Here is what we're having this week:

Meal 1 – Grilled Chicken and Veggie Kabobs
Meal 2 – Vegetarian Spaghetti
Meal 3 – Grilled Turkey and Cheese Sandwiches, Salad, and Melon
Meal 4 – Nachos (again!)
Meal 5 – Grilled Asian Pork Chops, Fried Rice, and Broccoli
Meal 6 – Mini Pizzas and Salad
Meal 7 – Left Overs / Take Out

I think I might have try your salad and bread idea:idea:

Tomorrow DH is cooking and we will have chicken saltimbocca from Giada's recipe. It's worth the cost of the prosciutto.

Thanks for the hugs! I do feel better. My allergies have been horrible this year and the headaches have been on of the symptoms this year. Nothing I take really gets rid of them.

For the salad I mixed some romaine, cucumbers, tomatoes, red onion, avocado, bacon, feta cheese, kidney beans, and croutons. I served it "dry" so everyone could add the dressing of their choice. It was really simple (even though the bacon was being difficult).

I will have to look up that chicken recipe. I love prosciutto, but never can use up a whole package!

Spicy Salmon with Mustard and Brown Sugar Glaze, Rice Pilaf, Green Beans

Fried Chicken, Biscuits, Corn, Mac and Cheese

Sat 7/23
Italian Style Meatloaf, Green Beans, Mashed Potatoes
 

I wanted something different tonight. So we are having white chili (chicken in the chili)--in the crockpot, cornbread, and for dessert banana bread made with chocolate chips. We already sampled the banana bread. It's really good!
 
We are back on track! Although dh and I did go out to dinner last night.

Sunday- Mexican soup in the crockpot
Monday- Chicken, zuchini, corn on the cob, tomato slices
Tuesday- Eggs, potatoes, tomato, avocado
Wednesday- Fish fillets, mac and cheese, baked beans
Thursday- Spaghetti, salad, rolls
Friday- Mushroom pizza, salad

Tonight is a whole chicken in the crockpot with onions and carrots, then broccoli & sweet potatoes on the side.
 
I was in South Carolina and Florida visiting family for the past week, so we ate many meals out, but it was our "vacation" for the summer. We did eat dinner at my in-laws 2 nights and dinner at my husband's grandfather's house 2 days, but we ate many lunches/the remaining dinners out, but none of the meals were over $35 I think, it was places like Bojangles, Ryan's (buffet), Shoney's :sick:, a hot dog place,etc.

My husband and kids are still in South Carolina for another week visiting my in-laws, and I did give him enough money for a couple "cheap" meals out, but they will probably eat home a lot too and may treat them to a meal too.

I flew home today as I need to go back to work, I am actually going to pick up some overtime too this week....

These are my plans for the week for myself:

home made chicken chow mein x 2 nights (or 3)
stuffed shells (this is actually in the freezer, made and ready to go in the oven from the last time I made it)
taco soup x 2 nights
grilled cheese and tomato soup if need be....

Easy dinners that my husband is not big on, and left overs I don't mind eating.

I leave the cheddar and onion out of the crust, making it just a cornbread crust. We usually top it with sour cream and chives. YUM!
 
We have ate out way too much over the past month so just went food shopping and going to try to plan ahead to help

Today- Steaks on grill, baked potato, corn
Monday- Chicken Salads with Garlic Toast
Tuesday- Pork Roast with Hotdogs, sauerkraut and mashed potato
Wednesday- London Broil in crockpot
Thursday- marinated chicken breast, macaroni and cheese, broccoli
Friday- Ribs with baked potato and veggie
Saturday- going to a family picnic have to take pasta salad
 
Grocery day was yesterday.

Saturday:
Homemade Chicken and Rice Soup (didn't turn out so good :sad2:)
Cressant Rolls

Tonight:

Crock Pot White Chicken Chili

Ingredients

1 1/4 lbs boneless skinless chicken
2 (15 ounce) cans great northern beans or 2 (15 ounce) cans navy beans
1 (15 ounce) cans hominy or 1 (15 ounce) cans white corn
1 (1 1/4 ounce) envelopes taco seasoning
1 (4 1/2 ounce) cans of chopped green chilies
1 (10 3/4 ounce) cans condensed cream of chicken soup
1 (14 ounce) cans chicken broth
1/2 cup sour cream
chopped green onions (optional)
monterey jack cheese (optional)

Directions

1. Place chicken in a 4 quart slow cooker.
2. Top with beans and corn.
3. In a medium bowl, combine taco seasoning, chiles, condensed soup, and chicken broth. Pour over top of ingredients in the crock pot.
4. Cover and cook on low for 8 to 10 hours.
5. Before serving, stir gently to break up chicken, then stir in the sour cream.
6. Serve topped with green onions and jack cheese, if desired.

It was easy and delicious. Versatile recipe. I used leftover rotisserie chicken, omitted the chiles and green onions as the kids don't care for them. I used pinto beans and yellow corn, because that's what I had on hand. And I forgot to add the sour cream before serving! :upsidedow Still wonderful. We have more than enough for tomorrow night, so it should be interesting to taste the difference with the sour cream. (I already have navy beans and white corn on my list to get for next time.)

One of those fast paced days. But I was so glad I had the chili in the crock pot! That was a life saver.

Since we were gone this weekend we had Wendy's for dinner tonight. It was fast, simple, and good.

I am going grocery shopping tomorrow which should not be too expensive since we bought a lot of produce on the island and on the way home at the various farm stands.

OK... this will be long. My plan is from tonight until I get home from vacation... yes... this includes my 10 day vacation! Holy cow I'll be in Epcot a week from now! Eeeek! We had a major budget buster this week so our vacation spending budget has taken a HUGE hit. We cancelled 2 ADRs and are planning to cook most meals. My goal is to spend less than $500 on food for the three of us on vacation, including the two pricey ADRs we did keep.

Tonight: Grilled turkey and tortellini salad (turkey and tortellini was purchased and frozen ages ago and the tomatoes were purchase late last week when I used my NatureSweet coupon $1/2 and needed some a meal then) All I need is spinach.

Tuesday: pork tenderloin, augratin potatoes and lima beans (have everything)

Wednesday: frozen pizza (coupon. Had planed tomake it, but I ran out of cheese and pepperoni and the cost of those two things is greater than just buying a frozen pizza)

Thursday: Buffalo Chicken Salad

Friday: Grilled chicken w/ wild rice and veggies

Saturday (full day of driving to MIL's): B- cereal; L- chicken salad sandwiches, carrots, chips; D- Hardee's (have coupons)

Sunday (check into off-site resort): B- cinnamon toast and bacon (MIL will take care of it); L- Sonny's BBQ; D- Chicken Taco Salad

Monday (Epcot): B- Bacon and egg sandwiches w/ fruit cups; L- Slider combo at Tangierine Cafe in Morocco; D- Beef Stroganoff over noodles w/ green beans

Tuesday (DHS): B- Breakfast Burritos w/ yogurt; L- BLT's w/ fruit, chips (Mickey head ice cream for snacks?); D- Artist Point

Wednesday (SeaWorld): B-pancakes and kielbasa; L- Quick Service (discount with MIL's AP); D- Domino's pizza (after three days at parks, no WAY will I want to cook!)

Thursday (resting/shopping): B- Cereal, L- leftovers, D- spaghetti (only need meat, already have sauce and noodles) and salad

Friday (AK): B- Breakfast Burritos w/ yogurt; L- Deli meat sandwiches w/ fruit, chips and carrots; D- Chicken Tortilla Soup

Saturday (Typhoon Lagoon): B- pancakes and sausage links or patties (whichever is on sale); L- Quick Service or fast food off-site; D- Fried chicken provided by MIL

Sunday (resort change to WL): B- cereal; L- Chili's (have a $10 GC); D- leftovers

Monday (MK): B- food court; L- PB&J sandwiches, chips, carrots; D- leftovers

Tuesday (driving home): B- Chef Mickey's, L- Hardee's (coupons); D- with the family we'll stay with that night.

You think I can manage to spend less than $500? I'm not used to regular grocery store prices so I'm a little nervous!

OMG! It's an oven here in Wisconsin! I haven't been using my stove at all for a few days. Today it was crockpot pork tenderloin and gravy and yesterday it was chicken and black bean quesadillas. The quesadilla recipe is up on my blog:wizard:
