CHALLENGE:
I'm going backpacking with friends next weekend and I'm in charge of a breakfast. There will be four women, including me. This is full on backpacking, so I'm looking for something light (I'm going to have a hard enough time carrying my pack as it is), nutritious, and easy to make. We won't have a campfire but we will have a propane burner. Any and all ideas are appreciated.

Cool- where are you going backpacking?
My boys are in Scouts and my oldest did a 50 mile Appalachian Trail backpack trip every year (different sections) from 8th-12th grade. The younger one enjoys doing the smaller trips under 20 miles. I did a 16 miler with them a few years ago and really had fun. Some things they like for breakfast are:
*oatmeal and dried fruit- pineapple, apple, banana, raisins, etc.- they heat the water and pour it right into the little pouches and stir
*peanut butter (those little Jif to go packs) and raisins wrapped in a flour tortilla or on a bagel
*English muffins (you can get stands that will toast them on the propane burner- they are in the camping section) with butter and/or jelly (they bring little packets)
*oldest likes eggs and you can get them in the camping section for taking backpacking
*cereal (either in the small boxes or packed in a baggie) with milk (you can get small non-refrigerated cartons at most grocery stores)
Hope that helps!

Did leftovers one night last week to clear out some stuff in the fridge, so that's one meal to carryover to this week. My work schedule changed so I had to work Wed. night but am off today, Sat., and Sun. now! DS leaves after dinner tonight for a work weekend at the Boy Scout camp. I'm using recipes this week that can share ingredients, are using things already on hand that I need to use up, and some that will make extra things to be added for next week, which will make for a quick cheap shopping trip. Here's the plan:

Tonight (off): breakfast for dinner- homemade waffles with fruit, bacon and sausage
Sat (off): date night- DH and I going to dinner (I do have a discount for here though!) and then to see the Pops Orchestra Broadway show
Sun (off): sausage rolls with potato pancakes
Mon (7-5): fancy chili
Tue (12:30-9:30): ham, spinach, and cheese galette
Wed (8-5): crock pot roast with veggies and pierogies
Thu (off): Dijon crusted pork chops with pea salad
Fri (1-10):garlic fiesta shrimp/chicken with rice

Have a great week y'all!

I am so happy to be home from my work trip. Going shopping for tomorrow for the week.

Wednesday: Leftovers-I have my workout class
Thursday: Breakfast nachos, but I am halving it http://www.delish.com/cooking/recipe-ideas/recipes/a49023/breakfast-nachos-recipe/
Friday: Leftovers of ^^^ or breakfast for dinner of some kind (we also have pancake mix so we will make it work)
Saturday: Tortellini and alfredo sauce, broccoli
Sunday: Leftovers or frozen pizza (or both)

Monday: Costco rotisserie chicken, rice and carrots
Tuesday: Sloppy joes on baked potatoes
Wednesday: Pork Chops, mashed potatoes, green beans
Thursday: Leftovers

Last night was dinner at the Drive In. It was the last time for the season, so we brought a cooler with healthier snacks and drinks, but bought fries and gravy and popcorn there. We eliminated all eating out for a few months leading up to our next trip and we put that money into the trip funds. A few treats at the drive in last night was our only eating out in the last while so we're doing well.

Saturday- Homemade veggie pizza on a thin crust , bbq pork chops, carrots

Sunday- Dinner at my parents

Monday- Just ds12 and I as dh is teaching a class. Will make pasta so dh can heat some up when he gets home late.

Tuesday- BBQ chicken thighs, baked sweet potato fries, salad

Wednesday- Breakfast for dinner (eggs, french toast, smoothies, fruit)

Thursday- Chili for us, not sure for ds12 just yet

Friday- Wraps (ground beef, cheese, veggies, spices in tortilla)

I didn't stick to the plan very well this week. I will try harder.

Monday- Pork Indian rice dish (I have a fancy seasoning packet)
Tuesday- Chicken casserole and broccoli
Wednesday- taking Chicken Alfredo and green beans to our Aunts house
And if my pasta roller comes...
Steak gargonzola
Pasta with sausage and tomatoes
Creamy Cajun chicken pasta
Chicken cacciatore

That sounds really good. I'm always interested in new slow cooker recipes as I feel I will be doing a lot of them this fall/winter as I go full time at the museum PLUS picking up shows at the theatre AND still doing my online job not to mention all the family events that happen during this time. The slow cooker will be my best friend so I can have real food at my busiest!

Thanks! I got this recipe from a friend a fool proof

Last week was rough. I worked two unexpected open to closes which threw off dinner plans. Plus I went to the doctor yesterday and I have Bronchitis so mom picked us up dinner from Outback. This week will be rough as well. The boss is gone so I am working a ton of hours. I hope to get out to the grocery in a little bit if I feel up to it to grab groceries.

Hey op here Been a really long time since I posted life gets crazy busy when you move. Anyways need to stick to meal plans again it's so easy just to grab a pizza or want to go out. Here's what I have so far for this week

Thursday orange chicken and fried rice
Not sure about Friday but maybe chicken sliders and not pasta salad

I googled slow cooker freezer meals- I did a shop and prep one day to have it all in the freezer and ready to go-had to remember the liners for the slow cooker for easy clean up LOL. Then I did a menu that included that meal+side/veg/additional ingredients I might need and pinned it to fridge

My freezer meals included (haven't tried them all yet):
beef stroganoff (serve with noodles and green beans)
Apple and cherry pork roast (potato and carrots)
Honey Dijon pork chops and green beans (served with orzo-was pretty good)=good leftovers as well
Teriyaki chicken(rice, sugar snap peas)
Chicken with artichoke and wine sauce(angel hair pasta and salad)
Cranberry beef roast (noodles and peas and carrots-this made a bit with leftovers-turned it into lettuce wraps with addition of soy sauce, sweet pepper strips, and crunchy noodles-funny how the kids don't like "salad" unless they can make it into a wrap LOL-this is so good I found people were "picking" at it cold)
Honey bourbon chicken (also pretty good-leftovers for me were good topped on a salad)
Beef stew (will do with cornbread-can mix that up when I walk in door-then relax with a glass of wine while it cooks:))
Beef and broccoli (rice-kids LOVE chinese and I LOVE my rice cooker)
Rotisserie style chicken (seasoned, add carrots, quick boil potatoes or pasta)-bonus-use dirty slowcooker to toss bones back in with 8 cups water, tops of carrots and onion along with any leftover herbs-low overnight and voila-homemade stock! I use any leftover chicken in a soup or in a chicken salad with grapes and pecans)

My go to
Cheese ravioli with spinach and bacon (Keep frozen ravioli and bacon on hand-cook bacon-use some of the grease to saute garlic, add spinach and toss with cooked ravioli top with a bit of parmesan-15 minutes for an all in one meal.)
Nachos (Rachael Rays "Uber Nachos"- I make extra cheese sauce to freeze, & will chop onion, jalepeno and garlic and freeze when garden gives great quantities, or use a can of rotel as even easier quick meal):)
Homemade baked mac n cheese(can use frozen cheese sauce for quicker meal with less cleanup)
and homemade "hamburger helper" Cheeseburger Macaroni.(using leftover cheese sauce results in less pots needed)
Parmesan tilapia (sams club-with a can of cream corn and frozen steamable broccoli as sides even the kids can start dinner)

Tonight was grilled chicken, cheesy potatoes and brown sugar carrots.
As we are leaving this weekend for Family weekend at DD college this week may be more "quick" meals to avoid many leftovers-probably fish, mac n cheese, pizza and using up any leftovers.

I thought I was doing well this month until I discovered I was out of bacon today! I am NEVER out of bacon!:rotfl2:

I've watched several VLOGS where they shop once a month and thought I'd give that a whirl in September. Alas!! It was a spectacular fail!!

PROBLEMS:

It didn't save me time (I shopped FOREVER at far too many stores in the heat and humidity and that was my whole day)

It didn't save me money (I did buy a bunch of things for my food storage though, which the vloggers don't really do, so maybe this point is not fair)

I spent ahead for October so I could take advantage of a great sale price on cereal and toiletries last weekend (A HUGE no-no of mine but my money was all gone and I wanted to stock up at the sale price)

All the extra stuff in the fridge and freezer is stressing me out (I worry about spoilage and waste)

I absolutely HATED the entire process!!

I guess it's safe to say that once a month grocery shopping is not for me. :rotfl2:
I'm a very successful weekly shopper and biweekly shopping is my sweet spot, so I think I'll go back to what I know next month.

In the meantime, I have a house FULL of food and $30 for milk and produce for the 19th and another $30 for the 26th. Otherwise, I'm broke. And I'm really low on flour. :sad1:

Alright...enough complaining!

Because I shopped for the month, I did have to do a meal plan for the month but I think I'll just continue to post weekly on here.

Mon-leftovers (we had company on Sunday and made an elaborate chicken dinner feast with 2 large chickens...we'll be eating the meat up all week)
Tues-chicken taco chili in the crockpot with copycat cheddar bay biscuits, salad
Wed-spaghetti bolognese, not sure of veg
Thurs-chicken pot pie
Fri-crockpot pork tenderloin, fried potatoes or rice, some sort of frozen veg
Sat-homemade calzones
Sun-chicken and noodles, broccoli**

Although I do have a meal planned, in all honesty, I think Sunday will be a leftover night. We have some big meals all in a row there and there's only so much that can be used up for lunches. After Friday, I'll see where the land lays, but if we have lots of food in the fridge, we'll clear it out at dinner on Sunday for a fresh start to next week.

We got back from vacation Wednesday, so back to the meal board:)...
(done) Wed - Italian Subs, Goldfish, Strawberries

Hosting multiple adult guests tonight for a game and dessert, so made an "easy dinner and dessert" run today...also broke my microwave Friday and won't get a new one til Tuesday, so that is annoying for defrosting/dinner prep (gonna avoid defrosting til then) - also have to run out Tuesday for a few extra things, so will finish my plan then...
Sat - Italian Subs, Berry Bowl (on big pre-prepped sale, but you had to get 3, so we'll have 3 different ones in a row:)), Chips - and for dessert for fam and friends 2 dozen assorted bakery donuts ($10) and decaf coffee

Mon - Cheese Quiche (with Milk) - missed quiche last week, Sausage, Mango/Mixed Berry Bowl, Orange Julius Smoothies
