The Monday and Wednesday recipes, as it happens, are both from a cookbook called "Get Healthy, Go Vegan."
The Trinidad-style is the style of the whole recipe, not a kind of cauliflower. It's cauliflower, peas, onions and sweet potatoes cooked together in a sauce with plenty of spices.
The Tofu scramble is from Vegan Brunch, and the Banana-Ginger pancakes are from Get Health, Go Vegan.
The oven-baked onion rings and baked falafel recipes are from Appetite for Reduction.
The Chickpea-Spinach Curry is a recipe we've been making for years - I will have to ask my daughter where she got it, as I think she started it.
My daughter has a great vegan blog that includes quite a few recipes - search for veganculinarycrusade. But we do have a good collection of cookbooks too!
