Eat at Home 3!

I missed posting but have a plan I am following. Last plan went out the window with the BBQ so I reworked it into this week. Grand daughters are visiting this weekend so I need a new plan and groceries by Friday. Lots of saving to do here - I just picked up my new car! Eeks!
 
I'm trying low carb and it's been boring!

Basically grilled chicken and salad. I do make sides for my family and they have their usual breakfast and lunches.

Tonight is pasta night, so just I may have a veggie scramble.

Are any of you vegetarian or vegan low carb dieters?

I eat meat, but I like to do so sparingly. All of my veggie recipes consist of pasta, tortillas, beans and rice!
 
@GlitteryOtters Sorry to hear you all were sick! At least you got it out of your way BEFORE your vacation!

Saturday the kiddo was really sick and hubby is fighting off some sort of cold. Knock on wood* I've been feeling great so I hope everyone gets it out of their system before our vacation next week o_O

Here's what I've made and have planned so far:
Sunday- Grilled chicken, baked potatoes, corn on the cob, and green salad
Monday- Crock pot pork chops and gravy, Stove Top, steamed broccoli. I made M&M's cookie bars, YUM!
Tuesday- Ham, broccoli, & cheese noodle casserole
Tonight- Out for pizza to meet up with a friend
Thursday- Breakfast for dinner maybe?
Friday- Not sure?
Saturday- Frozen app night
Sunday- Game of Thrones watch party :goodvibes Grilled chicken fajitas and a friend is bringing a Dragon cake... not sure what it is but sounds great and fun!

Booked our next Disney vacation on Monday so I've been all consumed with ADR's and plans that I forgot to post this weeks menu. We did perfect last week, everything went according to plan :)

This weeks menu is

Monday - Kung Pao chicken with lo mien noodles
Tuesday - burgers on the grill, fries
Wednesday - spaghetti with meat sauce, garlic bread
Thursday - chicken and rice casserole
Friday - pizza, salad
Saturday - Girl Scout thing, taking the girls out somewhere afterwards
Sunday - grilled sirloins, cheesy grits, asparagus
 
We followed the menu plan for last week with one exception- we switched our go out to eat night on Sat. with Mon. so we actually went out on DH's birthday to celebrate.

I just went grocery shopping on the way home from work today so I've got the next week planned and ready to go.

Fri.- beef enchiladas
Sat.- out to eat after church
Sun.- pinwheel sandwiches with fruit and chips & dip
Mon.- chicken tostados
Tues.- pasta carbonara and salad
Wed.- seared pork chops with roasted potatoes and green beans
Thur.- sticky chicken with kale and creamy rice
Fri.- chili cheese dogs and fries (DH and DS requested)

Tuesday - beef stroganoff / peas
Wednesday - black bean burgers, baked sweet potato fries
Thursday - taco salads
Friday - grilled fish, couscous, broccoli

I eat meat, but I like to do so sparingly. All of my veggie recipes consist of pasta, tortillas, beans and rice!

Whenever I'm in my vegetarian phase (usually when I'm doing well $$$) I mostly cook Indian/middle eastern, Moroccan abd Greek recipes. I don't like to eat much pasta, and while I don't mind rice every so often I tend to stay away from it as well, so usually I'll just eat whatever vegetarian meal by itself as a main since they're usually pretty filling.
 
This week's plan. Groceries bought yesterday so ready for grand daughters visit, even a few meals prepped and ready to serve.

Chicken enchiladas & salad ✔️
Chicken pot pie (America's Test Kitchen)
Mac n cheese & fried gr beef. /Gr peas ✔️
Italian sausages & risotto ✔️
Hamburgers /veggie platter
Beef /fried rice /veg stir fry - changed to pork fried rice and veg stir fry with pot stickers.

Love Aldi's "fruit picks" weeks...had my monthly trip there, b/c we loved all the fruit listed and were out of our pretzel rods and dried cranberries (and the 95 cent eggs and $1.49/lb chicken breasts helped:)...here goes

Sun - Rotisserie Chicken (from my other shop today), Roasted Brussel Sprouts, Homemade Beer Bread (using my spouse's own homemade beer and an Aldi mix we like), Berry Salad (Strawberries, Raspberries, and Blackberries)
Mon - Chicken Enchiladas, Chips with Guac and Salsa, Clementines
Tues - Honey Mustard Chicken Breasts, Tomato Chive Salad, , Homemade Apple Cinnamon Muffins, More Berry Salad
Wed - Meatballs in Marinara Sauce, Cold Pesto Pasta Salad, Apple/Pear Slices
Thurs - Leftover night - if we have none (but I expect we will), this will Chili Mac (I have a Progresso bag chili to try that was clearanced from Target and some mac and cheese - both mixes that save til I need them) with Diced Strawberries and Kiwis
Fri - Frozen Pizza, Fruit Smoothies (with leftover fruit)
Sat - At 1st communion dinner for a relative

I need to get back to posting, I do so much better when I have a list made out. Our goal is to not eat out for 13 days.

1 - German sausage, kraut, peas, roasted Brussel sprouts
2 - BLTs, pasta salad, fruit salad
3 - chili Mac and corn
4 - baked ham, apples and peas
5 - ham quiche, fruit salad
6 - Waffles with fruit topping, sausage
7 - spaghetti
8 - patty melts, fries
9 - fried chicken, biscuits, peas, corn
10 - pepperoni, sausage and bell pepper pizza
11 - beef burgundy, noodles, veggie medley
12 - roasted chicken thighs, gravy, rice, peas, carrots
13 - Mexican casserole

Except for some butter, fruit and a bottle of red wine I have all this in my fridge/ pantry/ freezer. It is time to use up our deep freeze so I can start over. I am not happy with how it is organized. Easier to eat it than fix it!

I am going to try really hard to only spend $15 next Wednesday, and the next Wednesday on groceries. Ideally 2 OJ, milk, and produce. Fingers crossed that the Aldi ad is good :)

So, I am still on my super strict budget of $100 for 2 weeks and it includes any paper products, household needs, kitty litter, meds, and stuff like that. This will be for the foreseeable future so I can pay off credit cards that I let go (I know, bad me, but I'm trying to change I swear). Those payments are currently $220/month. I also downgraded my cable to basic cable and internet and have saved $100+ per month with that simple change (CRAZY!!).

I did my grocery shopping today and only spent about $75 so I came in $25 under budget.

Sunday: Leftover lasagna
Monday: Split pea soup and bread in the bread maker
Tuesday: Leftovers
Wednesday: Honey soy chicken thighs and veggie fried rice (have some asparagus and zucchini to use up)
Thursday: Leftovers
Friday: French toast casserole and sausage patties
Saturday: Leftovers

Sunday: Brats/Italian Sausage with corn on the cob (Kroger had 2 packs for $5 on the sausage which is 10 links. I will cook them all up at once and eat off them awhile)
Monday: Leftovers
Tuesday: Leftovers
Wednesday: Cheese rigatoni and meatballs, roasted red pepper sauce, and garlic bread
Thursday: Leftovers
Friday: Twice baked potatoes and a veg of some sort (bought a 8lb bag and will bake them all at once and freeze the extra)

Sunday: Belated Cinco de Mayo party at a friend's house! (Also Gen Con event registration day which is the one "splurge" for the month).

Wednesday - chicken fettuccine Alfredo, salad

Thursday - beef enchiladas, tacos, rice and beans and of course a margarita or 2, I'm allowed its Cinco de Mayo after all

Friday - dinner out after DD's softball game

Saturday - grilled sausage with onions and peppers, potato salad, beans

Sunday - Dinner at my MIL's which my DH and his brother will be preparing, on the menu is lasagna, chicken franchise, zucchini noodles in lemon butter sauce and salad. MIL is making her famous chocolate cake and fruit salad for dessert, yum!
 
Last Week's Plan:

Monday- rotisserie whole chicken on the bbq, some sort of side and veg (had the chicken with baked potatoes and salad)
Tuesday- thinking stuffed pasta tubes, salad, garlic toast- we still have these in the freezer (MIL had made a huge pot of stew and gave us some of that after DD's football game)
Wednesday- Dinner at the farm with outlaws - (We all had spaghetti at the farm)
Rest of the Week:
Driving to Alberta to Comic/Entertainment Expo we volunteer and work as security with the guests (Some past guests I have worked with include NPH, Carrie Fisher, Peter Dinklage, Jillian Anderson)- this will be mostly eating out dinners (lunches are provided) Planned and budgeted for.

This Week:
Tuesday: Not sure- I'm thinking stuffed pasta tubes I have had frozen for a while and ceasar salad (we had some frozen appies out of the freezer and salad, DD had eaten with outlaws)
Wednesday: stirfry or fajitas as we have lots of peppers (either with pork tenderloin or chicken breasts) (we had BBQ chicken salads)
Thursday: BBQ'd chicken parts (I think we have some divided from a big pack thighs and drumsticks) quinoa and veg (bbq chicken drumsticks, rice, corn)
Friday: BBQ'd ground pork burgers, homemade fries (we had stuffed pasta tubes, salad, garlic toast )
Saturday: Salmon, rice, peas and corn (frozen pizza and nachos :fat:)
Sunday: Mother's Day- the boys are cooking at the farm

Fri.- chili cheese dogs and fries (DH and DS requested)- making Wednesday for Star Wars Day- Jabba the Hutt dogs, Vader taters, Yoda soda, and Storm Trooper scoopers
