Tonight we are having a new chicken coating- pancake mix seasoned and roasted cauliflower. Edit- won't be making this again. It tasted like plain baked chicken breast even though the seasonings were paprika, salt & pepper.

I made my first pierogi yesterday: http://tinkmomfoodie-foodobsession.blogspot.com/2013/09/my-first-pierogies.html

I have two big Anatomy tests this week, a lecture test and a practical. Talk about stressful! I am going to make crock pot chicken and shrimp etouffee tomorrow: http://tinkmomfoodie-foodobsession.blogspot.com/search?q=chicken+and+shrimp+etouffee

I also picked up some freezer pizza dough for a quick meal.

Ooh! Pierogies! Good for you. I make them with farmer cheese, onion and potato. But I love your bacon idea! I'm stealing that one.

Tonight we had leftover meatballs and pasta
Tomorrow will be pork cutlets topped with n arugula tomato salad
Wed. Hmm I need to go food shopping.

Here is my meal plan for this week.

Tonight: Roasted Salmon, Asparagus, and Mashed Potatoes (was going to do quinoa but I have left over mashed potatoes)

Thursday: Grilled Vegetable Salmon with Mozzarella Cheese, Corn on the Cob

Friday: Omelet with Feta Cheese, Mushrooms, Onions, Spinach, and Avocado, Bacon

Saturday: Hamburgers, Corn on the Cob, Chips

Tomorrow is going to be a busy cooking day for me. I will be making sandwich rolls, white (or wheat) bread, corn bread, peanut butter cookies, and roasting a turkey (some for dinner and some to slice for sandwiches).

Here is my plan for the week.

My husband went fishing yesterday so tonight we're having fried bluefish, oven baked sweet potato fries and coleslaw.

Friday - Frozen pizza

Saturday - Chicken pot pie

Sunday - Pot roast, mashed potatoes, and broccoli with cheese

I will probably make a candy corn cake for the weekend in case company comes.

I have a huge lab practical for Anatomy tonight. I made up some enchiladas so my hubby can just throw them in the oven when he gets up (third shifter.) Wish me luck!

Update to my plan for the week.

Saturday - BBQ ribs, broccoli slaw, and grilled baby bok choy.

So, my plans went out the window this week due to many schedule changes. Things just got out of hand! I never got the rolls made and will be making the cookies today (I hope!).

Here is my new plan for over the next week:

Saturday: Chicken Pot Pie (frozen from Applegate Organics... these are amazing!)
Sunday: Pancakes and Bacon (if I can find a safe pancake recipe, if not then eggs and bacon)
Monday: Beef Roast (and sides)
Tuesday: Leftovers or a sandwich (going out of town and will be eating lunch out. I should be home by 5pm, but won't feel like cooking)
Wednesday: Grilled Vegetable Sandwich, Corn on the Cob
Thursday: Omelet with Feta, Mushrooms, Spinach, and Avocado and Hashbrowns
Friday: Chicken Tenders (homemade) (and sides)
Saturday: Beef Stew and homemade Bread
Sunday: Leftovers

I will fill in the side once I decide what to make. I am making a large beef roast and then will use the leftovers for sandwiches!

Saturday: Hot and sour soup and chicken/ avocado egg rolls
Sunday: Pot roast and veggies (interesting recipe I've never made w/ star anise and figs in it)
Monday: Sloppy joe sliders and coleslaw
Tuesday: Fish w/ fennel, onion, and tomato, salad
Wednesday: Malaysian black pepper clams, salad, bread
Thursday: Leftovers or Meatloaf (made last week and froze)
Friday: Takeout

We've been eating out soooo much lately. Partly because food seems so cheap now after living in Alaska, and partly because I'm in a newish job and get home late. But . . . time to start planning and living a normal lifestyle again. All the recipes I"m trying this week are from Food Network's "Best Thing I Ever Made" show.

I haven't posted for awhile. Time to get back in the swing of things. I love looking through this thread because I get ideas for our menu:).

Friday night..was Indian Butter Chicken and Rice

Saturday.. No idea what we're having but we're going to my parents for dinner

Sunday.. Wraps (chicken, veggies, refried beans, etc)

Monday.. Pork Chops, Broccoli, and Broccoli Cheese Rice

Tuesday.. Something quick..we have puppy training class at 6

Wednesday.. Breakfast for Dinner

Thursday.. Spaghetti and Meatballs

Friday.. Take out or out for dinner. I'll need to grocery shop by this point so unless I do it during the day on Friday (which I should) then we'll likely grab something.
