Sun - Leg of lamb, roasted potatoes & steamed broccoli (Found the lamb in the back of the freezer during a clean out. It was 2 years old, but we decided to thaw it out to see if it was still good. It was delicious.)
Mon - Teriyaki chicken w/ stir fry veggies
Tues - Chicken pot pie, we use phyllo dough instead of pie crust
Wed (tonight)- Skillet stroganoff w/ noodles & tomato/cucumber salad
Thur - Smothered steak, not sure of sides
Fri - Grilled ribeye, baked potato & green salad
Sat - date night, DD will be w/ grandparents

I'm very proud that we spent $150 less for eating out in July, compared to June. Planning ahead and freezing pre-cooked meals has really helped. I will add that the savings amount doesn't really reflect how much we reduced the number of take out meals. We only ate fast food 3 times this month, which is a dramatic improvement from the 10-15 times in June. I would much rather spend $100 for a few table service meals than spend that money on fast food.

My grocery expenses did increase quite a bit in July because I was stockpiling the freezer. At this time I have about a month's worth of prepared meals in the freezer. I'm continuing to buy meat as it goes on sale, and will add to my freezer meal inventory every couple of weeks. This weekend, I'm planning on making a large batch of chicken curry, enough for 3 meals, from the chicken thighs I bought a couple of weeks ago for $1/pound.
 
This week is easy for me.
I had a painful tooth extraction and a bone graft in my jaw today.

So.. soup for the forseeable future:sad2:
Maybe mashed potatos if I'm feeling wild:rolleyes1

Company returns today. Here's dinner:

Broccoli-rice casserole with chicken
Field peas w/snaps
Biscuits

I'm just going to take it day by day. It's too hard to plan when you don't know how many will be here!
 
Sunday - We went to a BBQ where my friend made some amazing things. We were warned that we weren't allowed to bring anything besides beverages as he was in charge of the menu.

Monday - we were invited to another friends house where she made pulled chicken, mac and cheese and cole slaw. SOOO good!

Tues - grilled chicken, baked potatoes, broccoli sauteed with garlic

Wed - Chicken sausage and peppers (and possibly some more potatoes)

thurs - haven't decided yet. if its not too hot, might make baked chimichangas.

fri - either going out for my fathers 60th bday or having a quick slice of pizza.
 

So much going on at home tonight: dinner, laundry, packing for weekend trip, and on top of all that I have a friend coming over to look at our finances to try to help us set up a "get outta debt" plan. Our house is going to be manic tonight to say the least... :scared1:

Dinner:

Chicken Tenders (frozen)
Mac and Cheese (boxed)
Sautee'd Green Beans
*Strawberry Jello w/ Cool Whip

Not a healthy meal, but easy stuff really. :rolleyes1
 
Tonight will be:

Shredded BBQ Brisket Sandwiches
Baked Potatoes
BBQ Beans
Lettuce and Tomato Salads

We go back to New Orleans tomorrow. DD was awarded a small scholarship at school and we're going to that presentation and then to her white coat ceremony on Saturday. We're also picking up our son and DIL at the NOLA airport late Saturday night so I'm calling both Friday and Saturday as eating out nights.

Can't remember if I posted this but last night my son Dan, who is getting interested in raw foods, made raw polenta with a raw mushroom ragout (served with green salad and carrot sticks). I'm not a huge fan of raw mushrooms but it was actually quite good.

Tonight I made a coleslaw with shredded cabbage, grated carrots, chopped onion and thinly sliced sugar snap peas, with a light Asian-style dressing. It was very good. I served with oven-baked sweet potato fries topped with some leftover bean chili that I wanted to use up.

I'm thinking I might make a couscous-style quinoa salad tomorrow.

We leave for the lake (weekend family reunion) in three hours!!!:cool1: Tonight we get to go out to a DELICIOUS seafood buffet for dinner...YUM! Ya'll have a great weekend and I will catch up to you on Monday!
 
I love this thread. I'm always looking for ideas to make eating at home easier. I kept track a while back at how much we were spending for eating out a month and it was well over $500!!!! That's crazy! I'm going to try really hard in August to limit it to $200. Wish me luck!!!
 
Tonight we are having sub sandwiches (homemade) and chips with fruit. It is quick and easy since my mom is going out and needs a quick dinner before she leaves.
 
Still working on the meal plan I had posted on 7/22. We ended up going out to Five Guys last Monday so that we could use a movie deal I got from Living Social a while back. Then, we went down the shore on Thursday and Atlantic City on Friday, and though I did bring lunch for Thursday and breakfast for Friday with us, we did eat out dinner Thursday on the boardwalk and lunch and dinner out on Friday. Tonight we are having pioneerwoman.com beef with snow peas stir-fry.
 
just went shopping at aldis and spent $48.00. we now have plenty for meals. here in my plan for the next 2 weeks in no particular order,

soft tacos, rice, corn
ravioli, salad
breakfast for dinner ( 2x)
grilled fish, steamed broccoli, rice
Vietnam fried rice (vegis are in the rice)
potato egg scramble with italian sausage, fruit
pasta broccoli
goulash, salad
chicken and stuffing casserole, breen beans
miserly mom's potato cheese soup and sandwiches, fruit
pork cutlets, mashed potatoes, veg from freezer
hamburger helper, salad, veg from freezer
dinner out at cheeburger, cheeburger ( i have a gift certificate-dinner will out will only cost $5 at the most).


leftovers, pbj, egg salad, and cold cut sandwiches will be used for lunches. for breakfast we have bagels, cereal, fruit, milk, waffles etc. all lunches will include some sort of fruit.

ill will post and let you all know how i am doing.

tonight we had potato cheese soup, sammies, and fruit. i have some overripe bananas. im thinking of making some muffins tonight and maybe throwing some of them in the freezer.
 
The next two weeks will be a test! I work a lot, and dd has band camp which runs past our normal dinner time. Our oldest daughter moved into her own apartment a few days ago, so we are officially buying/cooking for a family of three now! :sad2:

Saturday-Leftovers/fend for yourself night
Sunday-Peel and eat shrimp, roasted red potatoes, corn on the cob
Monday-chicken black bean quesadilla's, cantelope slices
Tuesday- fish fillets, mac and cheese, baked beans
Wednesday-CPK barbecued chicken pizza, salad
Thursday-Grilled chicken, rice, green beans
Friday-Italian sausage fajita's, fresh fruit
 
And found that I have enough stuff to fill a menu for most of August! This works for me since I have declared a moratorium on eating out. We don't usually eat out much (DH is salt restricted), but we have vacationed most of July. What has been happening at our house is that my boys refuse to eat anything that doesn't look like it came from McDonald's. Nope. Not happening. I know I can do this; we NEVER ate out when I was a kid because we were stinkin' poor. I am going to channel my inner Mom and do this! Here's what I've got:

Spaghetti with meat sauce, salad (x2)
Beef and Black bean tacos (soft and hard)(DS6 pick)
Frozen pizza, salad (x3)
Meatloaf, green beans, baked potatoes (it's too darn hot to mash any)
Grilled chicken, corn, rice, salad
Chicken stir-fry with rice
Spanish rice with beef and beans, salad (frozen left over from tonight, btw)
Breakfast for dinner (x2)
Chicken, rice, black bean lettuce wraps
Grilled cheese and soup
Round steak with mushroom gravy, potatoes, green beans
Round steak fajitas
Round steak stir-fry (Noticing a pattern? I have HUGE round steaks from a cow we bought)
Shake and bake chicken, wild rice, salad
Chicken Nuggets and fries (DS4 pick)
Sirloin steak, baked potato, salad, peas (also from our cow)
Homemade sub sandwiches, chips, fruit
Cheeseburgers, fries, carrots, salad, fruit

I think all I need to make all this is a couple cans of black beans and the fresh ingredients. Hmm...methinks, perhaps, that I stockpile a bit...;)

your menu looks really good. do you think you could share the recipe for your spanish rice with beans and beef? sounds delish!!
 
Last night: Marinated Italian chicken breast, garden grown corn on the cob and some cheesy potatoes.

Tonight: Been craving a good sub, so got honey ham, honey turkey, pepperoni and provolone to eat on some sub rolls tonight. Add sub oil, salt, pepper, tomatoes on top. MMMM!

Dessert (tonight and last night): Pumpkin roll, made from a garden pumpkin we just picked! :)
