YUM both chicken recipes and the zucchini cake sound great!

I've been missing for a while - I don't know what happened to my subscription..

this weeks we are all home - Me, DD, DS and Hubs, I've not been strict with the Atkins diet and will be off it for a few more weeks before buckling down again after summer and vacations are done with..

Monday - Dreamfields Angel hair with Ragu Rusbusto sauce and beer bread toast
Tuesday - Homemade Chicken nuggets, wild rice, buttered noodles and green beans
Wednesday - Breakfast for Dinner, Pancakes - with choco chips, bacon, sausage, eggs, toast, hashbrowns
Thursday - Taco night (beef and chicken/ hard and soft)
Friday - Subway or Amato's sandwiches
Saturday - Pizza and Pier Fries at OOB.
Sunday - cook out - steak prob
 
We are headed to WDW this Friday morning so this week is all about eating whatever is in the pantry, fridge and freezer. I told the family to consider this week "Adventures in Dining".

Last night - TJ's fire-roasted peppers with scrambled eggs on onion rolls

Tonight - TJ's chili-lime chicken burgers with tomatoes from the garden and steamed baby carrots

Wednesday - tuna casserole - pasta, albacore tuna and cream of celery soup

Thursday - no clue.

I have one and this is off the top of my head (recipe card's at home) but it's a whole cut-up fryer (you could use chicken breasts, I suppose!) and in a bowl you mix a packet of Lipton Onion Soup Mix, a can of whole-berry cranberry sauce, and a small bottle of French dressing (that's the bright-orange kind, right? I never stock it in my pantry - I only eat this when someone else fixes it because it's more of a family meal because of how much it makes...I'm single so if I made this I'd have to portion and freeze most of it).

Mix that together, lay the chicken in a baking dish and "frost" the chicken with it. Then you bake it until done and I'm sorry I don't recall the temp or time but you could probably use any other whole chicken recipe in a cookbook as a guideline. If you *really* need that info, PM me and I'll go home and look at my recipe card. :) This dish is good with rice - use it to soak up the yummy sauce!

I've been reading this thread for the first time. It looks like this is where the great cooks hang out. :cool1: I have a question. Please forgive me, if it's too far OT. :blush:

We're going to our vacation home this weekend. I've decided to cook some meals in instead of going out every night like we usually do. Since it's vacation, I still want special meals. Anyway, one night I'm making bbq ribs in a crockpot. I can't think of an appetizer to serve with them though. It needs to be something I can prepare ahead & cook quickly or make quickly before dinner. We usually get back from the beach starved & my guys won't want to wait on a time consuming appetizer. Any suggestions? :thanks:

PS: I'm making a goat cheese salad the night before & don't want salad with this meal. A warm appetizer would be great.

I've just started following this thread too- need to cut the dining out spending!

Two ideas came to mind- bbq nachos using bbq sauce, chedder cheese some green onions etc. Or a flatbread, again using the same ingredients and a pillsbury type of product for the flatbread. Not fine dining, but quick to make, finger food while people get washed up from the beach and mimics the flavor of the rest of the meal.

Jalepeno poppers? Stuff peppers with cream cheese wrap in a 1/4 of a slice of bacon, bake.

Thanks. Do these have to be served warm? I will be making a baked mac & cheese as a side dish that night, & will be putting it in the oven as soon as we get in. It would be great, if I can make the poppers that morning. On 2nd thought, do you think baking & refrigerating them that morning then putting them in the microwave at the last minute would ruin them?

I immediately thought of this really simple app (use your leftover chevre from the night before):

Ingreds:
2 flour tortillas (pref. fresh or the uncooked variety)
olive oil
pesto
goat cheese

If the tortillas are uncooked, then cook them :). Otherwise just warm them up a bit in the pan (most storebought tortillas are undercooked).

Spread some pesto on one tortilla and goat cheese on the other one. Put them together (with the filling on the inside, of course!). Cook the "sandwich" in some olive oil on each side until light golden brown and a bit crispy. Slice like a pizza and enjoy!
 
Sunday: Tacos

Monday: Loaded nachos and the kids had ravioli's

Tuesday: egg, ham and cheese on rye bread

Wed (today!) I made an early dinner, shrimp scampi. Very yummy.

Thursday: baked chicken, rice & beans and spinach.
 
Honestly, the best way I came up with to stop eating out was to find a cooking magazine I liked (I LOVE cooking light now) and every month I would tag recipes I wanted to try. I put them all in a website (onetsp.com in my case - they have a web app so you just click the 'clip recipe' link and it inserts it into that website for you from the cooking light website) and now whenever I have a craving for something specific, or need to use something up in my pantry I just search for it on the site and have a bunch of recipes to choose from. I've subscribed for almost two years now and have no clue how I will ever get through them all, lol!

I almost caved yesterday for "taco Tuesday".. But I beat the urge to eat out and stayed home!
Tuesday- sloppy joes
Wednesday- making Taco Bake tonight.. Super easy!!
Thursday- leftovers
Friday- bell peppers and rice
Saturday- leftovers
Sunday- chicken spaghetti
 
Last night I made the pioneer woman's beef with snow peas over brown rice.

Tonight I pulled some vegetable beef soup out if the freezer. It is almost fall like here today.
 
Well tonight was supposed to be waffles and fruit but I woke up with a aweful stomach bug and go not keep Anything down but luckily my dh stayed home to watch the kids and I am feeling much better so they made grilled cheese instead

Tomorrow will be waffles
Friday will be chicken
Saturday dd 7 birthday of spaghetti
Sunday-Wednesday cape cod! Finally summer vacation

Got some Japanese food last night because I had a hair appointment at 3:30pm. Got out of that a bit before 5 and still had a 30-40 minute drive to get home. Luckily it is pretty cheap and I get 2-3 meals out of it.

Tonight will be Lamb Chops, Mushroom Rice Pilaf, and Roasted Squash.
