Yesterday I caved in and got nasty Kentucky Fried chicken... it's been really hot here and I have a HORRID day at work. :headache:

Tonight it's just me.... I'll find something leftover in the fridge I'm sure! Maybe I'll just have ice cream... :thumbsup2

We are camping over the weekend... I have to put my thinking cap on and figure out some easy meals... besides the usual hamburgers and hotdogs...

I fall victim to KFC at times too...after seeing the commercials repeatedly my mind and tummy tell me it will be sooo good, then when I get it, it really IS nasty!

Thanks to everyone for answering my "how often" question. I was feeling sorry for myself, because I felt like everyone else got to go so much more often than we did. It helps to really know we are all in the same boat...doing what we can to get the most of the money we have, and celebrating our financial victories every now and then with at trip to see the Mouse. As they say on High School Musical, "We're all in this together." :grouphug:

Salad
*Ice Cream Bars

Well, my thinking is this... I could afford to go every year if I wanted to if I went on a budget. I would rather wait a few years and go all out instead. I want to eat at the nicer restaurants, buy what I want, go on tours, ect... but to do this I need to save up the money.

For this years trip, I already have the hotel and tickets paid for (though I might add a day when I get there for transportation issues). I have my ADRs made and budgeted for based off of menus (I budget REALLY high for these things just in case). I will also have a large amount of money for gifts and my own purchases (I am buying a lot of Christmas gifts while we are there). Will I spend all I have put aside? Most likely not, but I would rather be able to if I needed to, then have to watch every penny.

Mom is on her own tonight and will be having spaghetti with the extra sauce left from making the meatloaf last night. I don't know what I will be having!
 

I think we are trying a new baked chicken recipe tonight. I am not sure what to make with it yet. Probably broccoli & maybe tater tots if we have them. If not mac n cheese probably.
 
We went to Disney in March of this year and I miss it sooo much. I am sad to say we can only make it once every 4 or 5 years. It is the most expensive vacation we take, so we just can't do it as often as we would like. How about you? How often do you get to go to Disney?

We have gone once a year for the last five years. My husband gets a nice Christmas Bonus and another bonus so we use some of that.
 
It is nearly 100 degrees here with the heat index so my grandma has declared it no cooking day and is taking us out to dinner.

Yea, we are dealing with the same. Walking outside is like walking into a wall of heat and moisture. It's miserable at the moment.

LilyWDW- this is exactly how we feel. We don't go often, because we too live by "if you are gonna go, go BIG". We don't want to spend our whole vacation telling ourselves or our children "no, we can't do and go or have that, it's not in the budget". We save for a long time and do it right! :earsboy:

Well, I changed up dinner last night. Didn't feel like being in the kitchen for an hour making the Bacon Cabbage Quiche, plus we really didn't think it sounded so good. It was a recipe from the meal plan I am subscribed to. So instead, we used the bacon and eggs from the quiche recipe and made breakfast for dinner.

Last night:

Fried Eggs
Buttered Rice
Bacon
Toast
Apple Slices

Tonight:

Salsa Chicken (in the crockpot now)
Tortilla Chips
Honey-Lime Drizzled Cantaloupe
 
Tonight will be Sweet and Spicy Salmon, Rice Pilaf, and Asparagus. I was going to do Green Beans, but decided against it since we just had some the other night. Need to switch it around lol.
 
Still really miserable here today but we are spending the day at my Grandma's in air conditioning so it is better than at home. For dinner we are planning on pizza, not sre yet weather we will do homemade or order in.
 
yeah, the heat is really screwing everything up. My temp is reading 103 right now and i'm sure it feels a lot worse. So this might be changing up my dinner plans for tonight.

I had planned on making an asparagus, pesto, tomato pizza on the grill but my sister just told me that at 11pm - the temp will still be 90 (AND I LIVE ON THE BEACH!), so those plans on cooking and eating outside might go out the window.

Hope everyone's up for going out to eat instead.
 
We are very excited ! Ds8 is a Lego freak !! Can't believe we are considering skipping the mouse lol !

I know some kids that are very excited about the news! Thanks to you guys for mentioning it! :)

Hot, hot, hot.

Not cooking tonight.

Ordering pizza to eat in.
 
We are having a crockpot chicken dish that has black beans, corn, salsa, and surprisingly cream cheese in it! It is soooo good, just sounds weird. We have it with rice.
 
Husband and kids are driving home from South Carolina overnight tonight, will be here tomorrow am sometime.

This is what I have planned for next 9 days:

chicken and pineapple quesadillas, corn with black beans
beef and snow peas stir fry, jasmine rice
homemade barbecue chicken pizza
pork roast, veggie, rice a roni
steak, baked potatoes, veggie
turkey breast, mashed potatoes, gravy, stuffing, candied yams, cranberry sauce, peas
hamburgers, lettuce, tomato, onions, pasta salad
Macaroni and cheese (Fancy Macaroni from pioneerwoman.com), stewed tomatoes
hot dogs and sauerkraut, corn on the cob

I already have 6 lb turkey breast, hot dogs, pork roast, ground beef for hamburgers, steak.... but my well stocked freezer will be empty now, I've used up pretty much everything from it. Over the past winter and spring I had stocked up on tons of meat when I found it on sale at 1.99/lb or less...used it all up now. When the kids go back to school in September, I'll go back to building up a stock pile, haven't spent much time shopping/couponing, etc. lately, but I haven't really needed to because I was so stocked up for months.
 
Didn't post this week but we had a great week no take out!:banana:

Monday was sandwiches
Tuesday was pizza
Wednesday was spaghetti with sauce
Thursday was chicken and baked potato
Tonight was tacos
Tomorrow my gram is turning 90 and to celebrate a cousin is putting together her favorite dinner a new England clam bake yum:cool1:

I am so proud this week I spent under 100$ at the grocery store and we ate every meal at home!
 
Tonight will be Buttermilk Fried Chicken, Macaroni and Cheese, Corn, and Biscuits. Not the healthiest meal, but OH so good.

This next week includes:

Mon 7/25: I am having dinner at my friend's house. We are making Pepper, Onion, and Sausage Fake Bake, Garlic Bread, and a Salad. Mom will be having a frozen pizza (her choice lol).

Wed 7/27: Sesame Teriyaki Chicken Thighs, Stir Fried Vegetables, Rice

Fri 7/29: Shrimp Fried Rice, Egg Rolls (uses up extra rice from Wednesday)

Sat 7/30: Italian Sausage, Brats, Fruit, Corn on the Cob

The order might change up some depending on the weather.
 
I made some Falafel balls and tabouleh yesteday for my veggie daughter and today I am making crock pot meatball subs.
