Eat at Home Carb Free! (or Low carb)

Good Evening! As much as I enjoy reading through what everybody is posting for Eat at Home I notice that many of the recipes and meals have many carbs, and for myself, my body just cannot tolerate them :( I would love to get some new ideas about what people are eating. Thank you!
Monday- Omelette with Cheese & Vegies
Tuesday- baked chicken & steamed vegies
Wed- baked salmon and vegies
Thursday- left overs
Friday- steak and salad
Saturday- not sure :(
Sunday- roast chicken dinner with steamed vegies
 
Monday - wild game chili & shredded cheese
Tuesday - blackened salmon, coleslaw, sliced cucumber & tomato salad
Wednesday - crockpot night: roast, carrots & cauli rice
Thursday - Mahi Mahi with mango salsa, black beans, leftover sliced cucumbers/tomatoes
Friday - spaghetti squash smothered in red sauce with sliced / sautéed squash / zucchini / olives / artichoke hearts / red onions & bellpeppers
Saturday - inside out egg roll (1/2 of bagged Asian crunch salad mix tossed with packet of star just sweet & spicy tuna creation)
Sunday - shredded chicken taco meat tossed with shredded lettuce, finely chopped spinach, onion, bell pepper, leftover black beans (rinsed/drained), black olives, onion, tomato, avocado & generous amounts of salsa, jalapeños & a little FF sour cream
 
Yummy ideas! How do you make the inside out egg roll? Do you have a picture of it? These are terrific ideas that I need to make my meals more interesting and healthy!!
 
I dont have a pic of it prepared, but here is what I use to make it. I literally toss half the bag salad with the tuna packet & 1/3 of the dressing that comes with it. Mix until thoroughly coated & chow down. It's a favorite & it's super easy. ill take a pic later this week if it & post up.

i eat a lot of roasted veggies in every way shape and form.... or sauteed.... salads.... boiled eggs, fried eggs, soft boiled eggs,just lots and lots of eggs b/c I love them! We also eat a lot of chicken, either roasted, or chopped into a stirfry, or possible indian spiced chicken dish over some quinoa or brown rice (for the others in my fam) I love cauliflower, goes with just about anything I make..... use my mandolin to slice zucchini fine when doing a pasta night, then I usually eat about 1/2 c brown rice pasta with my plate of zucchini noodles and sauce....
 
I have lost 40 pound in a year and a half mostly by doing low-carb...So I'm with you that I want to KEEP IT OFF so I try to find new recipes.

But honestly, for me, I tend to eat mostly the same things...I make 3 pounds of ground turkey taco meat on the weekend and tend to have that with cheese for lunches most of the week, sometimes by itself and sometimes into a salad with some salsa and sour cream on it...Sometimes I'll mix in some veggies in there. I also do chicken stir-fry a lot, with cauliflower rice.
 
Here's a list of things that I've made since going no/low carb:
-Stuffed peppers (no rice, just meat and seasoning)
-Eggplant lasagna (Greek dish, but uses eggplant in place of noodles)
-Stuffed Grape leaves (does have a little bit of rice, but negligible amount)
-Rolled up zucchini lasagna (thin sliced zucchini, with the lasagna cheese filling rolled up inside)
-Carbonara Spaghetti squash
-Spinach/Feta stuffed pork loin
-Keilbasa and cabbage fry (I don't remember the actual name, but it's delish!)
-Fat Head cheese crackers (Google this, they turned out pretty good amazingly, even though they're made out of cheese)
-Chicken/beef stir fry

For breakfast every morning I eat 1 egg and 2 pieces nitrate free bacon. Lunch is usually 3 oz. grilled chicken, with either steamed broccoli or cauliflower. I always soak some Olive oil in there with some Greek Seasoning thrown on top for flavor. Dinner a lot of nights lately has just been a Spinach salad, with olive oil, feta cheese and the Greek Seasoning. After about 4 weeks, I found myself not even needing to eat all that much food anymore throughout the day.

I get a lot of my recipes from google. TONS of bloggers out there doing low carb, no carb, ketogenic diets and they have a TON of delicious recipes!
 
I'm jumping on board, too! I've been low carb for around 6-7 years now.
So far this week my kids and I had chicken meatballs with dreamfields pasta (lower carb)... it's not my best low carb meal but faster for me than making spaghetti squash. My 4 kids are a busy group!!
 
Tonight's dinner was zoodles, peppers, onions and chicken sausage.

@mommajo143 I have the Vegetti Pro and I love it. I use it 1 to 2 times a week and I've had it since last Christmas.
 
Do you use the Vegetti? I'm thinking I may get one but the "as seen on tv" products make me nervous...
I use my Mandela slicer... It's more practical since I use it for different things in the kitchen
 
We have a combined Weight Watchers/Atkins-style household for over 8 years now, so I have lots and lots of low carb meal recipes and ideas..... but I'm at work right now. I'll come back and share later today or tomorrow when I have a chance. But off the top of my head......

chicken vegetable soup,broccoli cheddar soup, mulligatawny soup, heck, any soup without rice or noodles or potatoes is great....
beef stew in the crockpot (still delicious even without potatoes... I just add extra carrots, onions, and celery)
confetti spaghetti squash (my own recipe, but you can find it over on the WISH board healthy recipe thread)
change-it-up breakfast bowls (another of my own creations.... on the WISH recipe thread as well)
grilled veggie hummus wraps
Skinny Mom enchiladas (made with low carb tortillas or wraps)
veggie burgers (great for a last minute meal)
pulled pork made with low carb bbq sauce (I make my own)

I'll post again when I get home and check my recipe book and meal planning book!.....P
