Eat at Home 3!

I have a ton of crockpot recipes I can post if you like. Remind me of your food allergies again though...no tomatoes, right? Anything else?
Tomatoes, soy, and citrus are the ones I always have issues with when it comes to crock pot meals.

I do have a soy sauce substitute that works really well though so "soy sauce" would not be a problem.
 
How do you make your pork tenderloin in the crockpot? I'm looking for more crockpot recipes since I go full time soon.

I just made up a lemon garlic and herb marinade type mixture to cook it in. Sorry, no recipe- some of my cooking is just on the fly.
 
Sat - Frozen CPK Pizza (did Target Deal), Roasted Green Beans, Strawberries
Sun - Buffalo Chicken Tenders (and Plain Ones), Cheesy Hashbrown Casserole, Sauteed Spinach, Sliced Oranges
Mon - Chicken Fajita Stir Fry (Zucchini, Peppers, Onions), Green Grapes
Tues - Chicken Tettrazini (no soup jars - gonna scratch the sauce and use less so it's not gloppy) with Onions, Garlic, Mushrooms, and Peas, More Sliced Oranges
Wed - Meatloaf, Ratatouille (Zucchini, Mushrooms, Tomatoes, Green Peppers, and Onions with herbs, vinegar, etc), Homemade Beer Bread
Thurs - BLTs, Baked Fries, Leftover Ratatouille, Leftover Fruit from week
Fri - Take Out or Leftovers

Changed out today's meal for Crockpot Chicken Cacciatore over Orzo with the Oranges. I realized it's been forever since I had all the ingredients I needed (since I don't make it unless I happen to have a wine bottle and bone in chicken thighs I need to use and fresh tomatoes, onions, peppers, and onions) and it was so, so good:). I'll use the rest of the chicken to do either the fajita stir fry or the tettrazini tomorrow...

Boeuf Bourginion (Beef Burgundy in English)

Ingredients:

3 lbs stewing beef
8 strips bacon
whole onion, chopped
2 sticks celery, chopped
8 oz mushrooms, sliced
2 large carrots, peeled and chopped
2 cloves garlic, peeled, chopped
2 cups beef broth (or 1.5 cups broth and half a cup of red wine for a more authentic recipe)
2 bay leaf
flour


Directions:

Pan fry bacon and remove to crockpot, reserve bacon grease.
Add all chopped veggies and the stock to crockpot.
Dredge beef cubes in flour and brown in bacon fat, turned to brown all sides. Transfer to crockpot.
Add bay leaves and stir well.
Cook on low for 7-9 hours or on high for 4-5 hours.
Add salt (if necessary) and pepper to taste after cooking time and remove bay leaves.

Serve over egg noodles, rice, pasta, potatoes or on its own.

**I always use less meat and more veggies and I thicken the sauce further if necessary by taking out a bit of the juices, making a slurry and adding it back to to the pot. I almost always forget the bay leaves. LOL

I've never tried freezing it but I would imagine it would stand up well.

That was our dinner tonight...although my tummy was a bit squirmy, so I could not partake. :sad: If DH doesn't gobble the rest up for lunch tomorrow, I'm going to have some.

Saturday/Sunday: Meeting my parents at DISNEY!!!! Saturday we have BOG reservations, Sunday we have reservations at Yak and Yeti!:love::flower1:

We were bad this last week... one day I picked up dinner on the way home cuz I unexpectedly had to stay late and the other DS was going with his friends and DH and I went separately to a pizza buffet for a school fundraiser. We will do much better this week!

Sun (off): grilled steak with roasted potatoes and rolls
Mon (7-5): smoked sausage with dirty rice
Tue (12:30-9:30): pork pasta and veggies
Wed (8-5): beef and bean burritos and Mexican rice
Thu (6-3): ham, broccoli and cheese casserole

It's been awhile since I've posted on here. I need to get back in the swing of things here. Now with all of the crazy kid schedules I find I'm relying on convienence foods too much. We just got a second fridge/freezer in our garage so I can do more freezer meals and stock up on dairy, veggies, etc.

My first task is to use up what we have in the house, then I can make better meal plans. Trying to keep things inexpensive, healthy, and kid friendly. My kids are 5 & 3, my 3 year old doesn't eat meat so she gets Greek yogurt or peanut butter as a substitute when necessary.

Today (Sunday): Rotini with homemade meatballs & sauce, fruit
Monday: Honey Dijon baked salmon, jasmine rice, steamed broccoli
Tuesday: Cheesy buffalo chicken sloppy Joe's, salad, fruit
Wednesday: Leftovers/fridge clean out
Thursday: Korean beef, onigiri (Japanese rice balls), steamed veggies
Friday: Frozen pizza, salad
Saturday: Crockpot roast chicken, raw veggies w/ranch, fruit
Sunday: Chicken fried rice
Monday: Leftover Korean beef
Tuesday: Chicken enchiladas, raw veggies w/ranch
Wednesday: Leftovers/fridge clean out
Thursday: Lentil taco mac, fruit
Friday: Frozen pizza, salad
Saturday: Chicken & dumplings
 
I got six pounds of pretty summer squash at the farmers market on Saturday. So we will eat trough that plus peas and corn from the freezer for our veggies.

The main courses I am going to try to stick to are....
A double batch of spaghetti so I don't have to cook Tuesday. So sad, it is the last of our summer tomatoes.
Soup beans, biscuits, fried green tomatoes
Beef and barley soup
Friday and Saturday are festival days. I will make sausage balls, chicken salad, pepperoni pizza, green bell pepper pizza (pack those cold), and a bunch of fruit.
I have a jar of "French Herb" mustard sauce for chicken breast.

I onLy have to buy a bag of flour, potatoes, pepperoni, milk, bread and fruit. I might actually keep it under $50 this week.
 
This weekend is Thanksgiving weekend for Canadians so we will be out of town all weekend (or on the road):

Mon-steak fajitas
Tues-naan pizzas
Wed-burgers and mac
Thurs-buffalo chicken wraps
Fri-sandwiches, chips, cookies, fruit (eating in the car while driving to see the inlaws)
Sat-at the inlaws house
Sun-at my mom and dad's house
Mon-driving home (takes about 5 hours) so easy dinner from the freezer, likely a Marie Callendars frozen entree

Wed - Braised Beef Tortellini (stupid cheap) in a Pesto Sauce, Bacon and Blue Cheese Salad, More Strawberries
Thurs - Chicken and Cheese Tortellini (same deal) in a homemade Alfredo Sauce, Sauteed Veg, More clementines
Fri - Asian Green Salad, Fresh Banana Bread (and leftover main dish or poached chicken thigh served chopped and cold over the salad)

Oh, I have those - if I know the kids detest it, I make a 2nd simple dinner (or I leave sauces off before plating). For example, my kids almost never sauce their pasta, so they will eat both tortellinis plain, unless they tell me otherwise. Also, I have a bag of ravioli and a cheese pizza always in the freezer to heat up and serve with the sides I plan if I know a dinner is hated (especially if I'm making it b/c it's a hubby love).

If I think they should like it, then they have the PBJ backup option. And this works for everyone in the family. My oldest never uses that option anymore (but does sometimes still enjoy "plain" for stuff), but my next 3 still get PBJ once a month or so, and sometimes for dinners they've eaten before:). I don't battle over foods b/c I was SO picky and slow til about 9 (where I'd spend 3-4 hours eating a tiny dinner and hating it), so I probably am a squish on this issue:)...

I feel I'm the proof that horrible, picky eaters as kids can grow into food adventurers and gourmets as adults:)...and to be fair to my mom, she never gave me anything she thought I wouldn't eat or in quantities that were too much - I could spend 3 hours eating 1/2 a sandwich and a pile of peas:)...no more, though, although I still eat slower than my whole family, but now I'm in the "normal speed" range:)...
 
For those of you in an area where Hurricane Matthew is approaching- I hope you are safe! We are not evacuating because we're higher up and outside of Charleston, but are well prepared here for the likelihood that we lose power and water. Schools are closed Wed.-Fri. at least, and DH also has off work those days. I went in to work yesterday early mainly to get some projects done and we were making contact with employees to get an idea of who is staying and who is evacuating, but then we closed up at noon. I am glad I was already in the process of using up lots of things we had so if the power goes out we won't lose freezer food. I altered our meal plan and we ate all the leftover stuff out of the fridge last night. Tonight I am cooking the chicken and tomorrow before the storm is set to hit I will make the burritos. DH went to the store to stock up on a few more non-perishable things so we can eat and cook on our camping stoves. We're good with water too. He said so many shelves were bare though. No meal plan for us this week as it will all depend on what situation we're in with the storm.
 
Hit Aldi's (but they were out of acorn squash - sigh) and still need to hit my local grocery for two of killer rotisserie deal this week ($4.99 for a rotisserie chicken, a fresh french bread, and a family sized side dish)...we have a birthday, too, so this will be a little different...

Sun - Rotisserie Chicken, 2 TBD Sides, 1 Fresh French Bread
Mon - Birthday Fondue (Cheese/Chocolate) - 2nd French Bread, Fresh Baby Carrots and Sliced Apples for Cheese; Fresh Pineapple, Banana, Strawberries, and Marshmallows for Chocolate. Puts Melting Pot to shame and saves me the $200 it would cost all of us to eat there, just for cheese/chocolate in the quantities my kids eat:).
Tues - Chicken Stew (Leftover rotisserie chicken, if any, plus both sets of bones to broth, sweet potatoes, onions, carrots, celery), Beer Bread, Strawberries
Wed - Leftover Chicken Stew (plain ravioli for kids), Caesar Salad Bag, Pineapple and Bananas
Thurs - Roast Beef with Roasted Mushrooms and Onions, Mashed Potatoes, Sliced Apples
Fri - Leftover Beef Sandwiches, Baked Fries, Whatever Fruit I have left (or what I get shopping)
Sat - TBD (I think we are gonna use an Indian restaurant groupon to celebrate the birthday member out:))...
