Okay so I have been stalking this thread for a while and decided I so need to start planning more.

Please keep the ideas rolling, my bigest problem is ideas for myself and DH for lunch....:confused3 and dinner LOL:rotfl:

I just found this thread and some great ideas for dinner. Sometimes I get tired of the same things. Here is our menu for part of last week and this week.

Thurs.- Spaghetti and meatballs, salad, bread
Fri.- Tacos, rice, corn
Sat.- not at home
Sun.-Pork roast and sweet saurkraut, mashed potatoes, veg.
Mon.- Ground sirloin patties, potatoe pancakes made from leftover pototoes, green beans
Tues.- I was sick so we ordered chinese
Weds.- today, Roast chicken, stuffing, gravy, amish noodles, mixed veg.
Thurs.- Fish, homemade mac and cheese, peas
Fri.- Crockpot Beef stew, rolls
Sat.- chicken fajitas, rice
Sun.- Hamburgers on the grill , french fries
 
Here is my list for this upcoming week. I do my shopping on Monday!


Wednesday- Chicken Piccata, Angel Hair Pasta, Asparagus

How do you make the Chicken Piccata, sounds yummy popcorn::
 
Today we are having a sausage strada for dinner. I actually already cooked it and we will warm it up in individual portions when needed since we have so much going on today.

It's really easy actually! I also scales up really well to feed more people. It's only me and mom, so I have it set to 2 servings.

Makes 2 servings
Total Time: About 30 mins

2 boneless, skinless chicken breasts cut in half and pounded thin
Salt and Pepper
Flour
Oil
1/4 c dry white wine (or extra chicken broth)
1 tsp minced garlic
1/2 c chicken broth (I use low sodium)
1 tbsp lemon juice
1 tbsp drained capers (sometimes I leave these out)
2 tbsp unsalted butter
fresh lemon slices
chopped fresh parsley

1. Season the pounded chicken breasts with salt and pepper and then dredge in flour. Heat a saute pan to medium high and add oil.

2. Saute chicken until nicely browned and cooked through. Remove from the pan and keep warm.

3. Deglaze the pan with wine (or broth) and add garlic. Cook until garlic is slightly brown and the liquid is reduced (about 2 mins).

4. Add broth, lemon juice, and capers. Return check to pan and cook on each side about one minute. Remove the chicken from the pan.

5. Finish sauce with butter and lemon slices. Once the butter is melted, pour the sauce on the chicken.

6. Garnish with parsley and serve.

Well yesterday was saved by my husband!

We had planned chicken and rice and well I opened the chicken and it had such a smell that I could not believe so out it went. just as i was thinking ok how about take out my husband asked if we had beans and we did and so he suggested hot dog and bean casserole. and the night was saved!

Tonight-taco dip
Tomorrow -pizza and a movie
Saturday-hummmm.
 
Sorry, never posted this week. Here's what we had:
Monday Hamburgers and potato chips with carrot sticks
Tuesday: Fajitas
Wednesday: Salmon and Salad
Thursday: homemade mac and cheese, ham steak and broccoli
Friday: we'll have leftover mac&cheese with hot dogs
Saturday: Chicken Parmesan
Sunday: GOING OUT (it's my birthday)


A question: I just bought Fix, Freeze, Feast based on lots of good reviews here on the DIS. I love this idea...I did Dream Dinners a few times and we loved it, but it was a bit $$ for me. What are YOUR favorite meals from this book, and do you have any tips for me? I'm thinking that I'll make 1 or 2 recipes this week and then in another week or so I'll make a couple more. Which ones to start with?
 
It's gonna be a rough week ahead this next week. My newly diabetic hubbys medications are really taking a bite out of our budget so I am going to be cleaning out the freezer for this next week. I am going back to the roots of our previous board by living off what we have in the freezer and pantry.

I have a pork tenderloin I say I am making every week and will do so this week I swear!
change of plans: made sweet and sour chicken and rice today
tuna casserole
pot roast with veggies
breakfast for dinner with potatoes of some kind
arroz con pollo (just bought some chicken thighs)
shephards pie
baked speghetti
diabetic brownies and some other dessert for my DH
taffy apple salad
chili
 
My class was cancelled tonight so I am going to the movies with friends and my mom has a cooking class she is attending so we are having homemade strombolis for dinner tonight with salad.
 
We love having breakfast for dinner as well. Our favorite is breakfast tacos! Shredded hash browns (browned) then poor schrambled eggs over top and finish cooking together. Then add some sausage to the mix. I make my own taco shells using corn tortillas. Put it all together with some sour cream, cheese and salsa and thats dinner! Yum!
 
Forgot to post my menu for the week, so here goes:
Sunday - Red beans and rice
Monday - Lentil soup and green jacket salad
Tuesday - Tacos
Wednesday - Blessed with leftover lasagna and potatoes from neighbors
Thursday - Stewed chicken and rice (my FAVORITE!!!)
Friday - Making double poppyseed chicken and brown rice, and taking one of the meals to a friend who just had a baby
Saturday - Not sure just yet - may do pizza since my kindergartner got a coupon for a free personal pan pizza through Book It.

Friday: Chinese Dumplings and Pork fried rice;
Saturday: Turkey, M. Potatoes, dressing, green beans, cranberries and corn;
Sunday: Left overs and the last soccer pasta party for DD 12 and I;
Monday: Concession stand or Culvers for last jv soccer game for DD 12;
Tuesday: Gumbo and homemade bread;
Wednesday: Beef Stew and homemade bread;
Thursday: Turkey Pot Pie with part of left over turkey; and
Friday: Homemade Pizzas

Still going strong. I've only had a few deviations. We had the Turkey Pot Pie last night for dinner. DH had leftover today for lunch and I am going to have the leftover Gumbo tomorrow. I realized I didn't have any potatoes, so instead of Beef stew tonight, we had Beef Short Ribs in the crockpot with barbeque sauce, mac and cheese and peas.

I have to shop tomorrow before coming home from work because we are out of fruit and milk. I will pick up the italian sausage and bell pepper for the pizzas tomorrow night.
 
I have a turkey breast in the crockpot right now for tonights dinner. I'm making a homemade stuffing to go with it but boxed mashed potatos :rolleyes: I just hate trying to make mashed potatos. I never bought them before but part of embracing eating at home is making things easier so we'll give them a try. I also bought everything I need to make lasagna one night. I love lasagna! This will be only my second attempt as lasagna, the first was at least 5 years ago! Wish me luck :laughing:
 
Tonight I am going to make chicken enchiladas with Spanish rice. I went to the grocery yesterday and they had spencer roasts on sale BOGO free, so I got two and put one in the freezer as soon as I got home. So I think tomorrow night we will have pot roast in the crock pot.
 
We are trying to eat at home more this Fall to help our shrinking savings and expanding waistlines.:rotfl:

Tonight's menu is chicken fajitas, nachos, and refried beans. Probably not too helpful with our waistline problem, but Texmex is one of those things I think you can make at home that is easy, good, and much cheaper.

A game my CPA husband loves to play at the dinner table is how much did this cost to make. Then he tabulates what an equivalent meal would cost if we had eaten it in a restaurant.

MMmmm Lasagna! A family favoriite here, its something that my kiddies don't mind eating leftovers of, a rare thing for them:goodvibes Never tried turkey breast in the crockpot do you add some stock or water and then put it in or just season it and plop it in?
