Eat at home

I've been lurking on this thread for a while but never posted. We are a family of 3: me (47 year old mom), DD 20, DD 17. I try to make meals on Saturday and Sunday that will be used as leftovers on Monday and Tuesday. So, this week:

Saturday and Monday: Orange glazed chicken, fried rice, broccoli, egg rolls
Sunday and Tuesday: Ravioli bake, fresh veggies and dip, garlic rolls
Wednesday: chili dogs and mac-n-cheese
Thursday: Breakfast-probably grits, eggs, bacon, and biscuits
Friday: payday! We will probably hit our favorite Mexican restaurant.
 
Boyfriend and I went out to Fatz Cafe for lunch. I am not planning anything for dinner and mom and I will just fend for ourselves.
 

STILL having computer problems-really, really, really slow internet and the only one who knows anything at all is in Costa Rica.

Just hubby and myself last night so we foraged-I had the last of the Cinnamon Toast Crunch that I bought for the little girls staying with us-yeah, right-the little girls, that's who I bought it for:rolleyes:

No real plan although I've got a massive cooking day scheduled for today. I've got a 2 pound brisket and a bunch of chicken thawing in the fridge.

I'm guessing (in no particular order)

-Chicken and sausage jambalalya
-Something made with chicken, frozen broccoli, pasta and some leftover cheese sauce
-Crockpot BBQ brisket sammies for lunches

We'll only have company Wednesday through lunch Friday this week. DH and I are going back to New Orleans for DD's white coat ceremony. I have a sneaky feeling more fried seafood will be eaten:rolleyes1
 
Well I have been bad...it has been so stinking hot here that we have ate out wayyyy more than normal :rolleyes1

the next couple days is back to normal then back up again but I'm gonna try and stick it out :lmao:

So the plan for this week is looking something like this...
MONDAY- Chicken Salads
TUESDAY- Shrimp & Fries
WEDNESDAY- Kielbasa & Kraut (in the crock pot) w mash potatoes
THURSDAY - Buffalo Chicken Sandwiches & Onion Rings
FRIDAY- Roast, veggies & potatoes (in crock pot)
SATURDAY- No Clue shopping day!

We're having leftover orzo with parmesan, garlic and peas, the last of the ham from the freezer and carrots.

Today I put a bunch of chicken in my crockpot with carrots, onion and celery. Tomorrow I'll turn that into jambalaya and a casserole. The brisket is marinating in the fridge. Hopefully I'll be ready for the next round of company when they arrive Wednesday.
 
We had grilled cheese with vegetable soup for dinner tonight. The soup was in the freezer and tasted so good tonight for some reason.
 
I have a goal to not eat out for the next 2 - 3 weeks......considering we eat out every weekend this will certainly be a challenge for us!

(Tonight) MONDAY Meatloaf w/veggies
TUESDAY leftover meatloaf w/mashed potatoes
WEDNESDAY chicken crock pot meal
THURSDAY (leftovers) chicken crock pot meal
FRIDAY (leftovers) chicken crock pot meal (yea, usually tired of it by now!)
SATURDAY frozen pizza or beef potpies......haven't decided yet

Wow, I haven't been on in three DAYS! That's a record for me! :lmao: So here is what we have eaten and are going to eat...

Beefy Rice Bake
Steamed Veggies
*Birthday cake for DS's 5th b-day

Sunday-
Mediterranean Chicken
Roasted Pinenut Couscous
Salad

Monday-
Salsa Apricot Pork Cutlets
Rice
Asparagus

Tonight-
Grilled Tilapia
Parmesean Linguine
Fresh Pear Slices
*Ice Cream Bars

Wednesday-
Cheesy Chicken Flats
Chips
Sweetened Strawberries

Thursday-
Chicken Fingers
Mac and Cheese
Broccoli
*Strawberry Jello w/ Cool Whip

Going out of town for the weekend to a family reunion...
 
This is our last night before the company returns so we're going out. I've got a BOGO for Logan's Steakhouse. Yee Haw-we're gonna be living high on the hog tonight! ;)
 
Leftovers tonight for us (so meatloaf, potatoes, broccoli) and I think I will make a peach cobbler.q
 
red beans and rice
wed - spaghetti w/garlic bread
thurs - breakfast
fri - smothered burritos
 
Tonight I'm going to make whole-wheat pasta with broccoli and a walnut-basil-garlic "pesto" sauce (it's a vegan sauce, so no parmesan cheese), with salad on the side. It will be a nice green meal! I have banana-chocolate chip mini-muffins for dessert.

I have some cabbage I want to use up tomorrow, so I'm thinking of cabbage rolls stuffed with quinoa and veggies.

We decided against the spaghetti since my mom did not want something that rich tonight. So instead we had chicken and veggie stir fry with rice.
 
This week is easy for me.
I had a painful tooth extraction and a bone graft in my jaw today.

So.. soup for the forseeable future:sad2:
Maybe mashed potatos if I'm feeling wild:rolleyes1

But.. I still get to cook for the rest of the family who didn't survive medieval dental torture today so....

Wednesday.. Hamburgers, Veggie Burgers, Mashed Potatos and Salad

Thursday.. Chicken Kiev (premade:thumbsup2) broccoli and rice

Friday.. Baked Potatoe Soup and Crescent Rolls.

and Saturday is the big grocery shop so I will start the menu again from there.
