Well we had a great weekend we ate at my moms on Saturday and had hot dogs on the grill now I am hooked on summer food this week

Tonight hamburgers with potato salad and or pasta salad
Tuesday hot dogs
Wednesday meatloaf
Thursday chicken on the grill
Friday pizza
Saturday church worship event we will be eating there.
 
Jealous of all the yummies at the Fest yesterday Jsmla lol.

Jazz fest is a few weeks away wooooo hoooo! Crawfish bread and soft shell crab poboys are screaming my name .
 
Last night we ate the rest of our grilled hotdogs and ate veggies with those.
Tonight: Ham, mashed potatoes, steamed brocolli, corn and biscuits
Tomorrow: Grilled chicken with sundry vegetables and salad
Wednesday: supper at church
Thursday: pulled BBQ pork sandwiches and baked beans with fruit salad
Friday: Left over pulled pork and whatever's left in the fridge!
 

Ok Food shopped so I am ready for the week+ some

Tonite will be pork chops, some type of potato, green beans

Tuesday- roast chicken baked potatoes, and corn

Wed.-Chicken and broccoli over rice

Thursday Chicken enchilladas
(boy that's a lot of chicken in a row. I think I'll shift wed. with tonite)

Friday- homemade pizza and calzones

Saturday bacon and tomato pasta homemade bread salad

Sunday- bacon for dinner I think>

DH is starting a night job tomorrow so our schedule will be a mess and eating is a bit uncertain. But that's the way I'm planning it all right now.
 
Spent $61 at Aldi Saturday for a family of 5:
(BTW- for us that is 3 meals a day: I pack breakfast and lunch for everyone)

Saturday:
Meatloaf
Roasted Potatoes
Garden Peas (from the freezer)
*Cinnamon Sugar Soft Pretzels

Sunday:
Jambalaya with Smoked Sausage
Roasted Corn

Monday:
Ham and Cheese Omelettes (diced ham left from last week)
Toast

Tuesday:
Corn Chowder
Dinner Rolls
* Chocolate Pudding with Cool Whip

Wednesday:
BBQ Chicken and Black Bean Burritos
Chips and Salsa

Thursday:
Chicken Parm (chicken patties and homemade sauce from the freezer)
Steamed Broccoli
Garlic Toast
*Orange Jello with Cool Whip

Friday:
Chili Dogs
Chips
 
last night we ended up just doing leftovers for dinner as we were both busy cleaning to remember to put the french toast together in time. I am however making it for dinner tonight.
 
Last night it was leftover spaghetti bake. Tonight it will be leftovers again: either spaghetti bake or red beans and rice.

Tomorrow night I am planning on cooking a frozen family size meal I bought a Wal-mart. Can't remember what it was exactly but it had noodles in it.
 
For the taco bowls you can heat about a inch or two of oil in a frying pan and place a flour tortilla in the oil. It will begin to puff up but use a fork or knife to release the steam. It takes only about 1-2 minutes a side. Place over a upside down bowl or can with paper towel over it so the oil can drain. It should take the shape of the bowl. If you don't want to fry your own, Azteca makes a oven kit for the tortillas. I also make a knock off of Taco Bells Mexican Pizzas with the fried tortillas. I will have to make it and post it on my blog.
 
Tonight we are going out to dinner with my grandma. She has a chammps giftcard burning a hole in her pocket.
 

Saw your Nutella wontons : ) my child is obsessed with Nutella right now , think Ill whip these up for him. We went camping last weekend and I did banana nutella grilled desert sandwiches . Bobby Flay showed me how ; ) . Covered them with powder sugar after. Thinking I could do a stuffed french toast with it too .. or nutella and strawberry . Yummy !!

Nutella is awesome! My oldest was making Nutella toast all week! A stuffed french toast sounds good too! I saw something on tv a few years back about making pb and J stuffed french toasts. She cut the crusts off the bread and put pb and j half and half on the bread and then rolled it up. She dunked it in egg and then fried them in a frying pan. I tried them and they were delicious! But I still like pb on toast:rotfl:
 
Last night we went out to Chammps with my Grandma. I had the chicken satay and it was yummy.

Tonight we are doing sloppy joes with chips and fruit salad.

Last night, I skipped cooking , hubby and opened a bottle of red and sat of the back porch watching the kiddo play in the sprinkler . By the time it was time to eat , I wasnt in the mood UGHHH lol, so we had po boys delivered. Oh well

Tonight is going to be the honey chili chicken and left over spanish rice from Tuesday night and "fried" corn.

Tomorrow heading to the river in the late afternoon, for a bit of fishing and fun. Will pack tuna sandwiches and snacks .
 
My computer was blocking me from getting on this site for a while but here's what we're eating this week:

Monday we had Mushroom sauce (with porcini, cremini and button mushrooms) over spaghetti squash strands with a side of steamed broccoli. Very yummy. Banana-chocolate chip muffins for dessert.

Tuesday: Oven-baked onion rings (with a panko batter), baked homemade falafel, in whole wheat pita breads with homemade vegan tzatziki sauce, salad greens and cucumber slices.

Wednesday: Trinidad-style cauliflower, sweet potatoes, onions and peas. It's a bit like aloo gobi but has no curry powder in it - instead you have some jalapeno peppers along with cumin, coriander and cilantro. Very good. I mixed up some peanut butter cupcakes while it was simmering and we had those for dessert.

Thursday: tonight we are having Chickpea-spinach curry (a favourite in our family) (and this one DOES contain curry powder!) with a vegan coleslaw as a side dish.

Friday: We're doing a breakfast for dinner: tofu scramble (we make this with lots of veggies added) and banana-ginger pancakes.

Saturday: Black bean chili with vegan cornbread.

I appreciate the nudge this thread has given me towards more meal planning. We've always mostly eaten at home, but by planning out the recipes this way we're getting to try new recipes, shop only once a week, and make sure we have plenty of variety. No more last minute trying to figure out what I can throw together!

Where do you get your recipes from? All your meals sound delicious, especially Mon, Tues & Wed. What is Trinidad style cauliflower?
 
The Monday and Wednesday recipes, as it happens, are both from a cookbook called "Get Healthy, Go Vegan."

The Trinidad-style is the style of the whole recipe, not a kind of cauliflower. It's cauliflower, peas, onions and sweet potatoes cooked together in a sauce with plenty of spices.

The Tofu scramble is from Vegan Brunch, and the Banana-Ginger pancakes are from Get Health, Go Vegan.

The oven-baked onion rings and baked falafel recipes are from Appetite for Reduction.

The Chickpea-Spinach Curry is a recipe we've been making for years - I will have to ask my daughter where she got it, as I think she started it.

My daughter has a great vegan blog that includes quite a few recipes - search for veganculinarycrusade. But we do have a good collection of cookbooks too!
