Eat at Home 3!

Does anyone do weekly theme nights when meal planning for the month? I know a lot of people do Taco Tuesdays and/or Meatless Mondays. Any others?

We don't really. Wednesday often tend to be something easy and fast because my son has Cubs, I run Activity Girls and my daughter goes to her Young Women's group and we need to get out the door on time. But otherwise, we are pretty loosey goosey. We did try themes in the past but we found them too confining.

No real themes, but I do tend to plan easier dinners Tuesday and Thursday nights because those are my two hardest days at work, and we have Scouts Tuesday night. We grill a lot in the summer on Sundays, and even grill for other meals throughout the week. During football season Friday meals have to be something quick that can be reheated because DS has to be back at school for band earlier and DH and I eat a little later. Sometimes in the fall I will make something that doubles as two meals in the crock pot on Sundays, and then use it for a busy weeknight.

No themes for specific nights here. It is just DH and I so I don't even commit the meal plan to specific nights. I plan and shop for the week and decide what meal is for tonight and what we might want tomorrow night. I prep a few to make life easier. I almost always cook too much so leftovers are often available.

-Sunday was a super yummy mushroom, corn and spinach chowder with bacon
-Monday was homemade yakisoba
-Tuesday we did nachos
-Yesterday I made butter chicken with jasmine rice. This made plenty of leftovers which is good cause I work for the next couple of days in a row and wont have it in me to make dinner. If we run out we'll have sandwiches.
Also in the menu
Shredded bbq beef with mac n cheese and fruit
French dip sandwiches with leftover beef
Homemade pizza.
I have everything except for meat toppings for the pizza. Was thinking genoa salami : )

I started doing themes a few months ago and it really helps with my meal planning.

Monday - International night (Mexican, Asian, etc.)
Tuesday and Thurday - a made ahead casserole or slow cooker meal, these are both busy sports and activities nights for us so I like to keep it simple
Wednesday - pasta night
Friday - pizza night in some form, can be delivered, frozen, dip, soup, etc
Saturday - usually movie night so I'll make something to go along with the movie or DH will grill out
Sunday - we tend to go with a big family meal

I do not do themes. My work schedule is too variable (for example this week I have/will work: Off Sunday and Monday, 7AM-6PM Tuesday, 7AM-3PM Wednesday, 4:30PM-8PM today, off tomorrow, 2:30PM-7:30PM Saturday) so my meal plan is also variable. I can't plan "meatless Monday" because I don't know what I will work every single Monday, what I have time to cook, or even if I WILL cook or have leftovers (or if I have an event to go to that will feed me instead).

I am traveling for work this week (gone Th-Sun) so I'll be making some dishes Sunday to freeze/eat through the week/have for H to eat while I'm gone. I am also making some red sauce to have on hand and making sure we have frozen pizza, pasta, soup, etc. on hand for easy and quick meals.

No particular order of what we are eating what day but I am making for the week:

Tex Mex Casserole: http://www.melskitchencafe.com/tex-mex-enchilada-casserole/

Marinated chicken with this: http://allrecipes.com/recipe/241890/grilled-chicken-marinade/ and then baked with some kind of frozen veggie on hand

Black bean pasta http://allrecipes.com/recipe/117622/black-bean-pasta/
