Wednesday we had beef with broccoli.

Thursday we had boboli pizza.

Friday I picked up burgers and fries on the way home from work.
 
Tonight: Chicken Souvlaki with quinoa and green salad

And I made up a new 2 week meal plan...

Sun: Pork Chops with baked potatoes and broccoli
Mon: homemade broccoli cheddar soup and grilled cheese sammies
Tues: Homemade chicken fingers and fries with veggie tray
Wed: homemade pizza and apple slices
Thurs: Beef Tacos and cheese quesadillas
Fri: steak and potato salad with a frozen veggie (cooked of course ;) )
Sat: pasta and garlic toast, not sure of veg
Sun: Cheesy Broccoli Quinoa Casserole
Mon: leftovers
Tues: Homemade Italian Meatballs with mashed potatoes, not sure of veg
Wed: Crockpot Boeuf Bourginion
Thurs:leftovers
Fri: Butter Chicken, jasmine rice, salad
Sat: leftovers

We are planning a Mediterranean cruise for next summer and I need to tighten the food budget belt as far as I can so my extra money can be diverted to the travel fund. So, we've got some meatless Mondays in there as usual, but I've also gone meatless several other nights as well. I want to see if my family (particularly DH) will complain.

I think I'll be safe by having cheese pizza one night a week (I make it myself and it's a crazy cheap meal that no one complains about eating regularly) and then rotating the bean and rice burritos, quinoa casserole, soup and grilled cheese and meatless pasta nights.

I'm going to attempt a formula of 2 nights meatless, 2 nights leftovers, 2 nights chicken and the extra night would be either pork, seafood or beef after this rotation is done. If I have enough variety...I should be safe from censure. :goodvibes
 
Hiya everyone! I am finally done with my Nursing Assistant clinical which was spent on a dementia wing on our local nursing home. (actually it was 20 miles each way away) Now I can test for the Nursing Assistant but probably not until October and then I will be certified to work here in WI. In the mean time I start school again in a few weeks continuing on my my nursing degree and my DD starts high school on Monday:)

So this week I have been making a lot of food. I've got some fried chicken and creamed corn going now. I had chicken chimi's too with sofrito rice. I made stuffed zucchini, fridge pickles, zucchini cake tomorrow....and empanadas yesterday. Thursday: Garlic Rosemary Lamb Chops, Mushroom Rice Pilaf, Roasted Squash
Friday: Potato and Vegetable Green Curry, Rice,
Saturday: Chicken Chimichangas, Guacamole
Sunday: Beans and Cornbread
 
Hello all! I'm new to the thread though not new to the Dis. :) With some things I want to save for and an ABD trip next summer, eating at home is now ever more of a priority, so I'm joining this thread!

Long story short: Our family is just DH and I. He works for a local company and I teach about 30 mins from home. I try to menu plan for the week whenever possible. This week I'm also trying to incorporate some meals with freezable leftovers since DH has to travel for business the same week as school starts for me again! BOOO! :guilty:

Sunday: Root Beer Pulled Pork, Cabbage Steaks, Onion Rolls

Monday: Creamy Tomato Pasta

Tuesday: Indian Style Grilled Chicken, Yellow Rice, Cauliflower

Wednesday: Sausage and Kale Cassoulet

Thursday: Banyan Beef Skewers, "Tiger Tails", Green Beans

Friday: Leftovers

Saturday: Lasagna Rollups, Salad

Sunday: Whole Chicken done in the crockpot, Broccoli
 
I'm making a lot of changes in what I do. My dd is 16 and is at her dad's Sun and Mon. I only have to cook 5 nights a week. Most of the time I would plan and cook nice meals for those 5 days. Lately, I've been ending up with leftovers that have to be thrown out especially when dd decides she doesn't want what I made. So for this week I made her approve of the menu before she left for dad's today. Also I won't be cooking every night. Most nights I don't get off until 6, so I do use crockpot a lot.

Tues: tuna melts on rye with homemade tomato soup. I will have it ready around noon when she comes home from dad's as I work 1-6. She can work out her own dinner. I deal with the public so by the time I get off I'm too emotionally drained to even want to eat....LOL.

Wed. I have lots of things frozen in individual servings I need to clean out of the freezer. She can make her pick. There are soups, chili, lasagne, pizza slices, quiche, stew beef she can put over pasta, etc.

Thurs-broccoli, cheddar, potato soup with biscuits and salad.

Fri-will eat out as I have a certificate for a restaurant about to expire and she starts her senior year Mon 19th

Sat-leftovers or fend for yourself. I may make a brunch if there aren't a lot of leftovers which would be turkey sausage, hash browns, and eggs. Rest of day will be fend for yourself.

So tired of cooking, and she decides at last minute she doesn't want it or isn't hungry etc. For the next year, I'll be using up my stockpile of stuff and she can eat it or fend for herself. I want to move when she moves out to college. I have a way too big of a stockpile for just me. Certainly don't want to drag it along with me to a smaller place.
 
For lunch I took some leftover chicken pot pie filling I had in the freezer and some puff pastry, and made homemade hot pockets.

Dinner will be tacos with Spanish rice.
 
I hope everyone had a great weekend! Ours was very busy we had dd6 all day soccer tournment Saturday and Sunday dd10 and I played in a church softball tournment I am very tired and sore:rotfl2:
We did great this week sticking to a budget at the grocery store and not eating out at all.:cool1:

Sunday we had chicken with Italian dressing packet mix and brown sugar and u bake it for a hour so yummy and only three things needed. My mom gave my squash so we ate that and rice as well
Tonight we will be having hamburgers and onion straws for dinner
Tuesday will be spaghetti and sauce
Wednesday will be waffles and fruit
Thursday maybe grilled cheese
Friday not sure yet
Saturday is dd birthday she will be 7 pixiedust: she has requested spaghetti and sauce which works out great and I am going to try to make a cake from Pinterest

Sunday we are off to the cape cod for 4 days:cool1: Thursday dh took the day off to still relax at home so we will do shopping then.

Sat- hot dogs and tater tots

Mon-tortellni, ham and alfredo sauce, salad, garlic bread
Tues-meatloaf and mash potatos and broccoli and cheese
Wed-grilled chicken and garlic parm pasta and salad, bread
Thurs- breakfast for dinner- sausage and cheese grits & scrambled eggs, home made biscuits
Fri- we go out for my bday! Got a groupon 4 ppl get steak, lobster & 2 appetizers $50!
Sat- we are going to movies & our theater has a bottomless popcorn bucket so we normally eat sanwhiches or fruit when we come home.
Sun- another groupon to our favorite restaurant up the street( my actually bday) just me & DH ( ill get shrimp & grits)

If the sesame chicken light because it isn't fried first? If so, I would love the recipe. We love it, but are trying to eat healthier.
 
Here's what I think is going to happen this week. The veggie part is unclear because we got a produce share Sat so its what needs to be used & such:

Mon: Bratwurst (crockpot w/ beer & onions), baked beans & some kind of veg.
Tues: Chicken fajita pizzas or nachos (chicken, homemade refried beans, lettuce, tomato, onion & cheese on an oven crisped tortilla)
Wed: Pizza with Canadian bacon, peppers & onions and salad.
Thurs-Sun: We are going to be out of pocket & running around so probably a mix of sandwiches and other quick foods and eating out.

I really need to clean out our freezer so there may be some interesting meals these next few weeks!

Do you do this with boneless chicken? Just put it is a 9x13 baking dish and sprinkle with the italian dressing and brown sugar and bake?

Yup! But you can do it with any pieces of chicken I love thighs nice and juicy super easy!
 
Monday-meatless....roasted vegetables on grilled focaccia sandwiches, fresh apple salad, home made black bean salad

Tuesday- home made chicken tacos, salsa, guacamole, lettuce, cheese and fresh corn on the cob

Wednesday- maple brown sugar salmon, roasted broccoli with lemon juice and garlic, wild rice pilaf

Thursday- Parmesan chicken and Caesar salad,

Friday- meatless.....stir fry veggie pita sandwiches, cucumber salad and fresh watermelon

Saturday-leftovers or out

Sunday- lasagna with home made sauce, salad

Monday- meatless....black bean tostadas, lettuce, tomato, cheese, avocado, homemade salsa, strawberries, blueberries and grapes

Tuesday- shrimp scampi, cranberry walnut salad

Wednesday- ham and cheese panini, roasted new potatoes and roasted green beans

Thursday- homemade bruschetta, pasta with homemade pesto

Friday- leftovers

Saturday- grilled steaks, vegetable kabobs

Sunday- Cobb salad ( lettuce, grilled chicken, hard boiled eggs, bacon, tomatoes, avocado, bleu cheese), French bread

Monday- meatless.......homemade macaroni and cheese, roasted broccoli

Tuesday- marinated pork tenderloin, sweet potato casserole, brussel sprouts,

Wednesday- Thai ginger salmon, couscous with peas, roasted carrots

Thursday- meatless....veggie quiche, roasted asparagus

Friday- leftovers

Saturday- chicken and black bean enchiladas

Sunday- Asian marinated pork, rice, grilled pineapple
 
Meatless tonight was a mozzarella,tomato salad. Homemade pesto on mini ravioli. And it was dessert night since peaches were about to go bad so I made a peach/nectarine upside down cake. Mmmm good.

Tuesday will be ham steaks, roasted potatoes and zucchini
Wed. Homemade pizza.
Thursday leftover chicken quarters with breakfast fried rice
Friday Tilapia! Rice and some veg.

That's as far as I got.

Also you could place 6 pieces of chicken in the middle of the baking dish add either can or fresh green beans to one side and the other chopped potatoes then pour one packet of Italian dressing dry mix over then one stick of melted butter cover and bake 1 hour simple and great!
