Tonight - crock pot beef short ribs, already smelling great, and mashed potatoes


In random order...
Chicken fried rice and egg rolls
steak and baked sweet potatoes
Chicken tacos, rice
 
This week we are having:

Grilled pizza with caramelized onions, apples, and Brie

Chicken parm meatball subs

Beef and butternut squash tagine and rice

Spicy sausage pasta

I'm also making pumpkin pie cupcakes and spinach-artichoke bites to take to a potluck.
 
It was a really tough week around here. Mom is still in the hospital. She is doing better but the doctors thought it would be easier on her to be there until her surgery tomorrow.

My Grandma was admitted into the ICU (at a different hospital all the way across town) on Friday morning. She has since been moved to a regualr room but things do not look good in the long run. Still waiting to hear more from doctors.

I have also been dealing with other work and life realted problems. So needless to say dinners have not been fabulous. I have been eating lunches at hospitals and having quick dinners at home like soup, sandwiches, frozen meals, and tacos (meat was in the freezer). Hopefully things will settle down soon and I can get back to cooking everynight. I miss it.

Is there any of your friends that will make you some meals? My neighbors brought me casseroles last time my youngest DD was in the hospital. It wasn't expected but appreciated. Tomorrow my oldest DD goes in for her heart ablation. I am putting a crock pot meal together for my hubby for tomorrow night. He will have to fend for himself if we are in the hospital for more than one night.
Anyway. I know your family appreciates you taking such good care of them. Now you have to give yourself a break!
 
M-Frito pie, made with crumbles, two small cans of tomato sauce, two cans of kidney beans, onion, garlic, chili powder, cumin, paprika and oregano. Broccoli, carrots and cauliflower.

T-Cheese ravioli, tomato and basil sauce, garlic bread and Italian salad (greens, tomatoes, cucumbers, olives and banana peppers)

W-pork chops, acorn squash, garlic green beans

T-breakfast burritos (scrambled eggs with onions and peppers, grated cheese, tater tots and salsa) diced melon and sliced bananas.

F-chicken casserole

S-homemade pizzas, salad, pumpkin bars

S-pumpkin pancakes, scrambled eggs, fresh fruit and veggies
 
Saturday: Chili
Sunday: Baked chicken, mashed potatoes, gravy, stuffing
Monday: Left overs from Chili
Tuesday: trying to re-create the "Holiday sandwich" from Earl of Sandwich. lol getting some nice Italian bread toasted, and putting warm chicken, gravy, stuffing and cranberry sauce together. Should be good!!! :)
Wednesday: Probably a pizza
Not sure about the rest of the week

My mom's surgery went well. It was more involved than they thought but it went well. She should be home in a few days. My aunt treated me out to dinner afterwards.

Ive been following this thread for awhile, thought I'd finally contribute.
S: hamburgers/veggie burgers and fries
M: vegetarian shepherds pie and buns
T: baked pasta and caesar salad, chocolate sticky buns for dessert
W: DS10 has cross-country, I think ill pull some tomato soup from the freezer and make grilled cheese to go with it
T: spicy tofu with wontons, pear crumble for dessert
F: homemade pizza
S: broccoli quiche, still need a side to go with it

JulieODC: I love brie, apples, and caramelized onions together, I usually put them in a quesadilla.
Iwasdaisy: thanks for posting the orange julius recipe, I loved them as a kid, and im going to try it this friday

I use a can of concentrated orange juice, splash of vanilla extract, ice cubes, and about a 1/2 cup milk. Then I blend it all up in the blender. Sometimes I'll add a little more milk or even a pinch of sugar, depending on the brand of oj concentrate. It's pretty simple and my family loves them!

My menu was disrupted this week for a wonderful thing!!!!

My newest granddaughter arrived on Tuesday! She is perfect! Her name is Aubrey Fay and already has her daddy wrapped around her tiny finger. :goodvibes

So, Tuesday, dd and I jumped out of bed at 4:30 am and took off to the hospital to wait for little bit to make her appearance. At 3:30 pm we finally left the hospital after much hugging, kissing and rocking (no sense in putting the spoiling off a day or two! :rotfl:), took off home and got ready for the Powder Puff football game. WHEW! We were exhausted by 9:30 when we finally headed home. So Tuesday meant breakfast at Hardee's, Lunch at Subway and Supper at the ballgame!


Last night I was sooo tired still but cooked shrimp in the oven (with butter, a little olive oil, seasoning salt, 1/2 packet of italian salad dressing and a little crab boil) and we had shrimp, salad and french bread. It was really good.

Tonight will be leftovers.

I'm late to the party this week so I'll recap a few days but also go into next week!

21 = Rotissere Chicken, mashed potato (cauliflower for me) and green beans
22 = Tacos for the boys - Taco salad for me (no Taco just taco meat)
23 = Turkey Scallopini, mashed potato (cauliflower for me), stuffing for the boys and green beans
Today = Chicken tenders and pasta roni for the boys, green beans for all, gorton's shrimp scampi over sautee cabbage for me
25 = Market Basket 3 meat pizza for the boys, Atkins meal w/ extra veggies and nuts for dessert for me - I will be scrapping all weekend!!!
26 = Family will order out - likely to be Chinese! I will again be scrapbooking so I'll pack my lunch box again with an Atkins meal, extra veggies and nuts for dessert
27 = DD has requested Chicken Kiev, instant potatoes, and fresh green bean, DS will have chicken nuggets, stuffing and canned green beans, Hubs will have Chicken with apple and brie, stuffing and fresh green beans and I will have grilled chicken with sautee cabbage and fresh green beans.. WHOA lots of dishes this night!
Monday 10/28 = Hubs will have cube steak, eggs, tater tot hashbrowns and I will have baked tilapia and sautee cabbage
29 = Hubs will have cheese ravoli with meatballs and sauce and I will have a stuffed zucchini and salad
30 = Hubs will have his leftover pot roast dinner and I will have gorton's shrimp scampi over sautee cabbage
31 = Halloween! Pork scallopini and fresh green beans, hubs will have tater tots and i'll have the last of the cabbage..
NOV 1st -- I'll stop here because I am going to visit my parents for the weekend!

My first time here (what was I waiting for?) and I'm getting some good ideas! So TY!

I plan my full week's menu every week, by Sunday at the latest. Family is me, DD9, DD7. We are out of the house 7am-6pm every day, because I have to commute 1 hr each way. Because of this, I only cook labor-intensive dishes on Sunday, and I only shop on Sunday. Planning for next week right now:

S: maybe pork roast?

M: tacos (ground turkey)

T: frozen pasta (Sachetti - like little drawstring bags of cheese), garlic bread

W: repurposed LOs from sunday (LO meat mixed with rice and broc)

T: breakfast (every Thurs)

F: something frozen. I don't cook on Friday, so the girls have either a frozen meal, or chicken nuggets and fries from the freezer, or frozen pizza


My children make dinner more difficult, they don't like pasta so I limit that to every other week, and always add garlic bread bc they love that. DD9 doesn't like most meats (pork, most chicken, all beef except steak) and won't even look at seafood, so I make sure to add protein to all her other meals. We have breakfast once a week, usually eggs to bump up the protein. If we eat out at all, it's on Saturday.

A sweet friend brought a meal over to us yesterday. We had it rough last week so she decided to help out. She made us turkey enchiladas, Refried beans, Spanish rice and brownies. I now can keep the meal I had planned and make it next week. :)
 
It is with a heavy heart that I need to tell you that today at 93 years old, my grandmother passed away. She got real sick yesterday and just never recovered.

Not sure how dinners will go but once things calm down I will get back to menu planning.
