Worked on my menu for this week and here it is

Tonight:
Grilled sirloin steaks with baked potatoes and brussell sprouts

Monday:
Chicken and noodles with leftover roasted chicken from the other night

Tuesday:
Grilled cheese with homemade tomato soup

Wednesday:
Chicken Stir fry over rice

Thursday:
Vegetable beef soup with homemade biscuts

Friday:
Spaghetti bake with salad and garlic bread

Saturday:
Sloppy joes with chips and fruit

How do you make your homemade tomato soup? :)
 

Monday: Baked Rigatoni, asparagus
Tuesday: Same
Wednesday: Chickpeas, kale, brown rice, cranberries and golden raisins
Thursday: Same
Friday: Sauteed Tilapia topped with zucchini in tomato sauce
Saturday: Taking the mama out for dinner (I splurge on her every two weeks--she's a cheap date)

Hopefully, I'll have enough of this stuff left over to take to work for lunches. If not, it'll be sandwiches, yogurt and fruit.

I bought a single serve blender, and have turned into a smoothie-drinkin' sonofagun. What a great investment for us solo folks.
 
Yesterday we had dd's 5th birthday party and boy am I tired. Oldest dd has hip hop tonight so we will be going grocery shopping tonight will post later :hippie:
 
Oh Wow, I just had the best spiced french toast and now you should smell my kitchen. I am sitting here still half an hour after the meal and savoring the aroma of cinnamon, cloves, ginger, and other spice. It smells like Christmas in here!
I am soooo ready for fall and cooler weather and fall type food.
So even though it is still 90 something here and going to be for a few weeks more probably, we are having some fall foods to fix my craving for different.

Sun - 3 way spaghetti with chile con carne and beans, garlic toast, tossed green salad
Mon - Ham and vegetable fried rice
Tue - Chicken and noodles
Wed - Swedish meatballs over ribbon egg noodles, seasoned sweet peas
Thu - Albondigas, mexican rice, cornbread
Fri - leftovers
Sat - Sloppy Joes on a bun, coleslaw, snack chips
 
We were out and about last night and ended up eating out.

Tonight- Apple sage pork chops with baked potatoes and lima beans.

Tue.- I made a nice pasta salad with yet more leftover steak. So it's steak, diced tomatoes, peeled & diced zucchini, with light parmesan asiago balsamic vinaigrette. I'll top it with some crumbled assorted cheeses.

Wed.- Ham steak, baked beans, and coleslaw.

Thursday- Chicken parmesan over spaghetti, garlic bread, salad.

Friday- Pizza
 
We ended up having grilled ham and cheese with tomato soup for dinner tonight. I wanted something easy and simple.

I was out of town for the weekend, it's good to be home. This week's menu:

Last Night-

Veggies and Dip

Wednesday-
Penne Pasta with Meat Sauce
Steamed Broccoli
Garlic Toast

Thursday-
Chicken and Yellow Saffron Rice
French Style Green Beans

Friday-
Tuna Salad Sandwiches
Chips
Carrot Sticks
 
Sooo, I got the chicken for tonight out of the freezer last night, set it on the counter and forgot about it. While we were sleeping the two devil cats living in our home had a chicken orgy. Got up to find the floors covered in little bits of styrofoam and the entire kitchen smeared with chicken juice-UGH!

So tonight the menu changes to pork chops (again!), mac-n-cheese and some sort of veggie.

Lessons learned:
1. Don't try to accomplish anything while thoroughly engrossed in the finale of Bachelor Pad.

2. When an adult kid brings a kitten home ("It's just till he's old enough to wean Mom. I swear!") make them sign a contract guaranteeing they really will reclaim said kitten. Get it notarized.

Tuesday
Pork Fried Rice (using leftover pork) with Sugar Snap Peas and fruit salad

Wednesday
Cheeseburgers on rolls
Pasta Salad w/ veggies

Thursday
Bacon and Tomato (from our garden) Sandwiches

Friday
Food shopping and a cheap bite out ;)

Saturday

Only three meals on the list at the moment. We have family coming into town on Saturday so I am doing a separate meal plan for the time they are here (a whole week! :eek: ). I will be cooking for 5 instead of 2 so a big change for me.

This week though will be:

Wednesday: Brats on the grill, mac and cheese, baked beans
Thursday: Tacos, chips, and guac
Friday: Creamy Shrimp Fettuccine and garlic bread
 
I have a change. I didn't know if the kids would like the steak pasta dish. So I picked up a rotisserie chicken. I'll have mashed potatoes and something green with it. I'm having the steak pasta for lunch. It is wonderful!
 
Changed the plans tonight. A neighbor gave us some jalapeno peppers from his garden so I am making loaded nachos for dinner. I had everything else in the house and they sound so good.
 
Last night we made chicken & veggie kabobs on the grill. I bought some chili lime marinated chicken & we used mushrooms, zucchini, onion & green peppers. They were AMAZING! I have quite a few leftover though so I'm using everything for a bbq chicken pizza tonight. That should last for leftovers tomorrow as well. Thursday I'm planning on lasagna & Friday we have complimentary tickets for a fish boil (yum!)
 
I made the parmesan chicken & pasta tonight. Used the rest of the rotisserie chicken for it. I had planed to make it with a tomato sauce, but I picked up a box of Macaroni Grill, creamy basil, instead. It was soooo gooood! I will definitely try some of the other Macaroni Grill dinner kits.
 
We went out for a late lunch today while running errands so we just had a light supper of soup and salad.
 
Tried something homemade tonight - Yellow rice with shredded chicken. It turned out great so now I don't need to buy those packages of yellow rice mix at the grocery store. Save $$ and made it healthier.
