Did you use Cottage cheese or cream cheese? I am dying to try it and I can't decide which to use.

I used cottage cheese and it was so creamy and yummy.

Tonight my uncle is bringing over pizza for dinner. I will add the last of the spinach for a salad and then I went to the pepperidge farm outlet and got a chocolate passion cake for $1 for desert.

Jumping in here, Hi everyone!

I'm getting ready to have my *big* shopping trip and do my monthly meal plan this weekend. It's really the only way to stay on budget and not go to the grocery store a million times - for me anyway! Anyway else do a monthly plan? I rarely stick to it all the time but it's handy to have a backup meal. :)

I do my big trip once every three weeks. I map out 4 or 5 meals per week and make my list. I also look through my coupons to help with my meal plans. The only time I go to the store between big trips is for milk and bread. I agree that this is the only way for me to stay on track. I go to the store with $300 cash (budget of $100 per week). I normally do not spend the entire $300 so I put the leftover amount into my Disney fund!

Tonight it was chicken and sausage gumbo....This is a great meal to make because it gives us plenty of leftovers.

Really wanted to go out tonight, chili's specifically but we stayed hoem and had tacos instead. Not quite the same but we had everythin o hand and saved us the $50.:thumbsup2

I used a Groupon tonight for a chili place called Chili Lili's. The service was really slow but the food was good. We paid $7.00 for the tip. The Groupon I got with my rewards dollars. Food porn ahead!
Buffallo chicken chili

Habenero and Texas Steak chili over cornbread

Here's last night's spaghetti and meatballs. There was a salad but hubby was NOT in the mood to wait while I fooled around with the camera! It wasn't a very exciting salad, just some romaine, croutons and Caesar dressing.

I'm hoping to grill chicken tonight but we haven't been doing very well with sticking to the menu.

My uncle ended up bringing salad with the pizza so tonight I am planning on having grilled chicken spinach salad.

I love tilapia but am waiting for it to go BOGO at the store. I use a breading called Louisiana seasoned fish fry for pan frying for frying magic if I am baking. Both have a kick to them. I love catfish too!
Good job with the pictures everyone! Speghetti and meatballs is my end of the week dishes. I have one DD that doesn't like it and the other one loves it.

I'm kind of meh with spaghetti too but DH loves it. Albertson's and Winn Dixie have bogo on the frozen tilapia pretty often around here. If I'm pan frying I soak it in a milk/lemon juice wash and dust it with flour, paprika and Tony Chachere's.

I LOVE spaghetti, especially with meatballs or Italian sausage... or with Chicken Parm. However, I can't have a lot of tomato sauce due to a medical issue so I don't get to have it often.

We went out for lunch today because we went and got our hair colored and cut. I will be eating left overs from that for dinner tonight which is awesome because I still have journal articles to read. UGH!

OHHH that looks yummy , now Im in the mood for meatballs and spaghetti . LOL

We had crawfish for lunch today just the three of us at home, so bought it already boiled. Enough left over for omelets in the am , and I will make hashbrowns with the left over taters.

Not sure what to do for dinner. Maybe shrimp casserole , or it could just be sandwiches .

I saw another Louisiana poster had gumbo yesterday. Getting to hot for me to cook it, but we pulled some out of the freezer last week, it was yummy and I still have one container left in freezer , which Ill pull out before the heat really sets in .

Guess I need to think about next weeks menu, haven't been doing very good about sticking to it though. Make a better effort this week.

just jumping in here, but since I got laid off from my job about 6 months ago, I figured the best way to contribute to the household finances was to save wherever I could, so I started by changing our eating habits. Instead of doing alot of quickie dinners I have been making more and more from scratch. With 4 kids we can't do small meals, so I've been trying to introduce at least 2 new meals a week.

Now that baseball season is started, I am using my crock pot more and more. My new favorite friend is the Taste Of Home Slow Cooker magazine. I have used at least a dozen different dinner recipes from it so far and they've all be fabulous!

Tonight is homemade cheeseburgers with crinkle cut french fries and apple slices and grapes for desert.

I plan my meals for the week, list every ingredient I need to make them, and go grocery shopping in my kitchen first, then make my shopping list from what remains on that list, adding in staples, cleaning products, etc. I do not buy extra stuff just to have on hand anymore unless its on sale and/or I have a coupon meaning i can get it dirt cheap. (Stuff like hamburger helper, extra canned goods, snacks, etc.) I make sure we have enough bread and sandwich stuff to last the week, cereal, pancake mix, eggs, etc. for breakfasts, and maybe one or two extra dinner meals like spaghetti or some version of a pasta or mexican dish in case I don't feel up to making what I had planned. I went from spending close to 130/week down to about 50-70 per week...and my pantry is alot easier to keep organized without all the extra random stuff..

Hi SFWife! I'm pretty new too! This is a nice friendly thread for keeping motivated. We're trying to stay out of the restaurants.

ilovejack02: We have leftovers! I'm having a hard time adjusting to just cooking for two. There was a good Groupon (or Living Social) for crawfish the other day. I almost got it but figured that we'd just end up spending $$$ on beer!

Grilling hamburgers, hotdogs and chicken today to use all weekend and Monday! Plus I found some pork loin on sale that I am going to butcher myself and make pulled pork for the rest of the week.

Today was leftover gumbo for lunch and dinner. I'm thinking we will have it tomorrow too. :)

Also, this afternoon I worked on my menus for the next 4 weeks and updated my grocery list so I will be ready for next weekends big shopping trip. :thumbsup2

Can you believe I skipped the beer today with the crawfish ? It was 11:30 am ; ) I saved the calories for a yummy daiquiri tonight, can't make mine at home as good as our local shop haha.

We're going to the French Quarter Festival today and hubby is driving so I think I'll have a yummy daiquiri for myself!

Last night's dinner:

BBQ chicken, baked potato and another boring salad.

I have to confess, I put my chicken in the fridge after I took the picture and just had some of DH's. Those things were Fred Flintstone sized!

Here is a pic of our dinner last night.

Tonight we are having turkey burgers with sweet potato fries.
