Please please post the recipe for the sushi roll:hug:

So sorry I am just going back though to update the recipe index and I found u had asked for this

I make the rice by cooking long grain white rice according to the directions after it cools for a little while I mix 1tsp sugar and rice wine vinegar together and heat for 10 seconds and then pour over rice and fluff in. ( that's per 1 cup of rice) let cool completely while cooling put a wet cloth over top so the rice does not dry out
After it's cool itake a sheet of seaweed paper and wet my hands before grabing a handful of rice and spread onto sea weed.
I then add strips of salmon and avocado and then roll and cut it's yummy and easy

I don't follow a recipe, I just bake some chicken (I did about a lb) then chop it up, add chopped celery (3 stalks), chopped onion (I used 1/2), salt, pepper, mayo and a glob of sour cream, but the greek yogurt idea that someone posted might be a nice touch too.

I do love this recipe though:

It's just my 11 y/o daughter doesn't really, and I was trying to do simple, easy and cheap

LattNJ, Thank you so much for your recipe too! I think we will be having alot of chicken salad this summer LOL

Long weekend is over...and boy was it long. DH was supposed to fly in from mission trip Saturday night, but due to flight delays did not make it home until Sunday afternoon. :headache:

We had meat fest on the grill yesterday. Hamburgers, hotdogs, chicken and ribs. I made potato salad, pasta salad, corn on the cob, green beans, dip, apple pie and cupcakes. We will be living off of this for several days and I won't be turning on the oven and heating up the house till at least Friday!!

Well, I left my purse at my parents' house yesterday so dinner will have to come out of the fridge/freezer/pantry. My brother and his family will be with us for the next few days.

Tonight I'm thinking:
Hopping John (black-eyed peas with rice)
Fried green tomatoes with remoulade dressing
Some other veggie (Hoping I can get someone to run to the produce stand!)

Luckily, this week will be really easy. We will not be having to do much cooking due to a special event we are having to attend, so we will be eating out or food cooked by family/friends. It will be nice to have a short break!

Tonight we are having leftovers. I hadn't planned on being home tonight, however the boyfriend is being difficult and so I decided I would just come home early.

Wednesday will be Country Style Ribs, potatoes, and rolls.

My DH and I are trying to eat at home more, and I just found this thread. What a great idea!

In the past few weeks, we've gone from eating out for breakfast, lunch, and dinner every day to eating out twice a week. We do take-out on Friday nights, so we can hang out with friends for Game Night, and we usually go out to dinner with my parents every Saturday night. We can already tell a HUGE difference in the amount of money we're spending on food each week.

This week's menu:

Saturday - Spaghetti with Italian sausage and salad (Parents out of town)
Sunday - Jalapeno and cheese stuffed shrimp, potatoes, and salad
Monday - 4th of July party w/friends, took strawberry pretzel salad
Tuesday - Bacon, eggs, home fries, and biscuits
Wednesday - Grilled chicken, grilled corn, and grilled zucchini
Thursday - Shrimp scampi, garlic bread, and salad
Friday - Take-out

My menu for the week:

Monday
hamburger casserole, caesar salad

Tuesday
garlic marinated chicken, baked potatoes, strawberry spinach salad

Wednesday
Dr. Pepper pulled pork sandwiches, corn, coleslaw, chocolate cream pie

Thursday
BBQ meatballs, homemade mac n cheese, brocolli salad

Friday
Grilled steak (GREAT sale this week), leftover mac n cheese, grilled veggies (zuchini, mushrooms, peppers)

Saturday
Steak fajitas with all the fixings, pico de galo and chips, mexican rice.

Sunday
Grilled chicken, asian noodle salad, strawberry shortcake cake

We have three more people here than I planned for so we ended up eating Chinese take-out.

I think we'll BBQ tomorrow-brisket, grilled squash, zucchini and tomatoes and maybe a potato salad.

Change of plans last night. DH found a car to buy so I had to leave work to take the title for his trade-in and sign paperwork. Since we didn't get home until late, I picked up sammies from Subway (3 ft-longs for $12).

Dinner Tonight:

French Toast with fresh Strawberries
Bacon

Sounds yummy T. :cool1:

Grilling for the hordes tonight:

Brisket
Corn
Yellow squash
Zucchini
Tomatoes
Purple onion
Pineapple

I'll throw together a pasta salad to go with. I'm glad that's all the inside cooking I'll have to do. You could drink the air here today.

Tonight I am making sloppy joes also the girls andi made rice krispies treats
Tomorrow I am making chicken with rice and veggies and roles
Friday pizza
Saturday hot dogs
Sunday Mac and cheese

Last night I made breaded Tilapia fish sandwiches breaded and fried stove top. Tonight is going to be something I can grill on the indoor grill but I am not sure on the details yet. Tomorrow I get a day off of cooking because I am going to the Katy Perry concert. Friday I will have a hungry house of tweens who will probably eat me out of house and home in one night. I am going to the store to stock up tomorrow:thumbsup2

Tonight is tilapia, Parmesan and feta mashed potatoes, and mushrooms cooked in white wine sauce. Odd combination because I'm cleaning out for vacation.

Well we changed our minds about tonight's dinner. Our air conditioning is acting up so it is too hot to cook. We instead stuck with sandwiches, chips, and fresh fruit. I am proud of myself for not automatically going out or ordering in.

We had Shrimp Po Boys tonight, yum yum yum! :worship:

This week has been a crazy one, nothing went according to plan :headache: so I am looking back through all the post on here and making up next weeks menu!

thanks everyone for such great ideas :goodvibes
