I have had a hard, hard time getting my act together. :sad2: We had been living in a hotel for 3 months, now are in our house, but I STILL cannot seem to get dinner on the table every night! Any glitch in the schedule sends us to a restaraunt.

Yesterday I ended up at the Vet office with my injured doggie for 2 hours. I DID manage to get dinner finished! I had marinated the meat earlier in the day, a lifesaver.

I decided I need more easy options available. I went to the store and bought tuna, noodles, cream of mushroom soup, spaghetti, sauce, french bread, tortillas, cheese, frozen meatballs, a bunch of meat, several bags of frozen veggies, hot pockets on a big sale, PLUS everything I need for this weeks meals! My freezer still isn't full, I love my knew fridge!

Hopefully we are back on track! That being said, we will go to Pizza Hut tonight, DS10 earned a Book It pizza and is dying to go!

Last night we had Sesame Beef and veg fried noodles

Rest of the week
*Pioneer Woman's chicken and noodles
*mac-n-cheese with ham
*chicken fried rice
*pork roast

I am wrapping up this week once a month grocery shopping and once a month menu planning. I will say I LOVED it. I sat down four weeks ago and did a menu for the whole four weeks working around activities, days away from home etc etc. I than grocery shopped for the whole month. It enabled me to take advantage of what I had in my pantry and freezer and add in the extras. I figured everything including kids lunches, fresh fruit and snacks. It worked fabulous and I cut this months food $$$ in half!

We are actually eating better since I started once a month shopping and it has reduced the stress of
"whats for dinner?".

Love the part about eating better.

Would you share your monthly menu to help a newby get started with ideas?
thank you!

Tonight's lemon chicken spaghetti soup is simmering on the stove top as we speak. I was trying to figure out something for dinner tomorrow night and happened to find a london broil frozen in the basement freezer. For some reason it was not on my list. So I brought it upstairs and have it thawing/marinating in the fridge for dinner tomorrow night.

Gonna try this again. Here's what's planned and already purchased (except what is * - this helps me with grocery shopping. You can ignore):

Monday: Had to visit MIL in hospital, so did not eat at home. Had KFC.
Tuesday: Meatloaf, lima beans, broccoli, bread.
Wednesday: Chicken Stir fry with rice
Thursday: Pot roast, potatoes, onions, carrots
Friday: Chili with crackers
Saturday: Lithuanian porkchops, potatoes, corn
Sunday: Ham casserole, peas, tossed salad

Monday: Spaghetti, garlic bread, flat beans
Tuesday: Scrambled eggs, bacon, toast, hashbrowns
Wednesday: Kielbasa, lima beans, saurkraut, mashed potatoes
Thursday: Hamburgers, french fries, cole slaw
Friday: Turkey meat tacos and refried beans*
Saturday: Baked chicken breasts*, cheesy rice, asparagus
Sunday: Tuna salad sandwiches and soup (not sure what kind yet).

I am working on a four week menu this week, when it's done I will post it for you. I was thinking about starting a blog about it just so other people could see how easy it can be. Honestly I thought that this would be impossible to do but I was so intrigued by it I decided to give it a whirl. I am thrilled with the results and I haven't set foot in a grocery store in 4 weeks. The time and money that I have saved has been phenomenal.

I'll be back in a day or so with this months menu.

I am loving this thread...thanks all for the recipes and the inspiration! I have fussy eaters, don't like to have their foods "mixed together," but at 13 and 15 it's time to deal with it -- casseroles and crock pot meals are so much easier with busy after school schedules.

I also do mine monthly, though I leave wiggle room so that if mom comes to me and says she wants something it is easy to change. It means that I don't have to sit down every week and try and get a menu done quickly. I have more time to look through my massive number of recipes. I still do once a week grocery shopping as I don't have the room to stock up too much.

I must say that I have become a total crock pot lover!!! I bought an awesome recipe book at Sam's and have made quite a few dishes...not a bad one yet. I plan menus and shop for 2 weeks and this works out very well for my family. I have a list of what we will be eating every night so I can always make sure the meat is defrosted. We usually do not plan on eating out, so if we do, it's a nice treat! :) Here's my line up:

Taco soup with corn chips
Hamburger Helper, green beans, crescent rolls
Chicken fajitas (crock pot)
Stuffed peppers (crock pot)
Bratwursts with onions and peppers on hoagie rolls (crock pot)
Tropical chicken, teriyaki rice, veggie (crock pot)
Taco Ring, spanish rice (Pampered chef recipe)
Dirty rice (crock pot), sweet potatoes, corn on the cob
Steak fajitas (crock pot) spanish rice
Chicken and broccoli braid (Pampered chef recipe), veggies
French Country Chicken (crock pot), rice
Beef sandwiches (crock pot), chips
Chicken and dressing (crock pot), veggie
White bean and green chili soup (crock pot), cornbread, meatloaf

Will you share the name of the book? I'm home with a new baby and need some easy, quick dinner suggestions and would love to start using my crock pot which rarely gets used. Thanks!

Sure! It's called "Slow Cooker", and it was published in 2005 by Publications International. There's not an author, so to speak. Like I said, I bought it at Sam's Club.

I never used my slow cooker either until I started working crazy shifts at work and my youngest son started playing football, with my DH coaching. So our schedule completely went out the window! I have recently quit my job, but I still use the crock pot as much as possible because it's so nice to get up in the mornings, throw the food in there, and then pretty much forget about it until several hours later. I can run errands, etc. while dinner is cooking. Usually all I need to fix to go with it is some rice or veggies.

Congratulations on the new baby!!!! :)

Well my stomach flu is back so no london broil for dinner tonight. Mom and I had leftover soup and will cook up the london broil tomorrow. If I am better I will have some too if not I will have leftover soup and mom will have the london broil.

I will say that we are a very meat and potato sort of family, but I do try to keep it all balanced. My kids are both a little on the skinny side, sometimes I'll make them milkshakes just to fatten them up. :)

Breakfast most days is choice of oatmeal, scrambled eggs, pb&j sandwiches, hard boiled eggs along with yogurt, fruit a lot of frozen strawberries blueberries and bananas. On the weekend we might make big breakfasts.

Kids pack their lunches and most snacks are homemade, jello with fruit is a recent favorite, homemade cookies, zuke brownies with icing. Fruit is purchased once a month at shopping. Beginning of the month we eat grapes, melon, bananas, later in the month we eat oranges, apples, pears, frozen bananas and go to frozen fruits like strawberries and blueberries and home canned peaches. Lunch for one week will be a boneless turkey breast that I roast and than slice for sandwiches, another week is homemade cold chicken fingers, next week bowls of wedding soup along with whole wheat breadsticks, week of thanksgiving that are taking ham and cheese handwiches (bread dough stuffed with ham and cheese, baked and can be eaten cold out of their lunch boxes)

Weekend lunches are crock pots full of soup, chicken noodle, chicken tortilla, broccoli cheese.

I menu plan for a month because I have started grocery shopping for a month at a time. I wasn;t sure it could be done but it can. However, it would be unfair of me if I didn't point out that I have chickens who lay eggs in the yard, greens growing in a cold frame in the garden through at least December and a stocked freezer with garden goodies and home canned goods. I also bake pretty much all of our bread. I do think that someone who doesn't do all of these things could still menu plan for a month, maybe with a quick trip to the store in the middle for eggs and or bread.

FYI I work full time at home. This has saved me an enormous amount of time, even though I cook most things from scratch. Just not having to go to the store every week saves a huge amount of time.

I don't do enough planning, but here's what we've had to eat this week (we're vegan):

Monday: homemade bean and vegetable chili
Tuesday: sweet potato fries with mushroom-onion gravy and a large salad
Wednesday: curried tofu and vegetables in coconut milk
Thursday: sauteed enoki mushrooms with steamed bok choy and broccoli
Friday: I'm thinking baked sweet potatoes topped with hummus and leftover chili with a salad or perhaps steamed broccoli

Man, just have to say that our dinner of baked beans and cornbread was a huge hit-and then our neighbor gave us bags of chanterelles so had those sauteed on the side. Very cheap meal that made us all very happy.

Nice job on the meal planning, tinkarooni!
