Eat at home

Last night was eat out pizza via Groupon we $8.00 including tip. Today for lunch is turkey bacon, lettuce, tomato, and avocado sandwiches. So that's TBLTA's lol!
 
We're visiting my parents for the fourth. Last night was swimming with my nieces, take-out pizza and watermelon.

Tonight we're going to grill out :)
 
Tuesday - we had chicken cordon bleu, artichokes and rice pilaf
Wednesday - we had chicken with lemon and artichoke hearts, mashed potatoes, peas
Thursday- we had chili dogs and french fries
Friday - went out to pizza and mini golf for 11 year old daughter's birthday party

This is what I have planned/shopped for:

Tacos with guacamole,lettuce,tomatoes,cheese, etc.
hot dogs and sauerkraut, coleslaw
steak, baked potatoes, broccoli
hamburgers with lettuce,tomatoes,pickles, corn on the cob, pasta salad
stuffed shells
corned beef, cabbage, potatoes, carrots
pork roast, mashed potatoes, green beans


ideas for lunch:

cold cut sandwiches

Parm spinach sounds lovely. Do you have a recipe for it?

I really do not use a recipe, but instead go on sight and taste.

Use about a full family bag of washed spinach. Cook this down, remove from the pan, and drain as much water from it as possible. Add some butter and about half an onion, diced small, and brown. Add the spinach back in.

Add a couple of tables spoons of heavy cream. Then, start adding some mozzarella cheese. You will use quite a bit and are looking for a creamy texture. Once you get it as creamy as you like, add the parmesan cheese (I use grated as it melts well into it) to taste. If it gets too thick, add a bit more cream.

I am sorry I don't have an exact recipe, but I found this technique to work better then any of the recipes I DID try. Next time I make it, I will try to get better measurements.

Thank you for this! So it's like an Italian creamed spinach? I have all the ingredients on hand plus some homemade tomato gravy to try on top of it.
 
Oops, I didn't post a menu for the week! I'll start with Sunday since I usually make a big roast that supplies much of the rest of the week.

Sunday
  • Breakfast - Pancakes
  • Lunch - Roast chicken with beets, green beans and roast root veggies.
  • Dinner - Pizza, spinach parm and brownies.

Monday
  • Breakfast - Pumpkin bread.
  • Lunch - Leftover pizza and veggies.
  • Dinner - Hot dogs on pretzel buns, DH's homemade sweet potato fries ans star cookies.

Tuesday
  • Breakfast - Pumpkin bread.
  • Lunch - Butternut squash soup, salad, and pretzel rolls.
  • Dinner - Panera dinner," ie chicken sandwiches (made from the roast), spinach and cress salad and tomato soup (made with my tomato gravy that didn't end up on the pizza). Apples and melon for lunch.

Wednesday
  • Breakfast - Pumpkin bread.
  • Lunch - Borscht and onion bread.
  • Dinner - Homemade mac and cheese with sage derbyshire cheese, tomato salad, beets, green beans. Friends bringing over hot dogs and pies.

Thursday
  • Breakfast - Still pumpkin bread (big batch, good thing everyone likes it).
  • Lunch - Leftovers.
  • Dinner - Butternut squash soup, green beans, and rolls.

Friday
  • Breakfast - Second verse same as the first.
  • Lunch - Omelette and salad.
  • Dinner - Catfish and DH's sweet potato chips with black beans and Harvard beets.

Saturday
  • Breakfast - Full fry up: eggs, potatoes, beans/mushrooms/tomatoes and pork roll with orange juice.
  • Lunch - Noodles in homemade broth. Fruit.
  • Dinner - Cottage pie or potato soup depending on leftovers around.

Yikes. Written out that seems like a ton of food! And lots of soup. Soup and bread, although homemade, are my lazy foods.

I usually make a big dessert once a week that lasts for awhile and occasional batches of cookies. We don't snack, the cookies are really for a sort of tea time/coffee break midafternoon, or dessert if the children decide cake or pie is gross tonight. :confused3

I have an off week of eating out as I am heading to Chicago for most of the week for the 4th and then for 6-9th for work. :( No home made goodness for me. Although I did get Amish bread at the farmers market - it was home made! Just not in my home :lmao:
 
I have to take another week off from the thread! I was home for one night last week (we had eggs, roasted red potatoes, tomato and avocado slices). We are on a family vacation now in Savannah! We are only home for 3 days this coming week before heading to Virginia Beach!

I guess I can do the three days!

Tuesday-Chicken tettrazini, green beans, tomato slices
Wednesday-Blueberry pancakes, eggs, cantelope
Thursday-Tuna salad lettuce cups, tomato and avocado slices, cantelope
 
Yesterday we had a casserole of Adzuki beans, sweet potatoes, and a variety of veggies (asparagus, celery, zucchini and leeks) cooked in a spicy miso sauce. It was very good although the liquid in the sauce didn't evaporate enough and I had to serve it with a slotted spoon (the recipe said it would be like a thick syrup and it definitely was not.

Today my son cooked dinner and he made one of our old stand-by pantry meals, chickpea-spinach curry.

Tomorrow my daughter Lisa is here and she's a great cook so I'm hoping she'll do something delicious for dinner.

And then on Tuesday Lisa and I are going to Vegetarian Summerfest, a great conference in Pennsylvania. All meals are included in the conference fees, and the food is all vegan, and prepared by an award-winning chef. I went last year and was so impressed by the variety and quality of the food we had, can't wait to see what we get this year!

We're still away visiting my parents. Last night the BBQ was scrapped in favor of fried shrimp, home-made french fries, salads and garlic bread. My mother cooked, DD and I did clean-up.

Today should be burgers and chicken on the grill.

I don't follow a recipe, I just bake some chicken (I did about a lb) then chop it up, add chopped celery (3 stalks), chopped onion (I used 1/2), salt, pepper, mayo and a glob of sour cream, but the greek yogurt idea that someone posted might be a nice touch too.

Happy 4th!!!!!!

Tonight we are on our own. Everyone in the extended family all had other plans so it is just mom and I tonight, which is fine with me. Our menu is Beer Brats, German Potato Salad, and fresh watermelon.
 
We had a huge late lunch with the extended family at my parents today:

Sausage
Burgers
Chicken
Hot dogs
BBQ baked beans
Spinach/broccoli salad
Watermelon

so I'm skipping dinner. Hubby is on his own;)


They're all coming to our house tomorrow so I need to get planning!
 
Got back from a long weekend with my mom today, so I did no cooking at all over the weekend :woohoo:

Here's my menu for the next week:

Tuesday: French toast and sausage (a do-over from last week)

Wednesday: Family cookout for my nieces birthday

Thursday: Spaghetti and garlic toast

Friday: Hot dogs and baked fries **

Saturday: Chicken tacos **

Sunday: Chicken kabobs, lemon rice

Monday: Brats, pasta salad

Tuesday: Hamburgers, mac & cheese

Wednesday: Grilled chicken, scalloped potatoes

**If we decide to go to Cedar Point on Saturday afternoon, we'll take our small grill and cook out hot dogs for dinner with chips at the park. I will then move chicken tacos to Friday for dinner instead of Saturday.
 
I hope everyone had a wonderful 4th yesterday!
Friday we had my dh's grams birthday party so we ate there
Saturday was gktw fundraiser in Fitchburg so we ate a lot there
Sunday was my moms annual lobster cook out
Yesterday we decided to go to the cape cod at the last minute so we ate at the pancake man and had a great time!
Today my mom invited us over for hot dogs and hamburgers

We have to go food shopping today to stock up I will post my menu later.
