We are planning a Mediterranean cruise for next summer and I need to tighten the food budget belt as far as I can so my extra money can be diverted to the travel fund. So, we've got some meatless Mondays in there as usual, but I've also gone meatless several other nights as well. I want to see if my family (particularly DH) will complain.
I think I'll be safe by having cheese pizza one night a week (I make it myself and it's a crazy cheap meal that no one complains about eating regularly) and then rotating the bean and rice burritos, quinoa casserole, soup and grilled cheese and meatless pasta nights.
I'm going to attempt a formula of 2 nights meatless, 2 nights leftovers, 2 nights chicken and the extra night would be either pork, seafood or beef after this rotation is done. If I have enough variety...I should be safe from censure.
