Wow the weight is just falling off you!!:rotfl: Have so much fun tonight. MMMM those watermelon pops sound too good. Where do you live? Maybe I could stop by for one ;)

I did chicken cacciatore in the crock pot last night. It came out okay, the sauce was so thin and it didn't have a "punch" of flavor. The rest of my gang liked it okay though. I started bread yesterday and it will be ready to bake tonight. We're having my husbands family over for dinner so hopefully the bread turns out okay! I'm just making pasta w/meatsauce tonight and a salad, I might pick up a whole chicken at BJs too, we'll see how much time I have, hmm and I need something for dessert, I have a store bought coffee cake in the freezer, I guess I can serve that...

Saturday hubby and I are meeting some friends out for dinner, I will most likely get takeout for the kids and my MIL who is babysitting.

Sundays I usually do pasta but I'm doing that Friday, maybe pizza from scratch...

I've skipped around - 34 pages is a lot!, but just wanted to interject that along with cooking at home, southernsavers will help you save money on the groceries. I buy 2 papers a week and then use that site to do my shopping list. I like the coupon data base at hotcouponworld, and I've been checking out a couponiningtodisney blog, too. There are several good sites to help save money at the store. I have cut my grocery spending in half for our family of 5 (no store here doubles).

Double coupon day today at the grocery store:banana: I saved $56.00 in coupons! I am stocked up pretty well. I had to buy meat so my bill was a bit higher than normal today about $140.00/4 of us.
I had some extras today. My hubby is a new insulin dependant diabetic so we are buying him some foods he is familiar with and likes. It's a good thing though because he wants to go work out with me. I didn't have to adjust how I cook that much because I don't buy that much processed/high sugar foods. I am however having my first experience with baking sugar free desserts today.

This is what the plan is for this week. Baby it's cold outside!
Arroz con polo with gandules
some dish including hamburger
crockpot Chicken tortilla soup with homemade tortilla strips
Chili
homemade chili cheese sauce over fry weggies
crockpot pork tenderloin and veggies
kung pao shrimp and chicken over soba noodles
chicken salad sliders with potato chips
diabetic brownies
tuna casserole
diabetic chocolate cheesecake

Here is my list for this upcoming week. I do my shopping on Monday!

Monday- Pot Roast with Potatoes, Carrots, and Onion

Tuesday- Egg Sandwiches with deli sides

Wednesday- Chicken Piccata, Angel Hair Pasta, Asparagus

Thursday- Not home

Friday- Orange Glazed Salmon, Roasted Vegetables (potato, onion, bell pepper, carrots, squash)

Saturday- Not home

Sunday- Potato and Corn Chowder with Biscuits

Well I went to the grocery store today and am now the proud owner of 20 boxes of pasta. Giant Eagle had a deal on their boxed pasta, it was 20 for $10. So at $.50 a piece it is cheap enough and will last me all winter long.

I have readjusted the menu as we are going to my Grandma's for dinner tomorrow.

Tonight: Baked poatoes with Chili
Tomorrow: Grandma's house
Monday: Shepard's Pie
Tuesday: Egg strata with sausage
Wednesday: Chicken enchiladas
Thursday: Homemade pizza
Friday: Pulled Chicken sandwiches with fried sweet potato fries and zucchini
Saturda: Spaghetti and meatballs with salad and garlic bread.

have had a busy week so havent been on here since last sunday. have had extra shifts, sick children the usual activities to deal with and still managed to provide a cooked meal each evening. my menu was juggled a round a bit but still managed. have to beat my record of 18 days without eating out !!!

so after a lovely roast pork dinner with all the trimmings and a homemade birthday cake for my mum today we are now on day 9 of not eating out xxx

Okay, here is my list of dinners for tonight through next Friday night. I really need to stay on target because I got my furlough day pay check and it is about $200 less than usual and my DH's job project ended a few weeks ago and he is only working a lower paid job until the next project. So here it is...

Tonight: Spaghetti w/meatsauce, broccoli and garlic bread;
Friday: Chinese Dumplings and Pork fried rice;
Saturday: Turkey, M. Potatoes, dressing, green beans, cranberries and corn;
Sunday: Left overs and the last soccer pasta party for DD 12 and I;
Monday: Concession stand or Culvers for last jv soccer game for DD 12;
Tuesday: Gumbo and homemade bread;
Wednesday: Beef Stew and homemade bread;
Thursday: Turkey Pot Pie with part of left over turkey; and
Friday: Homemade Pizzas

Hope we make it. I have most of the ingrediants. I need a can of cranberries, green bell pepper, and pepperonis. That's it, except for milk and produce for next week. Hoping to get by on $50 for the week.!

So far, so good! Made a turkey dinner last night with all the trimmings, except cranberry sauce. We have tons of leftovers! I am going to try and get DH and DD 9 to eat at home tomorrow instead of the game. DD 12 and I have to be there early. She'll eat after her game from the concession stand because she has to ballgirl the Varsity game and I'll probably get a chicken sandwich from there too. I hope to only spend about $8.

I did spend spend a bit more than $50 yesterday. I think it was $62, but they had All Free on sale for 2.99 and I had 3 $1 off coupons. So I got 3 bottles for just a wee bit more than 1 bottle normally costs. Plus, I had to get fruit for the pasta party tonight. So, I actually spent under the $50 on our groceries for the week.

I've got to stay on track since my pay check was over $180 short due to the furlough day. And I've got 2 more coming before the end of the year.:sad2::sad2:

We could have eaten out yesterday but didn't. We had homemade hoagies instead.

We could eat out today but wont. Chicken parm instead.

The rest of the week....

Monday- pork chops and potatoes in the crock pot
Tues-Taco bake
Wed-Beef stew meat over noodles
Thurs-not decided yet but made out of ground beef since it was on sale
Fri & Sat--working

Here's this week's menu:

Sunday - Chicken & Vegetables w/biscuts and gravy
Monday - Oven fried pork chops with stuffing, gravy, green beans & salad
Tuesday - Mexican Shepard's Pie
Wednesday - Chicken on the grill with baked potatoes, salad and broccoli
Thursday - Company coming in from out of town so we'll probably go out
Friday - Steak tips on the grill, sauteed mushrooms, salad, rice and corn on the cob
Saturday - Probably out to eat again as we plan to go to the outlet malls with our company.

How do you make your Mexican Shepard's Pie? It sounds yummy.

Since we are going to my grandma's for dinner I offered to make dessert. So I made salted caramel cupcakes and WOW are they good (I had to taste test one with my mom). The perfct mix of salty and sweet.

Great thread! Joining in....
Last night made a huge pot of chili and cornbread. We'll eat it again for lunch today, plus prob one workday lunch for DH and I, and a gallon in the freezer.

Tonight we'll eat pizza out with friends.

Tomorrow, no knead bread ( which I figure costs me about 25 cents a loaf) and pasta with chanterelles-DH and DD picked yesterday.

Later this week, the last of our tomatoes into fresh pasta sauce. Also a pork tenderloin with either apple butter or plum chutney, canned this summer. Got 4 tenderloins at Costco yesterday for $17. I'll serve mashed cauliflower with that, which costs a couple bucks and the kids love it (won't eat cauliflower otherwise).

I am going to try for no fast food or take out for the month of October, this will be tricky with DH out of town so much this month but I am going to try my best. I prepped a few things today to make it easier for me to stick to the plan.

Menu for the week
Sunday - babyback ribs, homemade potato salad, beans, corn bread

Monday - sausage and pepper sandwiches, pasta salad

Tuesday - chicken tacos with shredded chicken in the crock pot, spanish rice

Wednesday - chicken tenders, homemade mac and cheese, corn

Thursday - baked ziti using leftover sausage from Monday

Friday - fishsticks and fries for the kids, baked potato probably for me, dh is still away and we have baseball so I need something easy

Satuday - Beauty and the Beast movie theme night - pork roast, risotto, green beans and cupcakes that look like Cogsworth!

Mexican Shepard's Pie

Brown 1 lb of ground beef. Add taco seasoning. Layer in the bottom of a 2 qt casserolle. Layer in shredded cheese (approx 1 cup), package of frozen corn (defrosted) and top with mashed potatoes (I use 5-6 medium potatoes and make my own mashed potatoes. If you're using instant make 6-8 servings). Bake at 350 for 30 minutes. Serve with sour cream and tossed salad.

My kids love this. I have substituted ground turkey for the ground beef to make it a bit more healthy and it came out fine.

I love this thread!
