunday: Hamburgers/ some sort of veggie sandwich for the girls, mashed potatoes and broccoli
After that I'm stuck. I need to inventory what I have and figure out a meal plan for next week so I can go shopping.

This week is going to be a heavy pantry/freezer week. Money is tight until Friday and I do not feel the need to dip into the savings when we have plenty in the freezer/pantry to get us through. I did go to the store today to pick up some fresh items which should last until friday.

Tonight is chicken gorditas with lots of veggie toppings.
 
Figured out some more meal ideas and switched things around a bit.
Tonight was Taco night as planned. Dessert was smores cooked over a fire pit in our yard. We invited friends over for this and decided we must do it more often.
Tomorrow: Veggie Stir fry with sunflower seeds over rice
Tues: Hamburgers/tuna cakes, mashed potato's, and broccoli
Wed: The girls leave for a weekend retreat with our church and DH and I are taking DS to see Cars 2 in the dollar theater. The plan is to make a big pot of veggie soup early in the day so we can all have some before we leave.
Thurs: Unsure as DS will be going to a Halloween party at grandpas work and I might go to a pampered chef party. I'm thinking french toast, scrambled eggs and some sausage for DH and DS
Fri: Girls come home and we have a Halloween Party at the Y and another at life group. If they are not planning on dinner at life group I will probably do hot dogs/ hummus sandwiches and Veggies
Sat: I don't know as we are supposed to go to the amusement park all day and the girls want to stay with grandpa for the haunted park. I don't know if DH will be going with us or if I will be bringing DS home when it gets scary or taking him to the parks RV park to stay with grandma. It depends on how everybody feels and what the weather is like.
Sun: Spaghetti and meatballs/ veggie spaghetti for me and the girls.
Mon: Chili baked potato's and broccoli

Our menu this week looks like this

Monday - Out - cat is going to the rabies clinic and we are spraying the house for fleas

Tuesday - Homemade baked Mac & Cheese with homemade chicken nuggets and salad

Wed - Meatloaf, instant reg and sweet potatoes, green bean casserole & honey carrots, fresh bread

Thursday - Pizza & Breadsticks, chips

Friday - Chicken Parm w/ spaghetti and garlic bread

Sat - ?

Sun - Mother in Law Bday at local Chinese Rest.
 
Mon. - corned beef, cabbage, and potatoes. Rolls.

Tue. - cheese tortellini with marinara sauce and something green with garlic bread.

Haven't thought any farther than that. It's going to be a crazy week. Maybe fish and veggies on Wed., and breaded chicken patties on a bun with sweet potato fries on Thursday. Friday we'll either make pizza or order out. I don't feel too bad ordering out for pizza. We usually have enough left overs to get 2 and sometimes 3 meals out of it so it's still economical (especially with all the deals they are running).
 
Having trouble getting back into "I'm at home mode" after our vacation. :rolleyes1 At least I thought about feeding us enough to realize I needed to get something out of the freezer to thaw or I'd be going out to eat or running to the grocery when we have plenty here. So I just sent one of the children down to the deep freeze with instructions to "get two different meats out". So it looks like at lunch today I'll be cooking my daughters some chicken fried steak since one of the packages is pre-tenderized round steak and tonight will be pork-chops. That's good. With pork chops I can cook some of our sweet potatoes or some of our winter squash.
