I tried a turkey breast in the crockpot last night for the 1st time. It came out really well and was so easy! I defrosted it the night before, removed the skin and then put it in the crockpot with 1/4 stick of butter, 1/4 cup water, a sprinkle of poultry seasoning and some onion powder. It came out great. I seved it with canned cranberry sauce, boxed stuffing and canned corn. Once I got home from work I had dinner on the table in 20 minutes and everyone enjoyed it! I so will be making that again! Thanks for the idea here!:thumbsup2
 
Found your thread and what a great one it is! I know my DH and I have trouble with going out (cooking isn't my favorite thing) and we just had a baby in June, so the budget is still adjusting, or should I say, I'm still adjusting to it! I went to the store yesterday and spent $90. This is what we're having this week:

Tuesday (last night): Turkey sausage farfalle
Wednesday: Left overs (we went camping this past weekend and have things I don't want to go to waste)
Thursday: Grilled salmon w/madarin ginger marinade, rosmary red roasted potatoes, broccoli
Friday: Grilled chicken, white cheddar pasta shells, green beans
Saturday: Frozen pizza (original, I know:confused3)
Sunday: We get together with my sister and she cooks once a week. I'm not sure what we're having.
Monday: Tacos made w/ground turkey

This thread has been so inspiring today. :goodvibes We had a dinner melt down just last night because nothing was planned, or more like thay didn't want what we were having.:sad2: I didn't have anything to put together either because of lack of planning. Being a SAHM, this is crazy!:guilty: I have got to pull it together and plan better. I think this is exactly what I need.

We try to plan meals that we can have for two nights, or add to for the second night. With kids going in every direction, this just makes it easier for me.

I'll start now and post what we are having tonight.

Chicken casserole, creamed potatoes & peas with a salad

School dance tomorrow & I have to chaperone so we will have left overs, or DD can have pizza there.

Friday, we normally go out.

We shop on Saturdays so I'll start over then. :thumbsup2
 
Last week got a little thrown off from what I scheduled a little but stuck to most of it.
Instead of salmon one night though, I made French Dips using my crock pot. The next night my husband and I had French onion soup with the left over au jus while the kids went to the high school game. It was SO good!

Then Sunday was our cookout. We had: BBQ ribs, BBQ, homemade potato salad, homemade slaw, baked beans, rolls, grilled sweet corn, homemade cherry-pinneaple ice-cream and hershey bar cake. It's the most I've eaten in a long time!!

So far this week it's been:

Monday: Subway (I was not feeling all that well)

Tuesday: Popcorn shrimp, pasta

Wed: terriyaki chicken, rice

Thursday: I'm thinking spaghetti, garlic bread, salad

Fri: High school game; might get something at game, take something for tailgating or let the kids go to the game and the husband and i have a date.

Sat: Eat out if we didn't eat out Fri. If not, I'm thinking salmon night or fajitas

Sun: Thinking BBQ chicken, homemade mac and cheese, yeast rolls, potato salad, creamed corn with bacon, deviled eggs and maybe a fruit crisp or my daughter's wonderful chocolate pie.

And we may just have those French Dips again because all of us loved them!

I like to make Taco Soup and freeze some for later. Also, Stuffed Shells and Italian Sausageand Spinach Stuffed Shells, Chicken and Broccoli Stuffed Shells with Alfredo.

I think I'm on a roll with jumbo pasta shells! There are lots more recipes that freeze well in my Frozen Food category.

That Yorkshire Pudding recipe posted above sounds really good!

Thanks Tiffany! I think its important to have a go to meal in the freezer for those days where you just don't want to cook in a hurry or feeling sick. I love your blog!

I think this is one of the keys to eating at home and avoiding unplanned restaurant trips. Having something in the freezer and/or pantry really helps.

The other key is that dinner doesn't have to be fancy. Some nights, you just need to get everyone fed. Eggs with toast and fruit, mac & cheese with broccoli, spaghetti and salad... It's okay to keep it simple :goodvibes

I defintely agree with this. Last night we had smoothies, sunnyside up eggs and toast for dinner. My kids are always thrilled when I give them breakfast for dinner, so I do it every week.

This week I kept it super simple, all of our afterschool activities started and I feel like I'm running in 100 different directions.

We had:
Monday: Hot dogs, baked beans
Tuesday: smoothies, sunnyside up eggs, toast
Wednesday: sausage and ziti (sausage and sauce made in the crockpot) and salad
and the plan for the rest of the week:
Thursday: Cube steaks, stir fry veggies and rice
Friday: Pizza (always on Friday)
Saturday: steak, baked potatoes, sliced tomoatoes, corn on the cob
Sunday: some kind of chicken (Parmesan probably)
 
Monday: Grilled tandoori chicken, rice, and Naan (DH makes really good tandoori)

Tuesday: Chinese noodles with ground turkey

Wed: homemade mac and cheese with broccoli
 
Last week I got a little off track but have been doing better this week. So far we have had...

Sunday... garlic herb chicken breasts, asparagus, tossed salad, crescent rolls
Monday... grilled cheeseburgers, green beans, veggies and ranch
Tuesday... tacos, mexican rice, corn
tonight... beef and broccoli (cheating and tring a new PF Changs frozen brand) with rice

The rest of the week...
Thursday... buffalo wings for the opening of NFL fotball... SKOL VIKINGS!!!
Friday... birthday party to go to, we will eat there
Saturday... grilled pork tenderloin, green beans, baked potato

Could you post the recipe for the French Dips using your crock pot? That sounds great! Also the French Onion Soup if you could. My family loves those 2 things!

Sure! It's very simple. The only thing is, it could cost a little more because I used ribeye steaks. BUT, I pay attention to when they go on sale at the market. All I did was put my steaks in (3 for a our family of four, including my always hungry 6'2", 15 year old son) the cooker with one can (10 1/2 ounce) of french onion soup, one can of water, same amount of beef broth (I'm pretty sure it was a cup; I'll double check on that) and 2 tsp. of worschestshire sauce and let it cook. I added more onions close to the end because I love a lot of onions, plus I knew I was doing the French onion soup the next day. I shredded the steak with just a fork and knife, after it was very tender.

I bought sub rolls at the store and toasted the on both sides in the oven.

I also bought provolone cheese to melt over the top (son preferred his without cheese)

We put a cup of au jus to dip on each plate.

Then, the French onion soup was just heated up broth from the night before. I took the same sub bread and cut it into pieces and toasted them in the oven, added them to the broth and topped it with provolone cheese and melted in the oven (could do this in a microwave as well but I like the crispy brown edges and oven gives it).

You could probably use a cheaper cut of meat but I was not sure what to use and when I googled it, someone said the ribeyes were the best. I figured we got 2 meals out of it so it was justified :) And actually, I got 3 meals because for lunch the next day , I had enough broth for one more bowl of soup!
 
Ok I am finding myself tempted all the time to still eat out. I think for me after vacation it is so hard to get back in the swing of "real" life. I also think personally for me stress has a big factor in what I eat. It is so easy to say i had a bad day go get something. But I have seen that me kids are picking up bad habits, when my oldest get stressed or is just hungry instead of looking for food she just says lets go to --- and get take out. Whenever you ask what they want they say take out and so it needs to stop. Going out should be a special time and only once in a while (that's just how i feel for us). Tuesday we had- Grilled cheese's
Wednesday we had- A baked chicken with salad, carrots, and rice
Thursday- Meatloaf with corn and mashed potatoes
Friday- Homemade pizza with a movie
Saturday- really don;t know I am trying to clean out the cupboards so we shall see
Sunday- need to go food shopping!!!!!!!

We fell off the "bandwagon" and went out to dinner and breakfast last weekend. :sad2: However, I have enough food in the house to only buy produce/milk/bread/lunch meat for the rest of the month! :)

Thank you so much! That sounds great, but I'm not a great cook, so I need detailed instructions just like this!
 
We went out to eat last night:headache: To the tune of $55!! Oh well, we just moved here and my youngest loves, loves, loves Golden Coral and has been begging to return there, so we went. It was a busy night, so I was happy to not have to cook.

Spaghetti tonight, since we didn't eat it last night!
 
How do you do your French Toast Casserole? That sounds so good right about now!

French Toast Casserole

1 stick butter
1 cup brown sugar
1 loaf bread, sliced or cubed
8 eggs
7 oz. milk
1 Tbl + 1 tsp. vanilla

Melt butter in a 9x13" pan. Sprinkle brown sugar evenly over the bottom of the pan. Place bread to fill pan. Beat together eggs, milk, and vanilla. Pour over bread. Sprinkle with cinnamon sugar. Cover with foil and refridgerate overnight. In the morning, bake at 350F for 45 minutes. The brown sugar/butter makes its own syrup, so no additional syrup is needed.
