Eat at home

DH and I both had rough days at work yesterday and were very tired...so no "Eat at Home" for us last night, we hit a buffet with the kiddos. :guilty:

Dinner tonight:

Grilled Italian Chicken....VERY marinated since it has been in the fridge since yesterday morning. :rotfl:
Baked Potatoes
Caesar Salad

Kids are staying with in-laws, so DH and I are going to see the new Pirates movie after dinner. popcorn::
 
We splurged on pizza Tuesday night but have been doing well since. Wednesday was salad, deviled eggs and whole wheat rolls. Thursday was Taco night and today we will be having a baked potato bar. The rest of our planned meals in no particular order:
Turkey burgers/Tuna cake burgers w/veggies and mashed potatos
Spaghetti and garlic bread
Black beans and rice w/veggies
Hotdogs/Black Bean Burgers on a hotdog bun w/veggies
 

Today I went and saw POTC 4 and loved it. I then made us dinner at my grandma's house. My cousin and I cooked chicken pot pie with sliced watermelon.
 
We want to see POTC-I have a Groupon for our movie theatre too :)

Last night our DS and one of his co-workers stopped by after graduation-the male teachers worked crowd control-and ate. It was just chili-mac, muffins and salad though. No pictures-I felt funny dragging the camera out in front of DS's friend :blush:
 
Tonight we are having Digiorno pepperoni pizza with watermelon and carrot sticks. I got one of their new boxed meals so we will have cookies for dessert.
 
I do not think I will be buying frozen Digiorno pizza again. It was okay but I like Newman's Own frozen pizza better or even my own.

Tonight we are having baked potatoes topped with Cincinnati chili.
 
Crazy week coming up here. I am going to attempt to stick with eat at home, but I have a feeling by Friday I will be desperate!

Sunday- Salmon, roasted red potatoes, corn on the cob
Monday- black bean quesadilla's, cucumber/carrot sticks, applesauce
Tuesday-Chicken and dumplings
Wednesday-Chicken tettrazini, green beans, applesauce
Thursday-Tuna melts, carrot/cucumber sticks, apple slices
Friday- Probably begging for mercy and eating out!
 
Does anyone have a good chicken parmesan recipe that they want to share?

For Chicken Parm I use 1 cup Contadina Italian bread crumbs and about 1/4 cup Kraft Parm sprinkle cheese mixed together. I use one boneless chicken breast per person. I use 1/2 cup milk and egg mixed together to dip the chicken breast in. Dip each chicken breast in the egg mixture and then in the bread crumbs. Bake in a 375 degree oven about 30-40minutes til no longer pink inside. Remove from oven and add a spoonful of speghetti sauce to each breast and a piece of parm cheese to the top of each. Bake an additional 5 minutes or until cheese is bubbly.

Last night was leftovers from the apparently bottomless bowl of chili-mac.

I found strawberries for $1/pkg at WalMart today so I'm having strawberries for dinner :-)

Hubby can't eat them so he's on his own!

Chicken cutlet- pounded thin. Or not whatever you like

One egg beaten with fresh pepper mixed in

Bread crumb mixture(I like 4C seasoned) plus Garlic Powder, More pepper(we like it a little spicy) and a heaping handful of grated Parm.

Then dip and dip and fry in hot olive oil. you are just browning here not cooking through that'll happen in the oven.

Drain on a paper towel. Put in baking sheet- top with sauce and cheese(I make my own sauce) Bake at 350 for about 30 minutes.
 
Any one know what to do with a radish? I've got about 10 of them. But they're bigger than the little red ones. I think they're the chinese white radish, but not the really long ones, just small bulbs about the size of a onion.

My plan for tonight is chicken breasts, green beans, and corn.
 
It is hard to do but we eat at home 6 nights out of the week. My husband works FT and I work PT and of course there is a TON to do when we get home but we have made dining at home and together a priority. There is nothing like sitting down and eating real food. I have a problem with fast food and don't usually allow it in my house LOL. Sadly my sons school has McDonalds for lunch once a week and he does buy that otherwise he wouldn't be gettting it.

I also make my husbands, sons and my own breakfast and lunches daily. Believe me mama is tired at the end of the day BUT it makes me feel better that we are all eating real food and not processed stuff. Also, it does save money! Which is ALWAYS a plus.
