Well we did not get up in time to put the pork in the crock pot, we were up late going through boxes from my mom's craft room. So instead we are having some Campbell's Italian Style three cheese chicken soup I found in the freezer with rolls.
 
Well last month we had to cancel out Disney trip for December but now its back on! The only difference is my girls are not going to find out that we are going! So save save save!!!!:banana::banana:

This week
Monday- corn bread with chicken noodle soup plus a peach cobbler
Tuesday- pizza meatball subs
Wednesday- spaghetti with sauce plus pb&j muffins for dessert
Thursday pasta soup with grilled cheese
Friday-chicken Sheppard pie
Saturday- ham steaks

so far this month 4/7 days no eat out

Oh, sorry, benadryl head. I ate leftover split pea soup and 1/2 a chicken salad sandwich. Didn't feel like thinking of anything else.:rolleyes1
 

What a great thread. I can't believe I never stopped by here before. I've only read about 12 pages but I'm hooked. We have been eating out way to often latley and since DD and I stopped eating meat (except occasional fish) I am having a difficult time trying to come up with menus for the week. Tonight we had salmon/crab cakes with stuffed mushrooms, apple slices and ants on a log (the salmon/crab cakes were a new thing and I didn't know if all the kids would like them.)so I wanted some definate kid freindly things on the plate. I figured it wouldent be too terrible if my son (who hates mushrooms) only ate ants on a log and apple slices tonight. Luckily everyone loved them, so much so that I realized I needed to make more next time. Our meal plans for this week (in no particular order) are:
Biscuits and gravy w/scrambled eggs
Tuna Alfredo w/capers, apple slices
Hot Dogs (veggies on a hot dog bun for DD and I), salad
Veggie fried rice
Minestrone soup
I only have enough dinner ideas to last me until Saturday so I will probably go shopping Sat or Sun afternoon, hopefully with more ideas in hand.
 
We are on a TIGHT budget as hubby has been laid off 2 years and just back working part time. He has started making the BEST sugar free banana pudding. He mixes 2 boxes of the sf jello banana pudding. Layers his shallow pieplate with store brand (Walmart) vanilla wafers. Add some of the pudding mix, add a layer of sliced bananas...repeat and then add just a layer of vanilla wafers on top. Refrigerate a few hours and serve with fat free cool whip. It is so simple BUT so good!!!!
 
Last night was SUCH an economical meal and everyone loved it. I made Chinese pork fried rice with leftover pork, rice cooked in my homemade chicken broth, and tons of frozen veggies I got for .49 lb. We added soy sauce and Hoisin sauce and ate the entire pan;)

Today is Shrove Tuesday for us which is the last day of feasting (Mardi Gras) before Lent. So tonight is our traditional Shrove Tuesday dinner...
Pancakes with homemade warm blueberry sauce (berries I froze over the summer), sausage, and bacon.

Easy Blueberry Sauce (From AllRecipes) THE YUMMIEST!
1/2 cup sugar
1 tablespoon cornstarch
1/3 cup water
2 cups fresh or frozen blueberries

In a 2-qt. saucepan, combine sugar and cornstarch; gradually stir in water. Add blueberries; bring to a boil over medium heat, stirring constantly. Boil for 1 minute, stirring occasionally. Serve warm or cold over French toast, pancakes or waffles.

Today we are meeting with our mommies group and every week someone brings breakfast this week we are having chocolate chip and banana pancakes with a strawberry topping.

Since I see you like Tuna, I made this last week for the first time, my 8 yr old who swears he hates tuna , liked it .

Tuna cakes with creole Mustard
Easy Side: Cut 2 carrots and 2 yellow squash into very thin strips using a Y-shaped vegetable peeler. Sauté in 1 Tbsp. hot olive oil until vegetables are tender. Sprinkle with salt and pepper to taste.

Total: 36 minutes
Yield: Makes 8 servings
Ingredients

* 2 (12-oz.) cans solid white tuna in spring water, drained well*
* 1 1/4 cups Italian breadcrumbs
* 2 large eggs, lightly beaten
* 2 teaspoons lemon zest
* 2 teaspoons Dijon mustard
* 1 cup mayonnaise, divided
* 1 1/4 teaspoons Creole seasoning, divided
* 1/4 cup olive oil
* 1 teaspoon lemon juice

Preparation

1. Drain and rinse tuna. Place tuna and breadcrumbs in a large bowl; stir in eggs, lemon zest, mustard, 1/3 cup mayonnaise, and 1 tsp. Creole seasoning. Shape mixture into 8 (3-inch) patties.

2. Cook 4 patties in 2 Tbsp. hot oil in a large skillet over medium-high heat 2 to 3 minutes on each side or until golden; drain on paper towels. Repeat with remaining tuna cakes and oil.

3. Combine lemon juice and remaining 2/3 cup mayonnaise and 1/4 tsp. Creole seasoning. Serve with hot tuna cakes.

*5 (5-oz.) cans solid white tuna in spring water, drained well, may be substituted.


Lent starts tomorrow , so it is feast night tonight. : )

Traditionally it is Popeyes fried chicken , because we are sitting out at the parades , but rainy today so decided to stay home warm and cozy. I have a Popeyes quite close to me, but no need to spend money on eating out when I have all the ingredients on hand.

Homemade fried chicken/ red beans and rice and our last king cake of the season BOOOO. : (

Tonight we are having the pork and sweet potato casserole in the crock pot. We were missing a few ingredients so instead of it being bayou flavored which I wanted for Fat Tuesday, I added some apples and apple butter to it.
 
Change of plans tonite is going to be meatball subs with homemade sub rolls (I can't believe those babies worked!! and they smell gooood!)
 
Went grocery shopping today, and after coming home and getting my menus together, realized that I have enough for 16 dinners!!! Yea!! :)

This is how I make my Vanana pudding been doing this for years its a big hit durning the holidays.

Well, tonight was our first "picnic" night :goodvibes Hubby works from home today so he set the crockpot with an orange teriyaki chicken recipe from Not Your Mother's Slow Cooker Cookbook for Two http://search.barnesandnoble.com/Not-Your-Mothers-Slow-Cooker-Recipes-for-Two/Beth-Hensperger/e/9781558323414/?itm=2&USRI=not+your+mother%27s+slow+cooker+cookbook and packed it up with rice in a large bento box and tupperware, and we ate at the local McD's.

Got some weird looks, but since we purchased drinks and knew the management (one of the kids I've worked with at my job) no one gave us a hard time. Turned out pretty good, although somehow even in a crockpot he cooked those chicken past death... :rotfl:

Cheaper and better for us than fast food, although definitely more time consuming in planning and preparation...

We're waaay off again. I was doing pretty well with my "eat at home" at Disney World plan and only had one meal out with a friend. We used a restaurant.com gift certificate for that so it wasn't too bad.

Got a call on Monday afternoon that FIL is in the hospital and not doing well. He was diagnosed with Alzheimer's about 10 years ago so it's not unexpected but still....

Drove like mad all day yesterday and had two drive-thru meals on the way. No plan for the next few days, we'll have to see how things go with FIL :sad1:
