Our menu for the next 10 or so days:

Sunday: burgers on the grill (our first grill out of the season :thumbsup2), baked beans, watermelon

Monday: Stuffed cabbage, crusty bread

Tuesday: Chicken lettuce wraps, rice

Wednesday: Chicken enchiladas, black beans (a re-do from our last menu)

Thursday: Breakfast for dinner - scrambled eggs, sausage links, hashbrowns, muffins

Friday: Sloppy joes, oven fries

Sat & Sun: Family picnics both days

Monday: Homemade pizza (for now unless there's a bbq or something else that pops up)

Tuesday: Spaghetti, garlic toast, salad

Wednesday: BBQ chicken wraps, pasta salad
 
DH and I went to see POTC 4 over the weekend...great movie! Did anyone see the trailer for the new Muppets movie? It CRACKED ME UP how they set that trailer up! Truly brilliant! :lmao:

Headed to my mom and dad's for the weekend...no cooking for 4 days!!!:cool1:
 
I loved the trailer for the new Muppet Movie and can not wait until it comes out. I am a huge Muppet fan.

Tonight we are having pulled chicken sandwiches with sweet potato fries.
 
My son and his wife are moving to our town. They closed on the house last weekend, and now my son is completely renovating the kitchen before they move in. My daughter-in-law and grandkids are up here for the weekend, though, and eating at my house since they have no kitchen! So I'm cooking for nine instead of three (and yesterday I had four more family members over) and having to make everything much less spicy than I usually would to suit the four little ones.

Yesterday we had quesadillas (made with tortillas, mashed cooked sweet potatoes, spinach, and vegan cheese), three-bean salad, green salad with chopped apples, roasted asparagus, a plate of veggies and hummus to dip and a platter of fruit (strawberries, blackberries, raspberries and watermelon). For dessert, we had peanut butter balls dipped in chocolate, with Mickey Mouse ears added using dark chocolate wafers. (My daughter made these. They were very cute!)

Today I am making a simple vegan spaghetti sauce to serve over whole wheat pasta. I've made up trays of veggies and dip again, and another fruit platter (kiwi, grapes and the rest of the watermelon). There's also some leftover bean salad that I will put out if anyone wants some. Dessert will be store-bought dark chocolate mint wafers because I'm too busy to bake anything!

Oh, I forgot the other thing we had yesterday - something else my daughter made. It was steamed broccoli topped with avocado pesto. The pesto is made with avocado, a lot of parsley, garlic and a little oil, salt and lime juice in a blender. It's really good! The kids loved it, even Xavier who isn't a big avocado fan normally. You can't really taste the avocado.

Glad to see everyone is doing great here. I still have to go to the grocery store today. Yesterday we had pulled pork. Tonight spaghetti and sauce
 
One of my co-workers is leaving Saturday for their first Disney vacation ever...she is married with two small children. I am so happy for her, but so sad for myself, I wanna go! :sad1:

The rest of this week in no particular order will be:

- Bacon, egg, and cheese muffin with fruit and yogurt

- Thai Chili (lime based) Salmon Fillets with rice and something

- Low fat bean burrito with a salad

We had a rotisserie chicken and veggies on Sunday night, Monday night we had chicken enchiladas topped with lettuce, tomato and sour cream. Cookies for dessert.
 
We will be cheating and going out to lunch today hubby has an appointment at the VA with Neuro and we need to visit his mom in the hospital so we will be out most of the afternoon. We won't get home until dinner time so I hope we can stick to our guns and not go out tonight too. Dinner tonight should be bacon wrapped filets/portobella mushrooms, cheesy spinach and augratin potatoes from a box (don't have time to make from scratch).
The rest of my planned meals:
Black beans and rice (from last weeks meal plans)
stroganoff with turkey meatballs/button mushrooms and green beans
taco night
I diden't do a full grocery run because today is so busy so that's all I've got for now.
 
Tonight we are having puffy pancakes with sausage and fruit. I have a meeting at 7pm so it is a quick and easy dish to make.
 
Here's my budget-busting meal plan for the week (for those of you that read my "I need a shoulder to cry on" post...

Last night we had pizza delivery (not included in our grocery budget, we have a separate one for eating out).

Tonight (Tuesday)- Swedish Meatballs over Noodles with fresh steamed green beans. (the meatballs have been in the freezer for a while so it was time to gobble them up! I also already had the noodles, so all I needed was some chicken broth and fresh green beans)

Wednesday- NY strip steaks with baked sweet potatoes and a fresh, green organic salad with cucumbers and tomatoes.

Thursday- BBQ sandwiches, collard greens, broccoli in cheese sauce and potato salad. (BBQ and collards will be from our local BBQ shop because we're craving it. I had broccoli in the freezer but needed some other frozen veggies and wanted to use a coupon, so I got some broccoli with cheese sauce to surprise DH- I don't like cheese and he doesn't like collard greens so it works out... I DID have buns, eggs and celery though... so I just needed some potatoes for the salad.)

Friday- Garlic Parmesan Chicken over Noodles (I needed noodles since we'll use up the other bag tonight, and I needed peas. I will also need a rotisserie chicken. I'll use half for this recipe and put the rest in the freezer for another meal.)

Saturday- Taco party with 20-30 guests. Shredded chicken and seasoned beef, spanish rice*, black beans*, refried beans, shredded lettuce*, diced tomatoes*, salsa, homemade guacamole*, diced red onion, shredded cheese, frozen margaritas* and sour cream. (*Indicates I still need to buy it; Guests will bring chips and drinks)

Sunday- Butternut Squash/Wild Rice/Sausage Soup and some crusty bread. I needed everything for this... except the bread. I have a Pillsbury French loaf in the fridge.

Monday- Tomato baked eggs over polenta (Needed everything but the eggs)

Tuesday- Low Country Boil (shrimp, kielbasa, corn on the cob and potatoes... I'm drooling thinking about it)

SOOOOO.... next week I need to dine some cheaper meals to fill our bellies with. :-) One day will surely be to eat some of the soup that is stocked in our freezer... either Wild Rice soup or Chicken Tortilla...
 
Sunday: Chicken fried rice (My first time making this and it was good)
Monday: Chicken nuggets, fries and veggies
Tuesday: Chicken quesadillas and fruit

Gotta figure out the rest of the week. I've been trying to incorporate some new dinners into our menu but my teenage son hasn't been too excited about the new items. :confused3
 
If I don't get to the store we're in big trouble.
We are in that busy busy school year end events time. Every night this week we have something to attend - and the beginning of next week too!

I'm resisting the urge to eat out. Tonite it's going to be homemade pizza- That's easy and I'll make 2 one for those that need to eat early and one for those of us that can eat after the show tonite.

I'm going to break out the crock pot I suppose- trying some crock pot ribs.
Oh and I made the rice cooker mac and cheese yesterday and it was YUMMY! and so easy. (it does have heavy cream in it -- so I guess how could it not be yummy)
 
We had turkey picnic wraps last night. They were made with Garden Spinach Herb Mission Wraps. Really good. I really like the spread made with mayonnaise and taco seasoning mix. Basically it was the wrap, the spread, shredded Colby cheese, thin sliced deli turkey, lettuce, and thin sliced tomatoes. Roll and cut in half. Delicious.

Tonight we're having low fat cheesy beef and bean burritos. I already made the beef and bean mixture. All I have to do is put it together and heat tonight. Yea! :)
 
Last night I made the Pepperoni Pesto Wraps...BIG HIT with the family! :thumbsup2 Basically you just spread a wrap with a thin layer of pesto, add a layer of mozz cheese and a layer of pepperoni slices. Roll them up and put them in a 9x13 pan, cover with foil and back @350 for 25 minutes. They were delicious and easy!!!

I originally had chicken and dumplings on my menu from last week, but I'm just not feeling it.

Tonight we are probably going to eat the community dinner at the church, I'm contributing 2 packages of hot dogs that I got on sale for 0.97 each on clearance one day and froze

Then, in no particular order:

Fried chicken, corn, salad
steak, rice-a-roni, broccoli
beef with snow peas stir fry, rice (make extra rice for chicken fried rice)
chicken wings, chicken fried rice
homemade beef barley soup and grilled cheese sandwiches
chicken parmigiana with angel hair pasta
homemade pizza
 
I still haven't made a weekly menu :sad2:

Monday was jambalaya from the freezer with white beans and spinach.

Last night we grilled pork chops and had baked potatoes and salad.

Tonight will be hamburger steak smothered in onions, pink-eye field peas and rice.

No idea after that, I'm guessing leftover chili and then tilapia in some form or another. Got some carrots that need using up too.

DD is coming into town on Saturday with one of her friends from school for Bayou Country Superfest. I'll probably make something for them to have when they come in that night-right now I'm thinking gumbo in the crock-pot.

Tonight we are having ham and scalloped potatoes with some kind of veggie. I am not sure yet as I need to see what we have in the fridge/freezer.
