The chicken, black beans, cream cheese and salsa has a been a big hit at our house.

So we tried it with ground turkey-even better!!

So we will be alernating this each week now!


I can stretch both our to two meals but making the second one burrito night with a salad on the side.

Thanks. Turns out it is an intestinal flu which is why it was coming and going and causing a lot of muscle pain. I got some muscle relaxers from my doctor in hopes I can sleep tonight.

Mom had the london broil with sweet potatoes while I had tea and toast.

Has anyone done meatloaf in the crockpot? I did it last night and I was really happy with the results. I actually put the meatloaf in a glass loaf pan and then in my large crockpot with the cover so I used the crockpot like an oven. So great to have a meatloaf ready when you come home from work. Meatloaf isn't usually a weeknight meal for us since I have to put it in the oven more than an hour before we plan to eat!
 

Last night was pot stickers, steamed veggies, and rice.

Tonight may be frozen pizza night. We are dealing with sickness here too and I am not sure I want to drive to Costco like I need to. We have eaten through our meat stockpile and I need some ground turkey and maybe some salmon at least.

I do have shelf items......rice, pasta, sauces, tinned soups, etc....

It was a real budget week for us. I only had $65.00 to spend on groceries. It's ok though I have a fully stocked pantry. I went to this store that's a bit farther away but has better values than my normal grocery store. For example I bought 4 boxes of General Mills Cereals at $2.29 each and was able to use the $2.00 store coupon and a $1.00 manufacture coupon. I also got a 3lb bag of boneless chicken breast for $4.99.I saved about $15.00 in store and manufactures coupons in total. I had planned on making chicken and dumplings today but noticed yesterday when going through my receipt I bought chicken wings not thighs. So here is the menu.

Tuesday beef pasties with carrots and potatoes inside
Wednesday was Groupon nite. I used a $20.00 groupon for our dinner, $40.00 Groupon at the Body Shop (now I smell pretty from the Lotion)sale was buy 3 get 2 free, and used a $10.00 Groupon for gelato it was awesome!
Thursday was $10.00 pizza night wasn't very good new restaurant
Friday sweet and spicy crockpot chicken wings over rice
Saturday or Sunday Chicken and dumplings (always have to make double dumplings)

Things have gone well this week. Pork is in the oven, dinner on its way! I managed to get dinner ready on time yesterday, even though we were gone from 2:30-6!
Having a plan written down, which includes some SIMPLE meals, has made a huge difference.
Oh! I also made double the chicken when making chicken and noodles this week, so i have shredded chicken for chimachangas this week. I also bought 5lbs of ground beef on sale, I cooked it and bagged it in 1lb bags, ready for future meals!

Tonight's lemon chicken spaghetti soup is simmering on the stove top as we speak. I was trying to figure out something for dinner tomorrow night and happened to find a london broil frozen in the basement freezer. For some reason it was not on my list. So I brought it upstairs and have it thawing/marinating in the fridge for dinner tomorrow night.

How do you fix your London Broil? Winn Dixie has them this week for BOGOF.

What sides do you fix with it?
 
Last night me and DH went to a banquet so I made chicken tacos in the crockpot for the kiddos..

Tonight was Fetticine Alfredo
Saturday: Taco Soup over Fritos with shredded cheese
Sunday: leftovers
Monday: Italian style pork chops, smashed potatoes, green beans
Tuesday: Beef stew
Wednesday: leftovers
Thursday: Stuffed Bell Peppers
Friday: Spagetti with meat balls

already grocery shopped for the following week but will list my days at the end of next week in case something changes..

Also bought some ready to bake cookies for desserts throughout the week.. :thumbsup2

I am loving cooking at home now.. I never seemed to have time before, but now that I am not working, its a nice break in my day to prepare dinner..

Finally feeling normal again. Last night I had plain roasted chicken with rice, while mon spiced hers up a bit. Tonight is a big crockpot full of vegetable beef soup.

Nice job on the prep work! I need to do that-it sure makes life easier.

Making split pea soup tonight-not sure what to serve with it? Any ideas? And what's your favorite use for leftover ham? I have a pound and a half left from the picnic ham I'm using for the soup.

Triple chocolate mess in the crockpot. I'm very curious about how it will turn out.

A few of my co-workers have turned me onto the Slow Cookers Seasoning packets by McCormick. They are so yummy, and easy/fast to prepare during the work week. My favorites are the BBQ Pulled Pork, and Italian Herb Chicken. (Serve the Italian Herb Chicken with pasta, rice, or mashed potatoes, very good!) Just prepare and throw into the crockpot in the morning, and dinner is ready when you get home!

We also have the challange of cooking for just 2 people. But these slow cooker meals are great. Each meal will last us easily 3 nights. Gotta love leftovers. :)

New week...did great last week. Did not eat at all week, except for my budgeted one lunch I give myself. Today, we did eat Sonic for lunch, but we spent $10.91 for all four of us. I can deal with that. I have done my grocery shopping, so here is the menu for the week.

Tonight: Red Lobster, courtesy of my parents;

Sunday: Lunch - homemade potato soup and sandwiches; Dinner - whatever drive-thru we decide on. We have 2 soccer games 1 1/2 hrs. away. We leave at 11:30 a.m. and won't get back until 7 or 7:30 p.m.

Monday: Chili and hotdogs;

Tuesday: Crockpot pork roast w/ gravy, mashed potatoes and green beans;

Wednesday: Chicken thighs w/tomatoes and rice and peas;

Thursday: Stuffed Peppers and mashed potatoes;

Friday: Homemade deep dish pizza;

Saturday: Gumbo and homemade bread
 
Here's our menu for the week:

Sat: Spaghetti and Salad
Sun: Beef Burgundy and rice
Mon: Chicken Tenders and Pasta
Tues:
Wed: Chili and Cornbread
Thurs:
Fri: Turkey and sides


I can't remember what exactly we're having Tues and Thurs off the top of my head. Good thing I've got the menu written down somewhere else!!

I marinate it in some kind of marinade, my favorite is Krafts Balsamic parmesean asiago dressing. We then either grill it on the grill or put it under the broiler. I usually make hashbrown casserole to go with it and a fresh side salad.


Feeling extremely better today. My mom is making a pork roast in the crockpot which we will have with buttered noodles and corn.

Thursday: Baked Potato Soup, homemade rolls

Friday: Pizza and a salad

Saturday: Leftovers
 
We're getting back on track this week! We've been off track for the last couple of weeks. We haven't ate out a ton but more then what we'd like to, that's for sure! So here is our menu this week:

Sunday: Spaghetti and Garlic Toast
Monday: Tacos
Tuesday: Chicken and gravy over biscuits, mashed potatoes
Wednesday: Beef Tips and Noodles, green beans
Thursday: Crockpot Chicken Noodle Soup, whole wheat rolls
Friday: Brats, Shells and cheese
Saturday: Crockpot pulled pork, fries

We went to the grocery store today for the next couple of weeks and our local Meijer had 3lb rolls of ground beef for $3 each! :yay: That's a $1 a pound! :banana: I bought 3 rolls of it. Probably would have bought more except we don't have freezer space. I also got a whole chicken and plan to use it for the chicken and gravy and the potpie. We spent about $22 on meat for the next two weeks! I was so happy with our deals today! :woohoo:
 
Just curious...has anyone noticed weight loss w/ eating at home ? Years ago I worked w/ a family that had to drastically curtail their budget. No meals outside of the house, not much processed food. The parents lost about 20 pounds apiece in the first 3 months. They weren't dieting, although both wanted to lose weight. The home cooking, in spite of the fact that there was more than enough food, was so much lower in calories that they lost weight w/o trying.
 
I lost a little weight but then I started to eat my beloved potatoe chips again and so i have gained it back.

I wish, but I am the opposite, I tend to gain weight because I make things like mashed potatoes and rice and bread and pasta, all of which make me gain weight, but if I am out, I actually eat less of lesser fattening foods. seem to be the only one that this happens too, but it does.

Maybe I just enjoy my cooking more, I no my kids actually prefer mine over restaurants, with some exceptions.
