Eat at home

We have a ham in the freezer, so, tonight is:

Ham
Mashed potatoes
Corn
Bread and butter for the boys

Grandma is having grilled cheese and some grilled veggies.
 
OK, so I've been going through the pages and catching up, and getting all sorts of good ideas, and then my reality crashes back through and I'm :eek:

I'm working from noon until 9 at night at least three nights a week and my husband meets me for dinner, coming straight from HIS job. We have no break room at my workplace, just a small dorm fridge (freezer part broken and taped shut), and a microwave to share with three other people, and no quiet place to eat. My office doesn't work because something always interrupts, outside means either praying for nice weather or for someone not to find us... So we've been ever dependent on the local fast food establishments, much to my dismay...

HELP!!!! Any suggestions, solutions? I'm completely stuck at this point, and not seeing a way out of the cycle we're stuck in.

I was going to say picnic. Get in the car and go someplace to enjoy some peace and quiet. When you eat fast food do you eat it in the car? Or in the "restaurant"? If you are not opposed to car eating that's another choice.

That's tough though. Good luck. If you really want to do it you can. Start small aim for one night. then 2. then all 3.
Oh and we're having chicken wings tonite- I have no idea what I thought we would have last monday. I have tons of unused meats from this week so next week should be a breeze!

could u both pack a lunch bag with a salad and a sandwich and when he meets up with you you could go outside in the nice weather or is there a book store like barns and noble or a store with a cafeteria? You eat your diner in there?:confused3
 
So I went to diner at my dh's uncles house oh my:scared1: now I know why e only o there once every two years:rotfl: it's hard to explain but there family is very loud and we didn't eat unti 730 and normally my kids go to bed t 7 it all ended with two police cars and on ambulance. One of his kids had a scratchy face and thought she might have eaten something that he was allergic too. Everyone ok but wow you just ad to be there :rotfl::rotfl::rolleyes1

GOODNESS!! That sounds like some evening:confused3 Glad everyone is OK though.

Today we are having Pasta Alfredo with broccoli for Sunday Lunch after church and then tonight we are having grilled cheese and New England Clam Chowder.

I worked on my menus for the week this morning. I am so psyched next weekend we are invited out both Sat. & Sunday to different events so they will be no major cooking days for me...WOOHOO:banana:
 
It just DH and I now we are completely eating different than when the kids were living at home. Here's what we have been doing and we are finding extra money for other things (Disney)-Here what we have done so far.

* Sandwich night - from meatball subs to ham & cheese - with chips or some kind of cold salad on the side
* Bagged meal night - we like Macaroni Grill(in the freezer section) add a salad - or throw in some steamed broccoli or other veggies on the side
* Pasta night - with salad - garlic bread
* Steak and "Tato" night with steamed or grilled veggies
* Grilled or baked chicken with wild rice -
* Appetizer night - this is so fun - we get really creative - we have done crab stuff mushrooms, nacho's, rolled meat & cheese w - pickles & olives, potato skin, sliders - burgers, bbq Pork, chicken, crab cakes,
* Salad night - Endless choices
* Cockpot meal - Boston butt, pot roast, chicken.
* I make some kind of dessert or treat for each week.

We do eat out for date night, but with the money we have been saving we still are seeing extra $$$.

What we have done is look to see what is seasonal, and on sale(BOGO), keep a very well stocked pantry and freezer, I coupon which make this easy last week I spent 28 dollar and bought 87.00 dollars worth of pantry items, but I only buy things that we use, I do look ahead for the month or if we are planning to have guest. This takes a little planning which is well worth it for us.


I take my lunch to work, for DH this is not a option as he travels daily, But he does get reimbursed for lunch or any meal on the road. Which is great. When I say that I take my lunch this includes drinks and snacks so that I don't go to the vending machine to grab something we figured 50 to 60 dollars a week that we are saving
 
So went grocery shopping today- spent $87 (for a family of 6)

This week will be
Spaghetti and turkey balls
Chicken something mexican with tostones and rice
meatloaf muffins
chicken and dumplings(never made that this past week)
Meatball heros with hopefully left over turkey balls
Crispy chicken thighs? Maybe or maybe something else chicken
Breakfast fried rice
 
For a meal that looks expensive and difficult to fix, but isn't, I recommend Goat cheesed stuffed chicken breasts. It's a Cooking Light recipe, so under 300 calories per breast.

Stuffing is: 3 oz. goat cheese, 1 slice of bacon (cooked and crumbled) and a couple of green onions sliced. I used Hormel bacon pieces. Mix that together and cut a pocket in the side of 4 boneless skinless chicken breasts. Stuff the goat cheese mixture inside and use tooth picks to keep it closed.

Sear them on both sides, then put in the oven at 350 degrees for 15-20 minutes. Let stand for 5 minutes before serving.

I'm trying different recipes to keep us less likely to go out to eat since we're bored.

That's one of our favorites here too! Sometimes I will put blue cheese in instead of the feta.
 
Last night we had waffles and sausage instead of the pork and sweet potatoes which we will have tomorrow night.

Tonight we are going over to my grandma's for dinner.
 
Last night I put on split pea soup, after dinner. Had a bowl for lunch and will have some for dinner also! Also going to grill some veggies. Probably zucchini and asparagus!:thumbsup2
 
My mom bought a new cookbook that I borrowed, and I got almost 2 full weeks worth of new recipes from it!! Here's what I have planned:

*Jambalaya with sausage, chicken, and shrimp (crockpot), salad
*Sloppy Joe Supper(crockpot). It has shredded hashbrown potatoes in it so it sounds pretty intersting. Veggie of some sort.
*Nacho cheese beef casserole
*Bavarian Meatball subs (crockpot)
*Seafood bisque, salad
*Crockpot enchiladas, spanish rice
*bratwurst (crockpot), sweet potato fries
*Almond Chicken, veggies, crescent rolls
*Chili cheese dog casserole, green beans
*Meatloaf burgers (crockpot), parmasean fries
*Brat and Tot casserole (bratwurst and tater tots), veggie or salad
*turkey sloppy joes (crockpot), corn on the cob
*taco noodle casserole
*garlic pasta with chicken and shrimp, french bread, veggie
*pizza casserole, spinach salad
 
I just booked our trip this weekend so I feel I have a lot of catching up to do budget-wise. I know the biggest drain on my budget is eating out so I'm very interested in this thread. I work full-time now but used to be the Queen of Frugal when I was a stay-at-home mom. I need to refresh my memory on how to pinch pennies 'til they scream.

Tonight I'm making bread in the breadmaker and I have some pre-made meatballs I got from Angel Food Ministries a while back so it's spaghetti and meatballs for us! I have to plan the rest of the week's meals today.

My biggest challenge is that I'm a new vegetarian but the kids eat meat so I'm trying to get creative with some meals that will please all of us.

mm sounds yummy! we do something similar with Boursin cheese- but I love the bacon!! I'm trying it.
 
Well last month we had to cancel out Disney trip for December but now its back on! The only difference is my girls are not going to find out that we are going! So save save save!!!!:banana::banana:

This week
Monday- corn bread with chicken noodle soup plus a peach cobbler
Tuesday- pizza meatball subs
Wednesday- spaghetti with sauce plus pb&j muffins for dessert
Thursday pasta soup with grilled cheese
Friday-chicken Sheppard pie
Saturday- ham steaks

so far this month 4/7 days no eat out
