Sunday night I pulled out chicken gumbo out of freezer, too warm for gumbo , but it was YUMMY !

Monday night was Rachel Ray's Beer braised chicken thighs, which is kinda silly, cause a bit too close to the gumbo the night before ... go figure , but YUmmy yummy and not quite as time consuming as making a roux for gumbo , and still a little different. I put the leftovers in freezer. LILYWDW.. i see you did a beer braised chicken this week too, yours sound yummy too.

Tuesday , Tuna steaks, grilled asparagus , parmasan garlic bread and either salad or roasted potatoes . Leaning towards salad because we have a cheesecake for dessert..It is DH's birthday , I spent a ton at Whole Paycheck ( i mean Whole Foods haha )for the tuna and cheesecake , but it makes a boy happy lol.

Wed .. smoking a boston butt on smoker, but will most likely save for thursday and weekend. Think we will hit our local food truck round up . Food trucks are super popular here these days and on Wed nights they gather all at the same spot , location changes each week. There is a crepe truck I am hearing great things about , can't wait to try.

Weekend, no real idea yet, except for the boston butt. Will prob freeze quite a bit of it , but we will eat on it some for sure.
 
DH wasen't feeling well yesterday and I wasen't in the mood to cook but I beat down the temptation to get takeout:cool1: and we had tuna sandwichs and dorito's for dinner. Tonight, tomorrow and friday will be:
Tuna Steaks/fish sticks (for the kids) with veggies and rolls,
Cheese enchiladas w/spanish rice,
and a baked potato bar w/brocoli and cheese or chili and cheese options.
I haven't gone shopping beyond that point yet but we will be camping with friends this weekend I think our dinner plans are
Taco's the first night with pre cooked taco meat that can be reheated for the meat eaters,
Hot dogs/morning star veggie sausages w/chips and salad the second night and Hamburgers/veggie burgers with grilled portobellos and onions and mashed potatos for the last night.
I need to think of something really easy for the day we come home or I will cave and go out to eat that night for sure. All that packing up, driving and then unpacking is sure to make me unwilling to cook. Anybody have any unique ideas. I'm a little sick of sandwichs.
 
Sun - charcoal grilled hamburger steaks, green beans, stove top stuffing (DH cooked)
Mon - both DH and I worked waaay late, so Burger King was on the way home and cheap.
Tues - spaghetti with ragu sauce, green salad, garlic toast
Weds - carnitas, guacamole salad, mexican corn
Thurs - leftovers
Fri - on the road, we'll be headed to the annual 4th of July family reunion!
Sat - Grandma cooks so whatever she feeds us
Sun - family reunion! Traditional Menu will be: BBQ! Ribs, smoked brisket, corn on the cob, grilled bacon wrapped stuffed jalapenos, scalloped potatoes with cheese, tabouleh, salsa and chips, cole slaw, peach cobbler, homemade ice cream, Yum Yum. :woohoo:
 
What a great thread! My first few weeks will be strange andnot very healthy because we are in the middle of moving and it is just me. There is allot of food in the houseI will be trying to use up before I have to pack the Uhaul. But I would love to get in the habit of doing this. Maybe it will help me stay out of the drive thru.

Sun~ made Blt rolls, pizza dip w/french bread, fruit & dip Veggies & dip, and Pineapple & madarin orange trifle for a True blood party so I am drowning in leftovers
Mon~ reheated Chicken fried rice & Egg rolls from Sat's take out, fruit & Dip
Tue~Dinner out with girlfriends
Wed~leftover BLT rolls, cheese & Crackers,trifle
Thurs~Grilled cheese & soup (have to start using up the cans in the cupboard, less to pack)
Friday~ Frozen pizza, and more trifle
Sat~Going out with friends to watch fireworks (possibly grilling out)
 

Tonight.. I have some banana's that are really rip so I plan to make banana pancakes with chopped pecans and some turkey breakfast sausage.

Tomorrow chicken breast grilled and seasoned with some fresh lime juice, mexican rice.

Slice up the leftover chicken breast and make a salad and add in some drained canned corn and tortilla chips.

Grilled hotdogs, sliced tomato topped sliced mozzarella cheese and drizzled basamic dressing.

Potato crusted fish fillet (Gordon brand), lima beans, rice
 
Dinner tonight:

Broccoli and Sausage Penne (new recipe)
Caesar Salad
Garlic Toast

PepperJack Braid for dinner last night turned out to be really good. The kids loved it. It is really "breakfast-y". It had pepperjack cheese, smoked sausage, onions and eggs all wrapped in a pizza crust.
 
Last night:

Grilled smoked sausage
pasta salad
chips
apple pie

Tonight (only 3 of us compared to 6):
Grilled cheeseburgers
fries
leftover pasta salad
leftover pie
 
Last we ended up swaping in rice pilaf for the sweet potatoes because they had gone funky.

Tonight we are doing homemade macaroni and cheese with salad.
 
I am trying so hard to not eat out. We have a freezer full of meat (thanks to my inlaws), but it is meat that my kids wouldn't normally eat. Ribs, pork roasts, odd cuts of beef, plus chicken for days... Any ideas on how to cook ribs differently? or a pork roast? the family is getting tired of the same old ways.

I can't think ahead too much these days. I have some leftover sauce from last night's cider/yogurt scallops. I think I'll frizzle up some deli ham, throw in some frozen peas, and bind it together with the sauce. If there's enough sauce, I might add some cooked pasta. If there isn't enough, I might have it over instant mashed potatoes. It'll have to be good enough.

Tomorrow the beef cubes should be thawed out enough for beef paprikash with noodles and carrotts.
 
Tonight I will not be eating at home... :guilty: My parents are coming for a visit, my nephew is on leave from Kuwait and my niece wants us all to meet her new boyfriend, so it is a family dinner out for dinner. I must say I am grateful for a night off from cooking. With DH out of town for the week, it has been tiring to do EVERYTHING in his absence, yes I am spoiled. :rolleyes1

We finished up having a LOT of company for three weeks last Sunday. I did cook quite a bit but we did end up getting pizza twice and the guys went out to Acme Oyster House one night.

Now that it's back to the two of us here's our menu:

Monday-Ham, pinto beans, carrots, cornbread
Tuesday-Spaghetti/meatballs, salads, garlic bread
Wednesday-Bean/cheese soft tacos, cucumber salad, Mexican rice
Thursday-Pan seared pork chops, sweet potatoes, field peas w/snaps
Friday-Chicken and sausage jambalaya, salads, French bread

We're going to my parents on Saturday and will be there till Monday evening. I'm guessing there will be a BBQ at some point :)
 
Tonight we are doing chicken salad on croissants with corn on the cob. We needed a light easy meal for today since we both have things going on tonight.
 
Tonight will be steaks, baked potatoes, and parm spinach. Starting a weekend of grilling!
 
I don't feel like jambalaya tonight so I'm changing to

Meatloaf
Twice-baked potatoes
Glazed carrots
 
Tuesday - we had chicken cordon bleu, artichokes and rice pilaf
Wednesday - we had chicken with lemon and artichoke hearts, mashed potatoes, peas
Thursday- we had chili dogs and french fries
Friday - went out to pizza and mini golf for 11 year old daughter's birthday party

This is what I have planned/shopped for:

Tacos with guacamole,lettuce,tomatoes,cheese, etc.
hot dogs and sauerkraut, coleslaw
steak, baked potatoes, broccoli
hamburgers with lettuce,tomatoes,pickles, corn on the cob, pasta salad
stuffed shells
corned beef, cabbage, potatoes, carrots
pork roast, mashed potatoes, green beans


ideas for lunch:
make a batch of chicken salad
cold cut sandwiches
Ellio's pizza
 
Last night I made enough chicken salad that we had plenty leftover to lunch today and tomorrow. We are out of croissants but toasted bread works just as well.

Tonight we are having sliced steak gyros with rice pilaf.
