The Monday and Wednesday recipes, as it happens, are both from a cookbook called "Get Healthy, Go Vegan."

The Trinidad-style is the style of the whole recipe, not a kind of cauliflower. It's cauliflower, peas, onions and sweet potatoes cooked together in a sauce with plenty of spices.

The Tofu scramble is from Vegan Brunch, and the Banana-Ginger pancakes are from Get Health, Go Vegan.

The oven-baked onion rings and baked falafel recipes are from Appetite for Reduction.

The Chickpea-Spinach Curry is a recipe we've been making for years - I will have to ask my daughter where she got it, as I think she started it.

My daughter has a great vegan blog that includes quite a few recipes - search for veganculinarycrusade. But we do have a good collection of cookbooks too!

Well tonight could have been a disaster but I saved the day:rotfl2: I was grilling chicken for the first time and what should happen the propane runs out mid way through:scared1:But I pre heated the oven and we ate the chicken I am so proud that we did not run for the menus:rotfl:
 
We had rotisserie chicken, baked potatoes, and green beans on Thurs. night. Friday night I used the rest of the rotisserie chicken and made chicken enchiladas. They were really good with sour cream, lettuce, and diced tomato on top.

The kids loved dessert best though. I had two large brownies left from a batch I made. And I had some chocolate pudding on hand. So I got out my small dessert cups and layered brownie chunks and chocolate pudding in them. It was really good! I've used the last of a batch of cookies to make cookie crumbs and added them to ice cream and pudding too. We like that too. :)
 

I have a cold cut stromboli in the oven-I'm using left over cold cuts and a pizza dough I had on hand. DD#1 is sleeping over a friend's and dd#2 is having a late nite and ate at her friend's so just dh & me. I made something simple and its a easy fix for watching the hockey game.

I did my shopping this evening because after watching and reading all about extreme couponing, I wanted to ramp up my couponing. This was my best trip so far- spent $62 and saved $110! Right now I have beef marrow bones simmering on the stove with celery, onions & carrots for beef stock to freeze. I take the bones from the pot and then I freeze them as treats for my dog. I will use it as a base for lentil or barley soup.

Tomorrow we are going out to dinner for our anniversary so I will just make something simple for the kids. I am working on sunday so will be making sauce and lasagna in advance.

We had beer battered fish and fries tonight but I am making the meat for my tamale making day tomorrow. The house smells awesome!
 
Today we went over to my moms house for lunch and she treated us to take out the girls both wanted there leftovers for diner and I made pizza for everyone else

Tomorrow my mom is taking myself and the girls to the American girl doll store for brunch and then our church is hosting a worship event with dinner

Sunday is Easter for my husbands side and we are having brunch again then the girls are sleeping over my moms and my hubby is taking me out where to go:rolleyes1
 
Everyone is doing so well! This coming week is Spring Break so I spent a big more at the grocery store since we'll all be home every day. Although we do have several things coming up where we will be eating out!

Tonight- Dd/Dh are going on a date to Outback, then to see Cirque! I'll behave though and probably just do eggs and fruit at home!

Sunday- Roasted chicken, red potatoes, carrots and rolls
Monday- Chicken quesadilla's, fruit, carrot/celery sticks
Tuesday-Chicken tettrazini, green beans, watermelon, canteloupe
Wednesday- Tuna sandwiches, pears, watermelon, carrot sticks, chips
Thursday-"Use it or lose it" night! We are going out of town, so we will use up all the fresh fruits/veggies/deli meats/rolls etc...

Friday-Sunday- We will be at Myrtle Beach, so dinner out each night...Joes Crab Shack, Planet Hollywood and Margaritaville! Free breakfast at the resort though, and the room has a fridge so I'll be bringing lunch and snack items!
 
Here's what we have in store for the next few days:

Saturday: Baked garlic and herb marinated chicken, parmesean noodles, peaches

Sunday: Mostacholi bake, garlic bread and garden salad

Monday: Chicken Fajitas, sweet corn casserole

Tuesday: Meatloaf, baked potatoes, green beans

Wednesday: Crockpot chicken and rice, pears
 
Tonight I am trying a new recipe from Rachael Ray. It is for stir fried chicken paprikash. We love stir frys and we love paprikash so hopefully this one will be a winner. Here is the recipe of anyone is interested.

Just salads and rolls here tonight. We finally finished building our raised planting beds and are exhausted.
 
We're having cheeseburgers and tater tots tonight. Nothing fancy.

Well, I'm having a spicy black bean veggie burger and cheese sticks. But that's another story. :upsidedow
 
I wanted something good so bad Friday night but didn't want to go out and waste money. Went to Rouse's near my house and got their fresh French bread, their deli roast beef, potato chips, a tomato and small bag shredded lettuce, 6 pack Barq's root beer in bottles and their bakery cupcakes. Per meal cost about $3.33 per person. To eat that same meal out would
be about $15.00 per person at the least. (spent about $20 which will make 6 individual meals)
More saved for trips!
 
Tonite is a meat sauce from my current Bon Appetit magazine. Smells yummy.

The rest of the week will be light I think

Flank Steak and potatoes
Chicken thighs somehow
eggplant and leftovers from tonite sauce over pasta
Then I am at a loss. There wasn't much on sale this week as far as food goes at my store. I'll have to be creative. I am guessing Grilled cheese and soup one night and maybe a chicken pot pie?

Not sure what else yet . I have a big list of recipes now, just gonna look over and pick a few things for the rest of the week.

Hubby cooking tonight, very sweet of him, but I SWEAR im gonna smack him . He keeps asking where freaking things are and I have to get up and go get it for him as I am tired of yelling into the other room. UGHHH, he used to know where it all was. Since I became a SAHM, apparently he lost his mind ; )
. Ok rant over lol . He is just trying to be helpful. :love:
