I have one and this is off the top of my head (recipe card's at home) but it's a whole cut-up fryer (you could use chicken breasts, I suppose!) and in a bowl you mix a packet of Lipton Onion Soup Mix, a can of whole-berry cranberry sauce, and a small bottle of French dressing (that's the bright-orange kind, right? I never stock it in my pantry - I only eat this when someone else fixes it because it's more of a family meal because of how much it makes...I'm single so if I made this I'd have to portion and freeze most of it).
Mix that together, lay the chicken in a baking dish and "frost" the chicken with it. Then you bake it until done and I'm sorry I don't recall the temp or time but you could probably use any other whole chicken recipe in a cookbook as a guideline. If you *really* need that info, PM me and I'll go home and look at my recipe card.This dish is good with rice - use it to soak up the yummy sauce!

I've been reading this thread for the first time. It looks like this is where the great cooks hang out.I have a question. Please forgive me, if it's too far OT.

We're going to our vacation home this weekend. I've decided to cook some meals in instead of going out every night like we usually do. Since it's vacation, I still want special meals. Anyway, one night I'm making bbq ribs in a crockpot. I can't think of an appetizer to serve with them though. It needs to be something I can prepare ahead & cook quickly or make quickly before dinner. We usually get back from the beach starved & my guys won't want to wait on a time consuming appetizer. Any suggestions?
PS: I'm making a goat cheese salad the night before & don't want salad with this meal. A warm appetizer would be great.

I've just started following this thread too- need to cut the dining out spending!
Two ideas came to mind- bbq nachos using bbq sauce, chedder cheese some green onions etc. Or a flatbread, again using the same ingredients and a pillsbury type of product for the flatbread. Not fine dining, but quick to make, finger food while people get washed up from the beach and mimics the flavor of the rest of the meal.

I immediately thought of this really simple app (use your leftover chevre from the night before):
Ingreds:
2 flour tortillas (pref. fresh or the uncooked variety)
olive oil
pesto
goat cheese
If the tortillas are uncooked, then cook them. Otherwise just warm them up a bit in the pan (most storebought tortillas are undercooked).
Spread some pesto on one tortilla and goat cheese on the other one. Put them together (with the filling on the inside, of course!). Cook the "sandwich" in some olive oil on each side until light golden brown and a bit crispy. Slice like a pizza and enjoy!
