Today my mom, aunt, and I spent the day in Amish country. We ate cheap but it was all soooooo yummy.
 
Grocery Day....But I just had to stop in and share the BEST NEWS EVER (on this board anyhow :rolleyes1)...our trip is BOOKED, and we are going this March instead of October!!!!!! party:

Tonight we are having a meal with the various items we picked up on our trip yesterday. We have fresh fruit and veggies, cheese, fresh bread, and trail bologna.

Last week was TIGHT money wise so we were very creative- some meals included swedish meatballs, pancakes, spaghetti with garlic and oil.

This week!
Chicken and Ramen and Broccoli
Spaghetti and turkey meatballs
Pancakes with turkey bacon
Pot Roast with noodles
possibly lasagna with leftover balls from the spaghetti night
that's all I have right now.
 

Still stretching our dollars...great incentive now, every $1 saved in groceries is a Disney $1! :lmao:

Baked Potatoes stuffed with Leftover BBQ chicken
Carrot Sticks

Thursday-
Bacon and Onion Quiche
Banana Muffins

Friday-
Leftover Veggie Soup
Grilled Cheese
 
Tonight we are having the family over for dinner for my mom's birthday. I have pot roast with carrots, celery, and onions in the crock pot. I am making mashed potatoes, salad, and rolls on the side. My aunt is bringing pumpkin pie and apple pie for dessert.
 
tonight i am eating leftovers. tomorrow dd is having gallbladder surgery so i will be making breakfast for dinner. scrambled eggs, toast, fruit, and oven fried potatoes, i will be packing myself a healthy lunch as tomorrow she has to be there by one for her surgery. i just dont want to spend $$ for the hospital cafeteria. the next day we are having homemade split pea with ham soup in the crockpot.
 
LOL, smart move LisaM to pack your own food as hospital food is very pricey. And people think WDW food is expensive...:scared1: at least food at WDW has the environment. I just don't care much for the hospital theme.
Budget was tight this week so we'll be dining on the cheap.

Sun - stewed tomatoes and macaroni with ground beef, tossed green salad
Mon - club sandwiches for family, spinach strawberry salad for me, veggie sticks, apple slices
Tues - chicken enchiladas verde, guacamole salad, tortilla chips
Weds - albondigas soup with mexican rice, sliced avocado
Thurs - salisbury steak, mashed potatoes with brown gravy, sweet peas
Fri- grilled cheese sandwiches, cream of tomato soup, apple slices
Sat - ground beef tacos, guacamole salad

Sun - Black bean soup with cheese-garlic toast
Mon - Crockpot honey-garlic chicken with angel hair pasta and broccoli
Tues - perogies with farmer's sausage and milk gravy and coleslaw
Wed - spagetti with meat sauce, caesar salad and garlic toast
Thurs - baked potato soup with homemade buttermilk biscuits and raw veg. and dip
Friday - thai chicken pizza with raw veg. and dip
 
This week:

Saturday: rice, ginger chicken stirfy with bok choy and red peppers
Sunday: chicken breast schnitzel, mashed potatoes, green beans
Monday: chicken wings, fried rice, carrots
Tuesday: Meatloaf, potatoes, corn
Wednesday: Pork Roast, noodles, veggies of some sort
Thursday: Italian sausage marinara over penne pasta, salad
Friday: will go out, most likely (we have wayyy too many groupons)
 
this is my light week (kids are at Dad's till Sun)
Last night we had leftover chicken, potoato wedeges
Mon - Teriyaki chicken on the Grill, White Rice, Fried Green Beans
Tues - Baked Haddock for me/ Chicken Pot Pie Hubs
Wed - Ham Steak w/ Ahso sauce, Mashed sweet/reg Potatoes, salad
Thurs - Coconut Chicken fingers, homemade Mac & Cheese, Honey carrots
Fri - Pizza & Breadsticks (while packing for a HUGE yard sale)
Sat - yard sale day likely Dunkin Dounut bfast, subway lunch & pasta dinner
 
Tonight I am hanging out with my cousin all day and will be eating at my Aunt and Uncles. My mom will have leftovers.

Crazy busy week, but since we are going out of town this weekend I want to be "good" and eat at home!

Friday-Rib eyes on grill, baked potatoes, corn on the cob
 
Here is a recipe for Beef Veggie soup...easy, cheap and yummy!

1 lb browned and seasoned to taste ground beef OR beef cubes for stew, raw
1 large can of crushed tomatoes
2 cans of beef broth
1 bag of better frozen veggies

Add all to crock pot and cook on low all day. Tastes great with italian bread.

I Tried MY ham recipe tonight here we have half a casserole left over...
