Still cleaning out the freezer. I figured out we have two more weeks of food before we finally run out.

Monday: Meatballs with French Green Beans
Tuesday: Lasagna and Corn
Wednesday: Leftovers
Thursday: Mahi with Rice
Friday: Bacon Topped Turkey Meatloaf
Saturday: Clearing out some old frozen appetizers for lunch and Leftovers for dinner
Sunday: Pulled Pork from the Freezer
 
Hello All. I ended up having to order pizza last Friday when my daughter brought home two friends for the evening. I will make the goulash this week instead.

Sunday: Roasted Chicken, slow cooker macaroni and cheese, green beans

Monday: Goulash, cucumber and tomato salad and rolls

Tuesday: Black peppercorn marinated steak, mashed potatoes, steamed broccoli

Wednesday: Tamales, Spanish rice, beans, guacamole and chips

Thursday: Jambalaya, white beans and cream styled corn

Friday: Spaghetti and meatballs, salad and yeast rolls

Saturday: Beef and Broccoli, Fried rice and eggrolls

A friend is with us for the night so I am making hamburgers with french fries and apple slices for dinner. Plus blackberry cobbler for dessert
 
I'm so excited that I found this thread! I'm going to go through it for dinner ideas. DH is on a low-fat high iron diet until he gets his gall bladder out, and he has a very limited palate. I usually have to cook his dinner on the side and make something more interesting for DS (6) and I. Here's my plan for this week:

Monday:
Baked Panko Chicken Tenders
Roasted Marinated Cauliflower
Roasted Potatoes

Tuesday
Chicken & Rice w/ corn
Garlic, Chicken & Broccoli stir-fry

Wednesday
Church night, Grilled chicken sammy for DH w/ raw veggies

Thursday
Tuna & Noodles
Seared Salmon
Salad

Friday
Birthday dinner for Nannie at Olive Garden

Saturday
Birthday party for Nannie

Sunday
Peter and Star Catcher @ Kennedy Ctr

So far here is my line up for the week -
Sun - BBQ chicken drumsticks, baked beans, mixed veggies
Mon - Leftover BBQ chicken (we had a huge package for some reason), corn casserole, carrots
Tues - Chicken Fajitas and ??
Wednesday - BBQ pork ribs, chopped salad, cottage cheese,
Thursday - Frozen Lasagna, Garlic Bread,
Friday - Lefts
Saturday - Lefts or soup
Sunday - wing, crescent dogs and other Super Bowl foods I can round up.

This is what I have planned this week so far...

Sunday (yesterday)- carnitas in a red chile adobo sauce, tortillas, all the fixings for tacos, and refried beans topped with cheese as a side.

Monday- chicken thighs and breast in fricasé de pollo (a Cuban criollo sauce of tomatoes, onions, garlic, peppers) with carrots and white rice. Probably some platano maduros (ripe plantains) fried on the side. This may become arroz con pollo instead depending on how I feel when I get home lol.

Tuesday- spaghetti and Bolognese sauce. Garlic bread.

Wednesday- homemade ramen noodle bowls (I make my own broth, use the noodles from the ramen packets), cook up some ham/Canadian bacon, fry an egg on top, garnish with scallions.

Thursday- leftovers/sandwiches/fend for yourself night. I have a late class so I won't be home until after 8.

Friday- Homemade pizza, buffalo chicken and Margherita pizza.

Saturday- taco night!

Sunday- I am having gallbladder surgery the 7th of February and want to stock up on precooked meals. So I'll be making freezer & crock pot friendly meals so we can have home cooked meals while I'm recovering. My mom lives with us so she'll be helping with the baby and I want to make sure she doesn't have to cook too.
 
I've been doing well cooking out of the freezer and pantry, but still no plan!

We had an asian chopped salad for lunch yesterday, pan fried pork chops for dinner. I used the stew meat for beef and noodles and made chicken burritos out of the frozen shredded chicken I had.

I just used a lb of ground beef and a lb of ground pork and made a big pot of chili. Its in the crock pot. Perfect for the busy evening that awaits us. Then we can have chili over baked potatoes later in the week.

No clue what tomorrow will bring, but determined to keep opening the freezer and avoiding the store!

School for the kids has been called off again for the next two days because of the cold. Now I have to wait and see if school is called off for me tomorrow. I didn't go today because I would have to take the bus. My husband had the car. Looks like it may be a chicken and dumpling night tonight.
 
Okay...Friday night the company arrived IN TIME for dinner, not afterwards like we were expecting so we just ordered chinese take out for everyone. We had enough leftovers remaining that we just had them for lunch the next day instead of the spaghetti we had planned to make.

Saturday night was the big turkey dinner and we had the leftovers for dinner last night, once all our company had gone home.

I have about 1.5 lbs of ground beef in my fridge that didn't get used for the spaghetti so I'm making a big lasagna for tonight and we have rolls and ceasar salad to pair with it.

Hi everyone, our week is tooo busy this week just busy enough.. it's Hubs, DS and myself.. Hubs and I are on week 2 of they gym and week 5 of the 52 week savings plan I found on FB..

Monday - we had teriyaki steak tips, seasoned fries and roasted corn..
Tonight - we are having sloppy joes
Wednesday - we are having soft and hard tacos
Thursday - we are having leftovers (as of today we have steak, corn, chinese from Sun plus I expect some sloppy joe and tacos meat)
Friday - we are having frozen pizza
Saturday - my mom is coming down so we'll likely eat out
Sunday - meatloaf - i think..

Hope everyone has a happy healty week :)
 
I don't have specific days planned but here is the list of meals.
Sunday-we had leftovers
Monday- made chili and cornbread
Tuesday-homemade hamburgers and fries
Rest of the week:
homemade pizza
fifteen bean soup
spaghetti and meatballs and garlic cheddar biscuits
breakfast for dinner--eggs, bacon, waffles, breakfast fries
chicken tenders/nuggets, baked potato/baked sweet potato
steak, mashed potatoes, green beans, rolls
 
Yesterday we had Broccoli Soup with Cashew Cream. Very good.

Tonight we had homemade Calzones with spinach, onion and mushroom filling (in tomato sauce) and steamed broccoli. (Yes, broccoli was on sale this week!)

Would you mind sharing your Butter Chicken recipe? This sounds delicious to me. I have googled recipes, however they call for garam masala and tandoori masala. Where do you get these spices?

I get my spices from my local grocery store (in the spice aisle naturally) :rotfl: or at Bulk Barn which has a HUGE spice variety.

The butter chicken recipe is a crockpot one that I have not yet tried:

1 lb boneless, skinless chicken breast, cut into bite sized chunks
1/2 onion finely minced
2 tbsp butter
3 cloves garlic, minced or grated
1 tbsp freshly grated ginger
2 tsp curry powder
1-2 tsp curry paste (thai red curry paste or something like that)
2 tbsp garam masala
1/2 tsp tumeric
1 tsp cayenne pepper
1/4 tsp salt
1 (6 oz) can tomato paste
1 (14 oz) can coconut milk
1/2 cup yogurt (greek is preferable)
1/4 cup half and half or heavy cream

**cooked white rice and naan for serving

In a large glass measuring cup or bowl mix together coconut milk, yogurt and cream. Stir in tomato paste, garlic, ginger and all spices. Mix well.

Spray inside of crockpot with cooking spray or grease with oil. Add onions, chicken, then coconut milk mixture so chicken is completely covered. Toss in butter and put on lid.

Cook 4 hours on high or 6-8 hours on low.
 
I need a vacation. My life right now has been nothing but stress. Applying for jobs, packing up the house, dealing with selling/auctioning the house, finding a place to live... I need a day or two of NOTHING. So I am trying to eat out of the freezer and pantry, save money as much as possible, and make enjoyable meals as a way to "relax".

Yesterday: Steak sandwiches with peppers, onion, and mushrooms and roasted broccoli
Today: Coconut Crusted Mahi Mahi and roasted sweet potatoes
Thursday: Steak, Eggs, and Hashbrowns
Friday: Split Pea and Potato Soup with Corn Muffins
Saturday: Leftovers
Sunday: Garlic Butter Chicken Wings, Cheesecake Dip, French Onion Dip and Chips, and Vanilla Bean Frappes
Monday: Chicken Alfredo over rice and peas
Tuesday: Flatbread of some sort
Wednesday: Swedish Meatballs, egg noodles, and roasted broccoli
Thursday: Blueberry pancakes and bacon
Friday: Caramelized Shallot, Spinach and Goat Cheese Garlic Butter Pasta
Saturday: Fried Pork Chops, Eggs, and Potatoes
Sunday: Roasted salmon, orzo, and a vegetable
Monday: Roasted butternut squash ravioli in sage butter sauce
Tuesday: Crispy breaded pork chops with milk gravy, mashed potatoes, and a vegetable

And that is as far as I have gotten. Will work on the rest of the third week in the next couple of days. I know I will make some soup. Maybe a turkey breast (I have like 4 in the freezer lol). Yea, thinking a turkey breast will be sometime that week!
