had to get creative last night.

I stuck to my menu - pizza pockets, which are meant to be like mini calzones. You are supposed to put the filling (turkey sausage & spiniach) in triangles made of pillsbury pizza crust. Well, I forgot to buy the crust or something cause I couldn't find it in the fridge. BUT I did find pillsbury croissant rolls, so I made a ring of those, overlapping the short ends of the triangle and put down the filling and rolled the croissants around the filling and served maranaria sauce on the side for dipping.

phew - it came out just fine without having to make an emergency trip to the store.

This cooking at home is dramatic business.

That's a great substitution! I love getting creative with pantry/fridge items over running out to the store.
 
I looked in the first post directory for this recipe but didn't see it listed. I'd love to try the chicken and dumplings in the crockpot, but I can't find it here. Can anyone show me the way please? :)
 
Sunday night- Turkey Casserole with stuffing
Monday- Baked Ziti w/homemade bread
Tuesday- leftovers of the above!

That is as far as I have gotten....we are snowed in so we couldn't go out if we wanted to!

Being snowed in forced me to get the bread maker out again and I have this thing DOWN! I am planning to make bread now!

Of course, we are also out of eggs and running low on milk now.....not good.
 

Tonight is a healthy Enchilada casserole.

Brown one lb lean ground turkey.
Make 2 1/2 cups brown rice.
One Large can Enchildada Sauce
Fat Free Cheese
Mission Low Carb High Fiber Tortillas.

Layer everything in a casserole dish just like you are making a lasagna. Can also add black olives, jalapenos, etc..

Finish the top off with the rest of the sauce and grated fat free cheddar.
Kids love it amd it is low calorie and healthy while also being yummy.

Just heat till cheese is melted in 350 degree oven.
 
Since it is cold and snowy here today we decided to defrost some chicken soup from the freezer for dinner tonight. We will have some pillsbury simply rustic french bread with it.

Monday- (last night) nachos
Tuesday- crock pot creamy chicken with stuffing and peas
Wednesday- spaghetti with garlic sticks
Thursday- Date night out for my birthday! :woohoo: Boys- grilled cheese, hot dogs, and whatever else I find
Friday- crock pot sausage and potato casserole
Saturday- baked chicken, pasta alfredo and a veggie
Sunday- hot dogs, mac & cheese and broccoli
 
We had speghetti and meatballs with garlic toast tonight. We are getting our second round of lake effect snow today:scared1:

My oldest DD turns 17 on Friday so we will head out to eat that night. After being snowed/iced in and the eat at home challenge I am SO looking forward to someone else cooking for a change!

lillygator - I use the Pepperidge Farm stuffing in the blue bag with chicken broth. It only takes about 5 minutes to make and is SO good.
 
This week's menu:
Sunday: Chicken pot pie ( An unexpected treat dropped off by my aunt)
Monday: Stuffed hot dog casserole
Tuesday: Spaghetti
Wednesday: Hamburger Stroganoff Crepes
Thursday: Homemade Pizza
Friday: Tuna Casserole
Saturday: Undecided, depends who will actually be home for dinner.

Happy to report no fast food since New Year's Eve. A major milestone in this house!

I've been posting over on the Jan No Buy and since we are definately not eating out for awhile I wanted to motivate myself by posting our menus. It helps me focus and there are such good ideas here when I get stuck.

1/8 grilled burgers and oven fries yep

1/9 chicken, wild rice, broccoli yep

1/10 bean soup yep

had to enter free pizza night!! dh manages a pizza store and every now and then we get the mistakes from the night before. So today it was pizza and salad!

1/12 beef stroganoff, veggies, rolls

1/13 fish night (cod, salmon) veggies, rice

1/14 chili

1/15 bbq chicken, potato salad
 
As I look over everyone's menus, I can't help noticing they are short on veggies and fruit. We really try to veggie up at this time of year-meals with all veggies rather than carbs or at least veggies that are carbed/beans, corn, peas, baked potatoes. I'm cutting white flour from our diets-pasta, bread, fillers...not the cheapest way to eat in the short run but hoping there is benefit on the other side as we grow older.

We always have a veggie with dinner. I do not list it in my menu planning sometimes because I don't decide until I get to the store and see what look good. I like snacking on fruit and having it with lunch rather than dinner.

We usually have a couple of veggies with dinner too but I didn't list them. It all depends on what we are in the mood for or what was on sale or looked good at the store.

We always have some sort of fruit on hand. Lately we have been eating clementines like crazy - going through 5 crates of them a week. :scared1: That wasn't too bad when I could find them on sale for $3.99 but now the prices have skyrocketed to $6.99-$8.99 so our clementine days are over for the year. DS3 has a banana every day with breakfast so we always have those as well.

Hoping DH gets home in time to cook on the grill tonight since I really want to do shrimp skewers for dinner (shrimp, cherry tomatoes, zucchini chunks, bell peppers) with baked potatoes and corn. It gets dark here SO early though and there is no light out on the deck area where the grill is. I offered to cook them myself on the grill but DH doesn't want me touching his prized grill. :rolleyes1 Works for me! I didn't want to cook tonight anyway.

I always notice that too. As a vegan, I really plan our meals around vegetables - what's good, what's on sale, what needs to be used up. I'm sure people are eating more vegetables but just not mentioning them in their menus. Sometimes I wonder though - like with the breakfast for dinner items - do you have some veggies with that, too?
