Spent $93.23 on groceries today but it should last us a good 2 weeks.

Tonight we had sloppy joes with baked sweet potato wedges and fruit.
 
We did really well the last 2 weeks and controlled our eating out very nicely. I planned well and prepped the night before or early in the morning for each nights meals. We only scrapped the menu choices and ate out once during the 2 weeks period :cheer2:

So here's the plan for the next couple of weeks:

Sun: Chicken kabobs, corn on the cob

Mon: Pineapple grilled pork chops, noodles

Tues: Hamburgers, tator tots

Weds: Breakfast for dinner - French toast, sausage

Thurs: Meatloaf, baked potatoes

Fri: Homemade pizza

Sat: Stadium brats, pasta salad, fruit

Sun: Stuffed cabbage, fresh bread

Mon: Fajita quesadillas, refried beans

Tues: Ravioli, garlic toast

Weds: Chicken lettuce wraps

Thurs: Sloppy joes, tator tots

So my goal is to stick to the menu plan and eat at home for the duration of our menu and have no eat out days. Fingers crossed that it works!
 
your menu looks really good. do you think you could share the recipe for your spanish rice with beans and beef? sounds delish!!

I openly admit that I cheat with Spanish Rice. Rice-a-roni makes a lovely one. ;) I bought 2 boxes this week for 90 cents a box and added a little under a pound of ground chuck (2.50). Two cans of tomatoes with juice and a well rinsed can of kidney beans. The only difference between the way I make it and the instructions on the box is an extra 2 Tbsp. butter/margarine and the addition of the beef and beans. Voila! Grand total of $7 for 2 dinners. I am quite pleased with myself. Add a bagged salad and that's dinner for 4.
I have been working on a lower sodium version, but the ones I've tried have been really tasteless. If I get one of them to work, I'll post that recipe; then I won't feel like such a schlub. :lmao:
 
I used to post on here, but just quit for some reason. I can't believe it is still going! Great job ladies!!! I started reading again last night and I think I will start posting again. It kept me honest in the past, so I'll try it again. Here I go....

I went to Kroger on Tuesday and Aldi on Friday. We had been on vacation in mid-July and I had let my pantry/freezer go bare and I have never quiet stocked up again. There just hasn't been any good sales around here like there used to be. I think I may just start going on a week to week grocery shop and stop worrying so much about stockpiling unless I find a really good sale. Also, with the kids home for the summer, my bill is higher and I run out of fresh fruit so quick, but that's a good thing. I spent a total of about $200 at both stores. We haven't eaten out this week and don't plan on it next week. Here is my plan for next week.

Today: Baked spaghetti and broccoli (I have several frozen meat sauces);
Monday: Beef Stew in crockpot;
Tuesday: Grilled chicken, wild, long-grain rice and grilled zuchinni;
Wednesday: Stuffed peppers and mashed potatoes;No....peppers look bad, going to dice and use for crockpot jambalya instead
Thursday: Lemon/Broccoli chicken over rice and peas; and
Friday: Pork loin with red peppers and peanut sauce over rice and corn on cob

I need broccoli and milk and I think no more grocery until Saturday!
 

I have been so bad lately! Lunch has been really difficult for me for some reason. I mean, I am leaving the house for no other reason then to give me an excuse to get food out for lunch... and I can see the impact it is having on my wallet AND my weight. *Sigh* I don't know how to curb it! I tried to just schedule my other meals the way I do my dinners, but that didn't work (I never "felt" like what I was supposed to have). Maybe I should try that plan again..

Last night I was at a friend's house and we all forgot about dinner until like 8:30pm... so we did get pizzas. OOPS!

I am also spending a lot more of time at home in the evenings because my boyfriend has been ill and it has really messed with his sleeping schedule. Luckily, he can do his work even in the middle of the night, but that means less time to spend with him.

So, dinners for this week:

- Apps and Snacks: Southwestern Egg Rolls, Pigs in a Blanket, Fruit, Vegetables and Dip, Chips and Onion Dip.

- Asian Style Baby Back Ribs, Parmesan Scalloped Potatoes, Corn on the Cob

- Grilled Malibu Chicken, Salad, Rolls

- Steak Fajitas and Spanish Rice

- Grilled Cheese and Soup

- BLT and chips

Breakfast I am thinking hardboiled eggs, fresh fruit, yogurt, maybe some biscuits (can be used to egg sandwiches or just eaten with butter and jam... maybe I should get a "different" jam for some variety?).

Lunch... sandwiches (get some good/different lunch meats) with fruit and pasta salad, left overs, and I will make Chicken Tikka Masala one day with Naan Bread.

I cannot stress enough how good the recipes from pioneerwoman.com are. I learned of the website from this thread, and have tried some of her recipes, and every one of them that I have tried has been excellent. A lot of my meal plan comes from her website. She shows you how to make each recipe with step by step pictures and instructions....love it! :worship:Some that I have tried are the grilled pineapple and chicken quesadillas (to die for), beef with snow peas stir fry(to die for), fancy macaroni(to die for), sloppy joes....
 
it was just me for dinner 2nite. i didn't make a thing from my plan but i didn't eat out either. i made fettuccine alfredo with shrimp. i made the alfredo using my favorite recipie from kraft.com and threw in salad shrimp i had in the freezer. i rarely make this as the others in my hh do not like alfredo and only like fried shrimp. the one good thing is that i will eating this for lunch for a couple of days.:thumbsup2 i love this stuff!

I love her as well. Her recipes are simple but to die for good. My favoriteso far has been the beef with snow peas, so yummy. I think I need to try the grilled pineapple and chicken quesadillas next.

Monday and Wednesday: crockpot beef burritos, Spanish rice, chips and salsa and guacamole
Thursday: Crescent pizza calzones, carrots and dip, pasta salad
Friday: subs made at home, pasta salad

Sunday: Hamburger helper made with ground turkey and salad
Monday: shake n bake chicken, tabouli, broccoli
Tuesday: Chicken enchilada soup
Wednesday: Turkey Spaghetti, green beans, salad
Thursday: Pepper steak and brown rice
Friday: Turkey tacos, refried beans, rice
Saturday: BBQ chicken and sausage, pasta salad
 
Its been incredibly hot here & its not suppose to get any better (108 has been mentioned as a possibility). I'm struggling with no oven or stovetop meals. Tomorrow is going to be crockpot pork chops with rice and some sort of veggie. Rice & veg will both be done in the microwave. May be all not dry up & blow away this week!

No problem. Easy and inexpensive are my motto! I have 2 boys, have been traveling all summer and am going back to school full time. I'm just happy they aren't living on Happy Meals! :)

Oh yes you do, I think it is almost equally to die for. Little bit of a pain, once you start assembling it goes quick...but they are really really good. I had them with guacamole and sour cream the first time, but I think they taste better alone.
 
Well, we ate out both nights Friday and Saturday but we were celebrating. DD won a small scholarship for neuroscience (!!!!!) and had her medical school white coat ceremony this weekend and we went out after each do.

I believe we'll only have one extra person to feed this week but I'm not sure so I'm still only planning day-to-day. Tonight will be:

Chicken/andouille jambalaya
White beans
Spinach salads
 
I've been feeling uninspired lately......hoping this board will help me, lot's of good cooks on here!!

Sunday:zucchini casserole and BBQ chicken (the kids had ice cream for dessert)

Monday:Goulash and green beans

Tuesday: zucchini fritters, sliced tomatoes and crock pot mac and cheese

Wednesday:salmon patties (crabby patties as the kids say), carrots and celery sticks

Thursday:grilled pork chops,fried potatoes, sliced tomatoes and cake mix cookies

Friday: chicken nuggets and french fries-this is a night off from "cooking"

Saturday: crock pot pulled pork for sandwiches (freeze leftovers for later), baked beans, fruit salad-cantelope, grapes, strawberries)

Sunday: crock pot Creamy southwest chicken, tortillas, more fruit salad
 
We are back from the lake and my kids started school today...My oldest started Jr. High, my middle 4th grade, and my baby started Kindergarten. :sad1:

Biscuits with Butter & Honey

I'm trying a new recipe tonight, Honey Pork Chops, in the crock pot. We'll have that with brown rice and green beans. I have a strawberry creme salad for dessert (store bought).
 
I love eating at home! I spend almost the entire year at my apartment for college but I like to plan out my meals for the week. I love to cook and it makes me stick to my monthly budget. :thumbsup2
