Last night made a huge pot of chili and cornbread. We'll eat it again for lunch today, plus prob one workday lunch for DH and I, and a gallon in the freezer.

Tonight we'll eat pizza out with friends.

Tomorrow, no knead bread ( which I figure costs me about 25 cents a loaf) and pasta with chanterelles-DH and DD picked yesterday.

Later this week, the last of our tomatoes into fresh pasta sauce. Also a pork tenderloin with either apple butter or plum chutney, canned this summer. Got 4 tenderloins at Costco yesterday for $17. I'll serve mashed cauliflower with that, which costs a couple bucks and the kids love it (won't eat cauliflower otherwise).

I am going to try for no fast food or take out for the month of October, this will be tricky with DH out of town so much this month but I am going to try my best. I prepped a few things today to make it easier for me to stick to the plan.

Menu for the week
Sunday - babyback ribs, homemade potato salad, beans, corn bread

Monday - sausage and pepper sandwiches, pasta salad

Tuesday - chicken tacos with shredded chicken in the crock pot, spanish rice

Wednesday - chicken tenders, homemade mac and cheese, corn

Thursday - baked ziti using leftover sausage from Monday

Friday - fishsticks and fries for the kids, baked potato probably for me, dh is still away and we have baseball so I need something easy

Satuday - Beauty and the Beast movie theme night - pork roast, risotto, green beans and cupcakes that look like Cogsworth!

Well I went to the grocery store today and am now the proud owner of 20 boxes of pasta. Giant Eagle had a deal on their boxed pasta, it was 20 for $10. So at $.50 a piece it is cheap enough and will last me all winter long.

I have readjusted the menu as we are going to my Grandma's for dinner tomorrow.

Tonight: Baked poatoes with Chili
Tomorrow: Grandma's house
Monday: Shepard's Pie
Tuesday: Egg strata with sausage
Wednesday: Chicken enchiladas
Thursday: Homemade pizza
Friday: Pulled Chicken sandwiches with fried sweet potato fries and zucchini
Saturda: Spaghetti and meatballs with salad and garlic bread.



:lmao: about the pasta. I did the same thing 2 weeks ago, Ronzoni was .57/box and that was for all the kind of pasta except lasagna noodles and shells for stuffing. I even got orzo and pastina and alphabets! I bought at least 20 boxes but for .57 cents I had to do it! So yeah I'm all set for the winter too!:thumbsup2
 

have had a busy week so havent been on here since last sunday. have had extra shifts, sick children the usual activities to deal with and still managed to provide a cooked meal each evening. my menu was juggled a round a bit but still managed. have to beat my record of 18 days without eating out !!!

so after a lovely roast pork dinner with all the trimmings and a homemade birthday cake for my mum today we are now on day 9 of not eating out xxx

How do you make your Mexican Shepard's Pie? It sounds yummy.

Since we are going to my grandma's for dinner I offered to make dessert. So I made salted caramel cupcakes and WOW are they good (I had to taste test one with my mom). The perfct mix of salty and sweet.

Okay I MUST HAVE that cupcake recipe (please). Sounds AMAZING!:cloud9:
 
Mexican Shepard's Pie

Brown 1 lb of ground beef. Add taco seasoning. Layer in the bottom of a 2 qt casserolle. Layer in shredded cheese (approx 1 cup), package of frozen corn (defrosted) and top with mashed potatoes (I use 5-6 medium potatoes and make my own mashed potatoes. If you're using instant make 6-8 servings). Bake at 350 for 30 minutes. Serve with sour cream and tossed salad.

My kids love this. I have substituted ground turkey for the ground beef to make it a bit more healthy and it came out fine.

Thanks so much. Sounds yummy. I love using ground turkey when I can so this is great.


Tonight we are having leftovers as we have a ton from the weekend and my Grandma sent home a bunch yesterday.

Saturday- at a party!

Sunday- At a party!

I don't have the week planned out but tonight DDs are having copycat KFC popcorn chicken that I breaded and froze last night, DH is having leftover crockpot salsa black bean chicken (that I found on the crockpot thread) and I'm having salad.

I'm going to try to eat in every night this week!
 
I had never heard of Sukiyaki so I read about it on Wikipedia. How do you make yours? Do you use beef, what kind of vegtables do you use? Do you do the raw egg dip thing?

Here is the recipe I follow; we just use a large pot to brown the meat in and then add all the veggies and sauce and it turns out well! I've cut the sugar in half when browning the meat and it is still pretty sweet so you can easily do that if you want it to be healthier. We serve it with white rice and it easily lasts us three whole meals (two dinners and a lunch for both I and my fiance).

Ingredients:
2 Tablespoon oil
1 lb. sukiyaki meat (this is just bacon thin slices of beef - I think its chuck or ribeye - you can see some fat)
2 medium onions, sliced
4 oz. yam noodles (aka shirataki)
1 cup bamboo shoots, sliced
2 stalks celery, sliced
1 cup Shiitake Mushrooms, sliced, soaked and rinsed
1 cube tofu, cut into 1" pieces
1 bunch green onion, cut into 2" lengths
2 leaves nappa cabbage, sliced
1/4 cup sugar (add to meat)

Sauce:
1/2 cup soy sauce
2 Tablespoon sugar
1 cup soup stock
1/4 cup mirin

Preparation:
Arrange meat and vegetables on large platter. Heat an electric skillet to 375 degrees F. and add 2 tbsp. oil. Brown meat in oil, adding sugar and move meat to corner of skillet. Add other vegetables, keeping each separate. Mix sauce ingredients together in separate bowl. Add sauce to skillet, cover, bring to a boil and cook 2 minutes. Uncover and turn all ingredients while cooking 2 minutes more.

Yesterday was Hamburgers
Today.. Wraps. (beef and veggie and cheese for the boys, bean and cheese and veggie for the girls.)

Wednesday.. Peirogies and salad.. quick and easy so we can get to hockey practice.

Thursday.. Grilled sausages, baked potato, broccolli

Friday, Saturday, Sunday.. we're on vacation in Lake Placid with extended family. We'll have our Thanksgiving in the condo..but the rest will be restaurants
 
made the cozy crock comfort last night. i found it off of a weight watchers type website. it was gross. i had four servings of it left. i added 2 cans of chicken broth to it tonight rather than throwing it out. it made a decent soup. now i have enough soup for dinner tonight and for lunches during the week. had that with grilled ham and cheese sandwich.
 
It was raining all day here again so we decided we needed comfort food and had grilled cheese with tomato soup.
 
Went grocery shopping yesterday and saved $73 with sales and coupons


  • Monday: Steaks (was buy one petite sirloin package get TWO free!), grilled asparagus, cauliflower, and mashed potatoes
  • Tuesday: Grilled pork chops, steamed rice, broccoli
  • Wednesday: Beef pot roast in the crock pot
  • Thursday: Tuscan chicken, steamed or broiled brussel sprouts
  • Friday: Baked ziti, steamed green beans
  • Saturday: Shrimp lo mein, stir fry veggies
  • Sunday: Crock pot tarragon chicken, mashed potatoes, and corn
 
We eat these any day but make a general schedule:

Sunday: leftovers Chinese food
Monday: homemade spinach pizza
Tuesday: Tortilla Soup
Wednesday: Spaghetti and spinach salad
Thursday: Pierogi sauteed with cabbage
Friday: Sweet and sour tofu with basmati rice

Tuesday...mango chicken...boneless thighs, wild rice & asparagus
Wednesday...baked pork chops, butternut squash, beets, peas & carrots
Thursday....pasta of some sort...probably ziti
Friday...ham steak, baked beans, potato salad with leftover potatoes, beet tops & corn
Saturday...leftovers...Last week it was "garbage soup" This week, probably beef stew &/or leftover ziti.
(I blended leftover veggies including salad from begining of week to make a broth, to the broth I added carrots, celery, onion, garlic, peas, green beans, corn, kidney beans, & I threw in some brown rice noodles.)
Sunday...We are grilling at my brother's house...I'm bringing a salad & homemade cookies!

My mom used to make "garbage soup" she would save all the peels from things like carrots and potatos, ends of onions, celery, pretty much like you mentioned to make a vegetable broth. Wait until I tell her someone else makes a garbage soup!:eek:
 
I have chili in the crockpot today, I barely got it in there before running out the door to work. Yesterday I make chicken soup in the crockpot. My hubby had family night as his volleyball game so we were all going and I had to have him bring me to the garage to pick up my car which had some work done. We had 30 minutes from the time we walked in the door until we had to leave and I managed to feed everyone homemade chicken soup and toasted homemade bread. I was pretty proud! Then at family night one of the moms mentioned how they hadn't even eaten yet (The games ended at 7:30 and she like me has 2 little ones) I asked her what she was going to be able to throw on the table in a hurry and she replied that they would probably be going through the McDonalds drivethru and the kids would eat chicken nuggets in the car on the way home :rolleyes: I know I shouldn't judge but I couldn't help myself. I felt even more proud of my crockpot soup because a few months ago I would have been in the drivethru line right behind her!:laughing:
