So, this is the first time I have felt "normal" in over a month. The meds the ER doc put me on seem to be helping. Thank god because I was in a bad place with the pain. I don't know how people live with unmanaged pain...

So anyway, went to the Farmers Market this morning and got my list and then some. So here is my meal list for this week. A lot of it is stuff from the past week that did not get made while I was ill.

Tonight: Cajun Tilapia, Steamed Asparagus, Roasted Squash
Tomorrow: Slow Cooker Chicken Tikka Masala, Rice, Naan
Monday: Pancakes (either blackberry or buttermilk with blackberry compote), Sausage
Tuesday: BBQ Chicken Thighs with Sweet Potato Salad
Wednesday: Pork Chops in Mushroom Paprika Sauce, Spinach, Egg Noodles
Thursday: Beans and Corn Bread
Friday: Skillet Summer Vegetable Lasagna
Saturday: Takeout- Pizza from my favorite place (been craving it)
Sunday: Black Bean and Spinach Enchiladas
 
We had a nice meal for under $10 tonight. There are 3 of us but we had left overs, so this could feed 4. I made a caprese salad with tomatoes from the garden. I found a large mozzarella cheese for $4.99.Used about 1/3 of it. I got a huge cheese pizza from aldi and added some fresh mushrooms and extra cheese. Very good and a fraction of the cost of a restaurant. Tomorrow we will have home made chipotle.
 
This week's meals:

Saturday/Monday: crab and shrimp nachos, Spanish rice, salsa and cheese dip
Sunday/Tuesday: baked chicken, stewed corn, fried okra
Wednesday: tomato and basil rotini, garlic bread
Thursday: chicken tender salad, deviled eggs, fruit

Friday will be grocery day again.
 
Tonight we are have chicken /mango wrapped in filo with baked potatoes.
I still have planned the rest of our week. Maybe creamy mushroom crepes tomorrow night?

I'm trying to make a much bigger effort to eat at home more often not just for the savings, but for health reasons as well. It's hard when life gets busy and you just want to grab something on the go, but when it comes time to do the books, I cringe at how much we used to eat out.

I don't have my week's menu planned out, but at least I have tomorrow figured out so that's a relief. I hate not knowing what to make for dinner and I often feel like I'm in a rut.

Monday - Orange Ginger Flank Steak with grilled tomatoes.

I actually had that planned for tonight but got lazy so I made cold cuts sandwiches instead. Hopefully that means the marinade has a longer time to flavor the meat for tomorrow. :)
 
I just bought a chest freezer so I can always have meals in the house to cook. It's been so easy to just order in, but that's $50 each time! So I'm making a conscientious effort to cook every night.

Two nights ago I made ribs ($6 a rack at the grocery store, and so much meatier than restaurants!) and we had the leftovers last night. Tonight I'm either making homemade chili and cornbread or tacos. And tomorrow night I'm making chicken (either homemade fried chicken or use a kit to make sweet and sour chicken)
 
This weekend I went on a girls trip with some friends and family. It was so nice to get away and we got to see New Kids on the Block again Saturday night.

Tonight we are having french toast with sausage and fruit.
 
LilyWDW-hope you continue to do better; unmanaged pain is HORRIBLE. Been there, and finally with a great doc have been able to get mine under control.

I have to give a shout out to everyone who is inspiring me and keeping me on track. I have doing great with my meals, not always in order but have been cooking in and not getting too overwhelmed. It's so much easier with at least a semi-plan for the week. So, here goes:

Mon - I finally have my pork tenderloin in the crock pot; put in chunks of sweet potatoes on the bottom instead of the onion; topped with thick slices of apples; and I will make a broccoli casserole

Tues - DS's are on their own - DH and I will go celebrate our 25th Anniv!!

Wed - Something I made last week that is being demanded; spaghetti squash topped with a ground turkey/ground pork mixture I made up

Thurs = White Wine Chicken, mashed potatoes and a veggie

Fri - Manicotti

Sat - Griddle Cakes with a sausage frittata

Good luck with the week everyone! I have been wanting to post my chicken spaghetti recipe as requested, but it looks so long that I might intimidate posters, you have to break it down in order to make it doable; doing it all in one sitting is too much; I boil and debone my chicken a couple of days before, I chop my veggies the day before, etc. But, I will post it if still wanted!

Thank you! We had a very quiet nice dinner at our fave Mexican restaurant; and our sweet DS's gave us a card and a gift card; very low key and just what we wanted

I forgot Thurs is Meet the Band Night; ARGH; this will throw me; I will have to re-do Thursday night and figure out something very quick and very easy

so its more important now than ever to buckle down and save money and take care of debt at the same time. Feeling good. The kids are already wicked excited and talking about planning their trip. I have never been prouder!:woohoo:

tonight will be hot dogs and corn on the cobb
Friday will be pork chops and potatoes
saturday my middle dd has a soccer tournament until 2 so we will make mac and cheese for dinner when we get back.
sunday not sure maybe hamburgers or chicken we will see.....

Chicken Chimichangas, Guacamole
Hamburgers, Corn on the Cob, Loaded Vegetable Pasta Salad
Beer Battered Tilapia (maybe a sandwich), Fries, Steamed Broccoli
Garlic Rosemary Lamb Chops, Mushroom Rice Pilaf, Roasted Squash
Beans and Cornbread
Sweet Potato Hash, Eggs

Pretty well balanced I think. 3 vegetarian meals to balance the 2 red meat meals. I don't have to buy any meat except lunch meat (my grocery store now caries ONLY Boar's Head meats at the deli! YAY!). Mostly I need vegetables and some good bread. Trying to decide if I should do my own fries or use what it in the freezer.
 
Saturday - Grilled Chicken with zucchini/corn salsa and sweet potato fries
Sunday - Foil packets of fish and veggies on the grill with jasmine rice
Monday - Chicken over a strawberry spinach salad
Tuesday - Burgers, baked beans and corn on the cob
Wednesday - Parmesean crusted fish, mac and cheese, and broccoli
Thursday - Steak, baked potatoes and green beans
Friday - Spaghetti, peas and rolls
Saturday - OFF TO DISNEY :cool1::cheer2:party:
 
Today was grocery day. This week's menu was picked by my daughter who will be leaving next weekend for college in Ohio.

Today: Publix subs (lots of running around, little time to eat)
Saturday/Monday: Cheesy Sausage/Potato casserole, glazed carrots, cucumber and onion salad
Sunday/Tuesday: shrimp and scallop linguine, steamed broccoli, garlic pull apart rolls
Wednesday: Rubens, warm German potato salad, fruit
Thursday: meeting a friend who teaches in Al Anin for dinner (she's home for a visit)
We will also be having a banana pudding this weekend.

For the crab and shrimp nachos: I seasoned and cooked medium shrimp (12=16oz) and mixed it with crab meat (whatever amount you want). The shrimp and crab were then mixed with a container of Kraft Cooking Creme Garlic until it was all heated through and melty. Put nacho chips in your casserole dish, top with the shrimp/crab mixture and top with the shredded cheeses of your choice. Bake in the oven at 350 until hot and bubbly. Top with shredded lettuce, chopped tomato, chopped avocado, jalapenos, sour cream, and whatever else you want. It's really good!

We make a list of meals and usually only assign specific days if we have days that affect meal time, ie open house at school etc, or a difficult prep maybe do e on weekend or the prep is done on weekend and then I cook it on Monday :)
